Mushroom Gravy Recipe

carrot (finely grated)

onion (finely diced)

olive oil

lb about 6 mushrooms, thinly sliced

Tbsp butter

Tbsp all-purpose flour

chicken broth

milk (any kind)

salt (to taste)

tsp pepper

Heat 3 Tbsp of olive oil in a medium saucepan over medium heat.

Sautee onion and carrot until soft and golden (5 minutes), stirring often.

Add mushrooms and sautee until soft (5 minutes), stirring often.

Increase to medium high heat and add 1 1/2 cups chicken broth and 1 1/2 cps milk, bring to a light boil. Salt and pepper to taste and stir till dissolved.

Melt 4 Tbsp butter and stir in 3 1/2 tbsp flour.

Whisk the butter/flour mix into the gravy. Add more or less of the flour mixture depending on how thick you want the gravy. Remember it will still thicken as it cools. If it gets too thick add some more hot water or milk and return to a light boil again.

This mushroom gravy is simple, quick and super flavorful. It's also super creamy without any cream in the recipe! That's right - it's a skinnier gravy, but you'd never know it! It takes less than 10 minutes to make and you probably already have all of the ingredients in your kitchen. It's wonderful over buckwheat or mash potatoes.

Easy Mushroom Gravy Recipe

lb fresh button mushrooms (white

unsalted butter

chicken stock/broth (veggie or beef stock work also)

milk (use whatever kind you have)

Salt and pepper

Rinse mushrooms (yes, I rinse my mushrooms), then pat them dry with paper towels and slice. Heat a large skillet over medium heat and add 1 Tbsp olive oil. When oil is hot, add mushrooms and sautee until golden and soft. Remove mushrooms from pan.

Add 2 Tbsp butter to pan along with 2 Tbsp flour. Whisk until your flour roux is a light golden brown (1-2 min).

Whisk in 1/2 cup stock then 1 cup milk and stir until hot and thickened.

Add the mushrooms back to the pan, season with salt and pepper to taste and bring to a simmer. When gravy is at desired consistency, remove from heat (keep in mind it will still thicken slightly as it cools).

Savoury, comforting, and warming, my make-ahead vegan mushroom gravy is the perfect accompaniment for roast dinners, pies, and mashed potatoes.

Make-Ahead Vegan Mushroom Gravy

onion (, finely-sliced)

leek (, trimmed, cleaned, and finely-sliced)

garlic

tbsp coconut aminos ((or light soy sauce/tamari if you're OK with those))

vegetable broth

flour

250 g mushrooms, sliced

tbsp sweet paprika

tbsp dried shiitake powder

tsp sugar

Sea salt and black pepper (, to taste)

In a large skillet over a low heat, gently fry the onions and leeks in the oil, stirring occasionally, until they start to caramelise. (This should take around 30 minutes.)

Add the roast garlic to the onions and leeks, mash it a little to break it up, and cook for another minute or so.

Stir in the coconut aminos, and allow to evaporate.

Turn up the heat, add the mushrooms, paprika, shiitake powder, and sugar. Cook for another 5 mins, stirring all the time.

Add the stock.

Mix the cornflour with the water to make a paste, and add to the skillet. Keep stirring for a couple of minutes, until the gravy has thickened and just begins to boil.

Reduce the heat to low, cover, and simmer for around 20 minutes.

Remove from the heat, and blend until smooth.

Taste, and season.

If not serving immediately, this mushroom gravy can be stored in an airtight jar in the 'fridge for a couple of weeks. It can also be frozen.

This is a great recipe... I've been stuck in a rut of making the same onion gravy for over a year now, and although it's delicious it's good to have another one to add to the repertoire to perk up veggie sausages and roasts for my family!
