Asian Greens With Oyster Sauce

bok choy (ends removed)

broccoli, Chinese (roughly chopped)

garlic (crushed)

tsp ginger, fresh (grated)

½ tbsp soy sauce (GF if required)

tbsp oyster sauce (GF if required)

Asian Greens with Oyster Sauce

Steam the Asian greens (bok choy and Chinese broccoli) for 2-3 minutes in a steamer or blanch them by placing them in a heat proof bowl and cover them with boiling water for 2-3 minutes. Drain.

Combine the dressing ingredients (garlic, ginger, soy sauce, oyster sauce, and peanut oil) in a jar or small container and shake or stir well to combine. Toss the warm, drained vegetables in the dressing and serve.

This recipe is a fantastic accompaniment to steamed fish or poached chicken breast and a small serving of brown or basmati rice.

Tasty, versatile and easy to clean up afterwards, this meal with mince is perfect for the weeknights.

gai lan, choi sum

Sesame salmon with pak choy & shiitake mushrooms

Gingery shiitake noodles

pack medium dried egg noodle

sesame oil

tbsp groundnut oil

fresh root ginger

fresh shiitake mushroom

tbsp good-quality oyster sauce

tbsp light soy sauce

Cook the noodles according to pack instructions, then toss with a little sesame oil to stop them sticking.

Heat a wok over a high heat, then add the groundnut oil. Once it’s smoking, add the ginger, stir-fry for a couple of secs, then add the mushrooms with a splash of water to create steam, and cook for 1 min. Toss through the cooked noodles for 2 mins until hot, then add the spring onions, oyster and soy sauces, and a dash more sesame oil.

This super quick and easy prawn and mushroom miso soup means you can have a healthy but comforting meal on the table in just 15 minutes - perfect for a midweek supper.

Prawn and mushroom miso soup

miso soup paste 2 tbsp

shiitake mushrooms 4, sliced

pak choy 50 grams, leaves

soba noodles 30

soy sauce 1 tsp

coriander chopped to make 1 tbsp (optional)

red chilli ½, sliced (optional)

The Mandarin word for fish is ‘yu’ and during the New Year celebrations people wish each other ‘Nian nian you yu’, which translates as ‘Have abundance every year’. Serving the fish whole symbolises unity and completeness. Make up for the ‘incompleteness’ of using fillets by serving this dish with whole steamed small pak choy and uncut buckwheat noodles (uncut noodles symbolise longevity).

Halibut with sesame soy sauce and buckwheat noodles

grated to make 1 tbsp root ginger

tbsp toasted sesame oil

spring onions, sliced lengthways

red chilli,

Cook the noodles in boiling water following the packet instructions. Cool under cold running water and drain.

To make the dressing for the noodles, whisk together the sesame oil, mirin and soy sauce. Add the spring onions and coriander and mix well. Pour the dressing over the noodles and toss.

To make the sesame soy sauce, heat the groundnut oil in a large wok. Add the garlic and ginger and stir well for a few seconds. Add the soy and sesame oil to the pan and stir well. Bring to a bubble, then add the spring onions, chilli and coriander and mix. Keep warm.

Heat a little groundnut oil in two large frying pans. Add 4 halibut fillets to each pan, skin-side down, pressing lightly on each as it cooks. Cook for about 3-4 minutes on high heat until the skin is crisp and golden brown, then turn over and cook for 2-3 minutes until the flesh has turned opaque.

Serve the dressed noodles with some steamed pak choy and a halibut fillet, drizzle over some of the sauce and sprinkle with sesame seeds.

Healthy miso chicken soup

tsp toasted sesame oil

pack ready-cooked udon noodles

chicken thighs

tbsp white miso

tbsp gochujang

Heat 1 tsp of the sesame oil in a large pan and cook the ginger and garlic for a few minutes. Pour in the chicken stock, bring to a simmer and add the pak choi, mangetout and udon noodles, and simmer gently for 2-3 minutes or until cooked.

Heat the remaining sesame oil in a non-stick frying pan and shred the chicken meat, discarding the bones and skin. Fry for 2-3 minutes or until crispy, then add the miso and gochujang, and fry for another minute.

Divide the veg, noodles and broth between 2 bowls, then top with the chicken, sesame seeds and coriander.

Make a midweek meal that's quick, simple and good for you. The tofu and pak choi are richly flavoured with a soy dressing and served on a bed of rice

Tofu with chilli & greens

Put the greens in the base of a shallow bowl that will fit into a large steamer. (Alternatively, use a lidded wok : fill the base of the wok with water and put a heatproof trivet on the bottom to stand the bowl on so it’s above the water line). Place the tofu on top of the greens and thickly slice. Mix the rice wine, soy sauce and sugar with 2 tbsp water and pour over the tofu. Cover and steam for 5 mins or until the tofu is hot.

Heat the oil in a small pan, add the spring onion and ginger, sizzle for a min, then add the chilli flakes and a splash of sesame oil. When hot, pour carefully over the tofu. Serve with rice.

Lower GI - but not in flavour - this stir fry dish of rice noodles and prawns is a one pot wonder.
