This simple, healthy chicken salad is made with breast meat from a cooked rotisserie chicken, fresh lemon and dill. Fast and easy, and perfect for all diets including low-carb, keto, Whole30, Paleo and of course, Weight Watchers.

Chicken Salad with Lemon and Dill

chicken breasts (from 1 whole rotisserie chicken)

dill

lemon

extra virgin olive oil

salt

Remove the chicken legs, wings and thighs from the rotisserie chicken and set aside for another meal.

Remove the skin from the 2 breasts and remove the meat from the bones. Break the chicken into chunks with your hands or a knife and place into a large bowl. Add the fresh dill, lemon juice, lemon zest, olive oil and salt.

Refrigerate until ready to eat.

Chicken Salad with Grapes and Walnuts

chicken (shredded (such as rotisserie))

mayonnaise

parsley (chopped)

red onion (finely diced)

red grapes (quartered

celery (diced)

walnuts (chopped)

kosher salt (plus more if needed)

black pepper (plus more if needed)

In a large bowl, mix together the mayonnaise (2/3 cup), salt (1/2 teaspoon), black pepper (1/2 teaspoon), and fresh chopped parsley (2 tablespoons).

Add the shredded chicken (2 cups), halved or quartered grapes (1/2 cup), diced celery (1/2 cup), chopped walnuts (1/4 cup), and diced red onion (1/4 cup). Stir well to combine.

Serve on sandwiches with toasted bread, on lettuce wraps, or on top of a green salad.

This cool and creamy chicken salad gets a little exotic with the addition of antioxidant-rich curry powder, crisp vegetables, and crunchy cashews.

Curry Chicken Salad

curry powder

½ lime, juiced

salt,

chicken,

apple

celery rib, finely diced

Tbsp. red onion, finely diced

raisins

cashews,

cilantro

In a medium bowl mix together the mayonnaise, curry powder, lime juice, and salt.

Next add the cooked chicken, diced apple, celery, and onions and stir until well combined.

Fold in the raisins, cashews, and cilantro.

Serve in a lettuce wrap, on a bed of greens or in a tortilla wrap or between slices of your favorite bread.

This was so good! I subbed pecans for cashews, craisins for raisins and also did 1/2 Greek yogurt, 1/2 mayo. Served in half a whole wheat pita pocket. Great make ahead lunch or dinner - I’ll be making again.
