In a small bowl, combine the smoked paprika, garlic powder, onion powder, celery seed, and kosher salt. Pat the cod dry and sprinkle all sides with the seasoning.

Heat a large skillet over medium high heat and add the butter and olive oil. When butter is melted, add the cod and cook for 2 minutes.

Flip the cod and pour the lemon juice over the fish. Cook an additional 1 to 2 minutes until the cod is tender and starts to flake when you prick it with a fork (adjust based on the thickness of the fillets). Remove from the heat and sprinkle with the parsley. Serve immediately.

Lemon Butter Cod Recipe

For the Lemon Butter Mixture:

3 TB salted butter, softened to room temp

1 TB chives

2 TB garlic

TB shallots

tsp kosher salt

tsp freshly black pepper

juice lemon

TB grated lemon peel

For the Fish:

(1-inch thick each) cod fillets, about 4 ounces each

kosher salt and black pepper

Place cod in colander and let sit to drain and get closer to room temperature, while you prepare rest of ingredients.

In a small pan, combine all Lemon Butter Mixture ingredients and stir to fully combine. Set aside.

Use paper towels to pat-dry all excess moisture from the fish fillets. This step is important, so be sure to pat off as much moisture as you can (extra moisture from fish will dilute flavors and steam the fish rather than brown it.)

Evenly sprinkle both sides of fillets with pinches of kosher salt and freshly ground black pepper. Set aside. In a large pan, heat the olive oil over high heat. Once oil is sizzling hot, add fish fillets to pan (you may want to do 2 at a time to avoid crowding) and cover with lid ajar, allowing steam to escape. Cook until browned on one side, about 3-4 minutes. Do not move fish around.

Use a thin but wide metal spatula to gently flip fish fillets over to the other side for another 3-4 minutes just until nicely browned and center is just-cooked. The key to tender fish is to avoid overcooking.If your fillets are less than 1-inch thick, shorten cook time.

While your last fish fillets are cooking, heat up small pan of prepared lemon-garlic mixture over medium-high, stirring just until bubbly. Immediately turn heat off and keep warm.

Once fish is done, plate fillets and spoon lemon butter mixture over the fish, including any leftover juices from your frying pan. Garnish with lemon slices and enjoy.

Pat the cod dry with paper towels.

Crack the egg into a bowl and whisk well. In a second bowl, combine the almond flour, garlic powder, onion powder, parsley, salt, and pepper.

Dip each fish fillet into the egg, letting the excess drip off before transferring it to the seasoned flour mixture. Press the fish into the flour mixture, then flip to coat the other side. Transfer to a plate.

Vietnamese "Fried" Fish with Tomato Sauce (Cá Chiên Sðt Cà)

Tb extra virgin olive oil

ea tomato, large (about 2 cups chopped tomato)

ea green onion

tsp sugar

Sprinkle both sides of the fillet with salt. Heat a pan to medium high heat. Add 1 Tb of extra virgin olive oil.  Place fish presentation side down in the hot pan.  It will take 3-5 minutes to develop a crust and release from the pan.  Remove and set aside.

In the same pan, add the remaining 1 Tb of extra virgin olive oil to the pan over medium heat. Add the garlic, white part of the green onion, and shallot.  Stir fry 1-2 minutes until translucent.

Add the chopped tomatoes, fish sauce, sugar, and black pepper to the pan.  Continue stirring and cook until the tomatoes begin to melt after a few minutes.

Nestle the fish fillets, seared side up, to the pan. Cover and cook for 2-5 minutes until the fish is cooked through.  This will vary depending on the thickness of the fishl.

Garnish with the green part of the green onion, and serve hot with your choice of side dish.

I tried this tonight. To be honest it wasn’t my taste. We gAve it a C grade. It was edible but to our bold for our individual taste. I just found your website today &amp; love it. Made this for dinner tonight and it was delicious! The spices were splendid and it all came together nicely.

I tried this tonight and we really liked it.  Simple, very tasty and different from my usual tomato/caper/vinegar preparation.  My only caution is that if you half the recipe like I did, and use 2 individual filets, adjust the amount of seasoning you use, because the recipe is for 1.5 lb of fish, and my filets were only 4 oz. each.  It actually still tasted good, but it was too much salt for that smaller amount of fish.  Looking forward to trying other recipes!

I made the pan fried cod last night, it was so good, I'm making it again tonight. I had a few variations, though. I added more onion, garlic and smoked paprika, I substituted crushed fennel seed for the celery seed (didn't have any) and lime juice for the lemon juice. It took longer than 2 minutes too, Even though it was slightly frozen, the thick part took about 5 minutes per side. Great recipe though, it's a keeper.

Add the garlic to the butter in the pan and cook for about 30 seconds.  Add the chopped parsley and lemon juice.  Taste for seasoning and add salt as needed.  Serve over the cod.

Season the fillet on both sides with the Shaoxing wine, and rub with your fingers to evenly cover the fish. Then sprinkle the white pepper and salt on both sides of the fish. I use the technique of gently tapping the measuring spoon with the seasoning to evenly distribute it over the fish.

Marinate on the counter for 15-20 minutes. This lets the fish come up to room temperature, so it can cook evenly. Right before cooking, thinly coat the fish on both sides with the cornstarch.

Now preheat a clean frying pan over medium-high heat until it starts to lightly smoke (skip this step if using a non-stick pan). Add the oil and swirl to coat. Lay the fish in the pan, and cook over medium-high to high heat, until it turns opaque around the edges, about 3-4 minutes. Move the pan around to ensure the oil is evenly distributed.
