Vintage Macaroni Salad

lb Macaroni elbow pasta, dry

Eggs,

Mayonnaise

Onion, fine mince

Celery,

Dill pickle relish dill pickles

Vinegar, white distilled

Mustard, classic yellow

Sugar, white granulated

Salt

Paprika

pepper

Cook macaroni according to package directions. Drain and rinse under cold water until cool. Drain and set aside.

In large salad bowl, make dressing by whisking together mayonnaise, vinegar, mustard, sugar, salt, and fresh cracked pepper to taste. When well combined, add dill pickle relish and minced onion; stir well. Allow dressing to sit at room temperature for 10 minutes for flavors to develop.

Add cooked and cooled macaroni to salad bowl. Toss thoroughly in dressing until evenly coated.

Add diced celery and stir until evenly distributed.

Carefully stir in diced hard boiled egg until evenly distributed.

Sprinkle top of macaroni salad with paprika and fresh cracked pepper to taste.

Melt, butter in saucepan, remove from heat. Add maple syrup and spices. Whisk, set aside,

NOTE: If your pot does not have a long handle you will need oven mitts to shake safely.

Place large pot on stove on med/high heat. Place coconut oil in pot. Drop three corn kernels in oil. Place lid on pot. When kernels pop, pour ⅓ cup of kernels into the oil, replace the lid back on and shake pot continuously until kernels are done popping. Immediately remove from heat and allow to cool for two minutes. Pour popcorn in bowl, drizzle with melted butter mixture while stirring with knife. Sprinkle with sea salt while stirring. Serve

Crispy One Pan Potatoes with Eggs

Tablespoons butter, ghee or olive oil

rose potatoes (quartered)

shallots

sea salt and pepper (to taste)

eggs

parsley (roughly chopped,

red pepper flakes (optional)

Place cast iron pan on high heat. Add butter or ghee to cast iron pan. Add potatoes, cook for about 10 minutes, stirring occasionally (lower heat if necessary)

Add shallots. Cook until shallots are caramelized and potatoes are browned and crispy (about 10 more minutes)

Sprinkle with sea salt and pepper. Stir.

Make 3-4 wells in potatoes with back of a large spoon, crack eggs very carefully into wells.

Cook with lid on until whites are solid and yolks are runny.

Sprinkle with parsley or chives and red pepper flakes if desired. Serve!

Peel the garlic cloves, then add them to the bowl of a food processor and pulse until chopped. Drain the pinto beans. Add the pinto beans, Greek yogurt, cumin, oregano, chili powder, onion powder, and 1/2 teaspoon kosher salt. Process until smooth, about 1 minute.

Brush a cast iron skillet or 9 x 9&#8243; pan with olive oil and pour bean mixture into the skillet. Drain the white beans. To the bean mixture, stir in the white beans, 1/2 cup Mexican cheese, green chiles, hot sauce (optional), and 3/4 teaspoon kosher salt.

Mince the red pepper and thinly slice the green onions. Top the white chili cheese dip with 1 to 1 1/2 cups Mexican cheese (depending on your cheese preference!), red pepper, green onions, and frozen corn.

Bake for 20 minutes until cheese is melted*. Serve warm with tortilla chips.

Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

Pour crackers onto parchment paper and spread into an even layer.

In a medium saucepan, melt butter over medium heat and then stir in the brown sugar, vanilla, and cinnamon until dissolved.

Bring the mixture to a boil while continuously stirring. Continue cooking the bubbling mixture for 2-3 minutes until it thickens and lightens in color.

Remove from heat and immediately pour over crackers. Fold the caramel into the crackers until evenly coated. Top with salt.

Bake for 7-9 minutes, watching that the caramel doesn’t burn.

Allow crackers to cool then break them into small clusters. Store in an airtight container.

White Bean Dip

Preheat oven to 400 degrees F and grease a pie dish or 8x8 baking dish.

In a large food processor, add all ingredients other than the topping cheeses. Pulse until smooth and evenly combined. Add more water a tablespoon at a time if the consistency is too thick.

Spoon bean mixture into the prepared dish and top with the remaining cheese.

Bake for 25-30 minutes or until bubbling and golden brown.

Serve hot with tortilla chips or crackers.

Strawberry Cheesecake Dip

Add the heavy cream to a small bowl and beat on medium-high speed until stiff peaks form.

In a large bowl, beat together the cream cheese, powdered sugar, and vanilla. Once combined, fold in the whipped heavy cream.

Transfer mixture to serving dish. Stir jam and then spoon evenly onto the cream cheese mixture. Run a knife through the top of the dip to create a marbled effect.

Fill a large stockpot with water and 2 teaspoons sea salt. Bring to boil.

Add quartered potatoes to boiling water. If some potatoes are larger you can cut them into sixths. The most important thing is that the potatoes are fairly uniform in size so they will cook at the same rate. While potatoes boil, chop garlic, chop basil and roast pine nuts in a pan until golden brown.

Cook potatoes until a fork goes in but they are still quite firm, usually 8 minutes or so. NOTE: If you wait until potatoes are soft they will end up getting mushy later. Check frequently and when the potatoes are firm but fork goes in, add the trimmed and cut green beans to water and blanche for 3 minutes. Drain potatoes and beans in colander and rinse in cold water immediately and thoroughly to stop the cooking process.

If you happen to err on the undercooked side (doubtful), just throw a dishtowel over the colander and let the potatoes and beans steam for a minute before rinsing with cold water.

Place potatoes and green beans in a bowl or on a platter.

Now for the rustic pesto! Pour olive oil liberally over potatoes and green beans. Sprinkle with basil, minced garlic, and pine nuts, toss. Add sea salt to taste, toss. Serve warm. Enjoy!
