Acini di Pepe Salad

oz container frozen whipped topping (thawed)

Cook the acini di pepe in salted boiling water until al dente. Run under cold water. Drain. Place the pasta in a large bowl. 

In a saucepan stir the reserved pineapple juice, reserved mandarin oranges juice, sugar, eggs, salt, and cornstarch. Turn the heat to medium and cook until thick, stirring constantly. Remove from heat. Pour over the cooked pasta and refrigerate until chilled. 

Once cold, (and just before serving) stir in the crushed pineapple and oranges, whipped topping, and marshmallows. Serve cold.

broccoli florets (chopped)

½ red onion (minced)

red bell pepper (minced)

cucumber (diced)

olives (1 can, drained)

Colby Jack Cheese (cubed)

mayonnaise

white wine vinegar

Cook pasta according to package directions for al dente. Rinse well with cold water until pasta is cold.

Place cooked and cooled pasta in a large mixing or serving bowl.

Mix in broccoli florets, red onion, red bell pepper, cucumber, sliced olives and cheese.

Whisk together all dressing ingredients and pour over pasta and other ingredients.

Gently fold in dressing until all ingredients are evenly coated.

Cover with plastic wrap and store in the refrigerator for at least 1 hour before serving.

Pour the extra virgin olive oil into a large pan, add the garlic, and place over low heat. Cook gently for 2-3 minutes until the garlic smells fragrant but is still soft.¼ cup extra virgin olive oil6 cloves garlic

Add the tomatoes and all the juice, along with the fresh basil.1 can whole peeled Italian tomatoes8 fresh basil leaves

Cook the tomatoes on low heat for 20 minutes, breaking the tomatoes down with the end of your spoon/spatula.

Puree your sauce until smooth, then return to the pan and cook for 10 minutes over low heat. Check the seasoning and add salt, pepper, and sugar to taste. Let the sauce simmer on the lowest stetting while you cook the pasta.salt and peppersugar

Bring a large pan of water to a boil and add your salt. Add the pasta and cook for 1 minute less than the packet suggests.1 tbsp salt10 oz rigatoni

Reserve a cup of the pasta cooking water, then drain the pasta.

Add the pasta to the sauce, using tongs to turn it so it's completely coated. Cook for a minute over low heat adding pasta water if the pasta gets too dry.

Pour the garlic parsley sauce over the pasta with 2/3 cup of the cooking water; use tongs to twist and mix the pasta into the sauce.

Cook over medium heat for 2 minutes until everything is well coated, and the pasta is cooked to your liking. Add more pasta cooking water if needed.
