Thai Noodle Salad with Peanut Sauce

noodles rice

carrots

red bell pepper, finely sliced

scallions, sliced

cilantro, chopped (or sub basil and mint)

(or less,

peanuts

garlic

peanut butter

orange juice

lime juice

soy sauce

honey

toasted sesame oil

cayenne pepper

salt

Cook Noodles

Cook pasta according to directions on package. ( See notes for rice noodles) Drain and chill under cold running water.

Blend the Peanut Sauce: 

while noodles are cookig, blend the peanut sauce ingredients together using  a blender until smooth.

Toss: 

Place shredded veggies, bell pepper, scallions, cilantro and jalapeño into a serving bowl. Toss. Add the cold noodles to the serving bowl and toss again. Pour the peanut sauce over top and toss well to combine.

Taste

Adjust the salt (to you liking), add chili flakes if you want and serve, garnishing with roasted peanuts and cilantro and a lime wedge.

This was divine ! I didnt have orange juice so put in more lime juice - which didnt turn out to be such a good idea because i ended up adding jaggery to balance the sourness. What could   be a substitute for orange juice or can it be skipped ? But it was an absolute smacker, LOVED it !

This was delicious! Fresh, filling and something different from chicken and rice or meat and potatoes. AND bonus ... my caveman husband liked it too. I topped it w salmon. I definitely think the dressing should be made ahead because at first it was a bit runny but thickened up nicely after a couple hours in the frig. LOVED it, thank you!

Thai Noodle Salad 

A nutty sauce is the perfect pairing for crispy pan seared tofu (vegan!).

Tofu with Peanut Sauce

brown sugar

shallots

Sriracha or other hot sauce

water

peanut, vegetable, or canola oil (, divided)

extra firm tofu (, cubed)

rice (to serve (optional))

scallions cilantro leaves (for garnish (optional))

make the sauce

Combine the peanut butter, sesame paste, soy sauce, oil, vinegar, brown sugar, shallots, garlic, cayenne, and salt and pepper in a blender or food processor. Taste and adjust the seasonings as desired.

sear the tofu

Heat the oil in a large skillet over medium high heat.  Sear the tofu until browned, about 3 minutes on each side (you don’t have to brown all of the sides of the cubes, but make sure at least a few sides have a nice golden-brown exterior).  Remove the tofu to a plate.

serve the tofu with the sauce

Serve the tofu over rice if desired. Drizzle the peanut sauce on top or pass it on the side for people to help themselves.  Sprinkle the tofu or the sauce with the sliced scallions.

Unsweetened Smooth Peanut Butter

Soy Sauce (or gluten free tamari)

Unseasoned Rice Vinegar (or lime juice)

Maple Syrup (or preferred sweetener)

Fresh Ginger (finely grated)

Garlic (finely grated)

Sriracha (or chili garlic sauce)

Water (as needed to adjust consistency)

In a small mixing bowl, whisk together PEANUT BUTTER, SOY SAUCE, RICE VINEGAR, MAPLE SYRUP, GINGER, GARLIC, and SRIRACHA until well-combined.

Slowly add small amounts of WATER and continue whisking until sauce reaches desired consistency.

If you add too much water, add a little peanut butter to thicken the sauce.

Asian "Peanut" Sauce Recipe (Paleo, Whole30, GF)

almond butter

Canned Mandarin orange juice

tbsp coconut aminos

0.25 oz garlic (grated)

0.25 oz ginger (grated)

olive oil

Stir-well

Stir-well the nut butter. In a large mixing cup, add ingredients from almond butter to vinegar. Stir-well.

Whisk

With one hand holding a whisk, slowly drizzle in the olive oil while whisking at the same time to emulsify the sauce.

Rest

Let the sauce sit at room temperature for 10-15 minutes. The flavor will develop further and the texture will turn extra creamy smooth.

Finally found a nut sauce for salad and rolls!  I love peanut or nut sauce for summer rolls, but due to diet restrictions(no added salt/sodium or added sugars), I could not do sauces with hoisin or soy, even coconut aminos.   Like you said, I could drink this.  I used sunflower butter with no sugar or salt added.  Added chili pepper flakes because I also love a little kick.  This is a keeper for sure!

Fresh Vietnamese Spring Rolls (Gỏi Cuốn)

oz thin rice vermicelli

Leafy lettuce and fresh herbs

oz dried rice paper

Prepare the shrimp

To a medium pot, add water. Bring the pot to a boil. Add shrimp and cook until they turn color (about 3 minutes). Remove from pot and slice in half along the backside. Set aside.

Prepare the pork belly

Read notes below if pork belly has an odor. Add pork belly to the same pot that was was for shrimp. Cook for 30 minutes or until chopstick-tender. Remove pork, rinse, and pat dry. Once cooled, slice thinly and set aside.

Prepare the noodles

Cook rice noodles per package instructions. Drain, rinse with cold water, and set aside.

Assemble the rolls and serve

Wet the rice paper quickly and shake off excess water. The rice paper will only take 10 seconds to become pliable. On bottom end of the rice paper, add a bed of noodles, vegetables of your choice, and a few slices of pork belly slices. Add 2-3 shrimp, facing down, on the top half of the rice paper. Fold in the sides. Roll everything up from the bottom, tightly tucking and rolling to seal. Serve with Vietnamese peanut sauce lettuce and favorite herbs.

Vietnamese Pork & Shrimp Spring Rolls with Peanut Sauce (Gỏi Cuốn Tôm Thịt)

Classic creamy Vietnamese peanut sauce for fresh spring rolls and summer rolls. This recipe makes about 2 cups.

Vietnamese Peanut Dipping Sauce for Spring Rolls (Tương Chấm Gỏi Cuốn)

water chicken stock

Fry the garlic

In a small pot, heat oil on medium-high. Add garlic and sauté until fragrant (about 20 seconds).

Make the sauce

Add water or low-sodium stock and peanut butter. Whisk until smooth. Mix in hoisin sauce. Simmer on low for about one minute or until the mixture begins to bubble. Remove from heat. If too thick, whisk in a little bit more water/stock. If too thin, let it simmer a little longer for some moisture to evaporate. Keep in mind that the sauce will thicken as it cools.

Serve

Transfer to individual sauce bowls, top with a sprinkle of toasted peanuts (optional) and a drizzle of Sriracha chili sauce (optional). Serve with spring/summer rolls.

I made this recipe with regular peanut butter and it tasted just like my favorite peanut sauces at thai and vietnamese restaurants!
