Learn how to roast poblano peppers in the oven (psst -- it's not hard!). Just a little bit of olive oil and a baking sheet are all you need to make roasted peppers year-round and in any kind of stove.

How to Roast Poblano Peppers in the Oven

Preheat oven to 425°F. Rub all sides of the poblano pepper generously with oil and place on a baking sheet.

Roast for 6-8 minutes on each of the three sides by carefully turning pepper over with tongs, until the skin is charred and blistered evenly around. Continue roasting for extra time as needed until all sides are well charred/blistered, as this will help the skin come off easier in the next step.

Place roasted poblano pepper in a heat-proof bowl and cover the top with a dish towel or plastic wrap. Let the pepper sit for 10-15 minutes, at which point the pepper will be deflated and the skin will appear shriveled and easily slide off.

Once the skin is removed, slice off the very top of the pepper to remove the stem. Scoop out and discard the seeds. Slice and use the roasted and peeled poblano peppers in your favorite recipes.

Stuffed Poblano Peppers are loaded with southwest seasoned ground beef, rice, veggies, and cheese for a satisfying dinner with just a little bit of a kick! Everybody raves about this twist on classic stuffed peppers!

Stuffed Poblano Peppers

Preheat oven to 350 degrees F.

Slice the poblano peppers in half and remove the seeds and membrane. Rub with 1 tablespoon of the olive oil. Arrange on a baking sheet and roast for 10-12 minutes until softened.

While the peppers are baking, heat the remaining olive oil in a large skillet and saute the onion and garlic until soft, about 5 minutes.

Add the ground beef and spices, cooking and breaking up with a spoon until the meat is cooked through and browned.

Add the cooked rice, beans, corn and half of the cheese. Stir well, then divide evenly between the roasted poblano pepper halves. Sprinkle with the remaining cheese.

Bake for 10 minutes until heated all the way through and the cheese is melted on top. Sprinkle with chopped cilantro and serve.

Southwestern Queso Burgers

For onion: oil space where the onions will sit. Brush a little oil on the onions. Add to grill, sprinkle with salt and pepper, and grill until grill marks appear and turn, repeat. Remove from grill as finished.

For burgers: Place burgers on the hottest part of the grill and cook, undisturbed, for about 5 to 6 minutes. Turn and cook for an additional 2-3 minutes for rare to medium-rare.

For buns: Brush cut side with oil. Toast carefully.

When ready to cook, clean grill grates

These stuffed poblanos build upon the awesomeness chorizo with a mix of fresh, tangy, creamy, spicy, cheesy, meaty flavors.

Grilled Chorizo-Stuffed Poblano Peppers Recipe

Type of fire: two-zone indirect

Grill heat: medium-high

Heat olive oil in a medium skillet over medium-high heat until shimmering. Add in onion and sauté until lightly browned, about 5 minutes. Add in garlic and cook until fragrant, about 30 seconds. Add in chorizo, breaking sausage into small pieces with a wooden spoon, and cook until cooked through, about 5 minutes. Transfer mixture to a large bowl.

Add rice, tomatoes, crema, cilantro, and cotija cheese to bowl with meat mixture and mix until combined. Season with salt and pepper to taste.

Spoon mixture into cavities of split poblanos and top with pepper jack cheese.

Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place poblanos on cool side of grill, cover, and cook until cheese has melted and poblanos have softened, about 20-30 minutes. Remove from grill and serve.

<p>My favorite thing about this beet burger is that&#8217;s it&#8217;s bright red. It also happens to be pretty delicious, but the color is really awesome.</p>

Corn on a pizza? Absolutely! This roasted poblano and corn pizza proves the combination, featuring midly spicy peppers, sweet corn, and mozzarella cheese.

Roasted Poblano and Corn Pizza

Cut the poblano peppers into strips. Cut the corn off the cob. In a bowl, mix the peppers and corn with the olive oil and the cumin, oregano, garlic powder, chili powder, and kosher salt. Line a baking sheet with parchment paper, and place the vegetable mixture on top. Roast for 25 minutes until tender, stirring occasionally.

While the vegetables roast, dice the onion.

When ready to bake, place naan directly on the oven grate and pre-bake 3 minutes per side (6 minutes total), until crisp.

Remove the naan and spread each with mozzarella cheese, then top with roasted vegetables and red onion. Sprinkle lightly with kosher salt. Bake for 5 minutes directly on the oven grate, on a pizza stone or on a baking sheet, until the cheese is melted. Slice and serve immediately.

Breakfast Stuffed Poblano Peppers are mildly smoky and stuffed with eggs, hash brown potatoes, and Mexican-style cheese!

Preheat the oven to 450 degrees F. Place four poblano peppers on a rimmed baking sheet  and roasted in the oven for 15-20 minutes, until the skin is bubbly.

Meanwhile, heat a large skillet over medium heat. Add the butter to the skillet and once melted, add the hash browns. Liberally salt and pepper the hash browns, then brown for 5-8 minutes, stirring occasionally, until golden and crispy. Lower the heat to low.

In a medium bowl, whisk the eggs until frothy, then stir in the sun dried tomatoes, scallions, and Quesadilla Cheese. Pour the mixture over the hash browns and stir to combine. Cook the egg mixture for 2-3 minutes until just-under-cooked, but scoopable. Remove from heat.

Remove any loose skin from the top of the poblano peppers. Gently cut a slit in the top of each pepper and scoop out the seeds. Then spoon the egg mixture into the poblano peppers. Reshape the peppers with your hands.

Sprinkle Cotija cheese over the top of each pepper, and place back in the oven for 5-8 minutes, until the cheese is toasted and the eggs are cooked through.

Stuffed Poblano Peppers (For Breakfast)- Mildly smoky poblano peppers and stuffed with eggs, hash brown potatoes, and Mexican-style cheese!

This stuffed poblano peppers recipe is a wonderful light summer dinner! If you can't find poblanos, bell peppers would also work here.

Extra-virgin olive oil (for drizzling)

Preheat the oven to 400°F and line a baking sheet with parchment pepper.

Slice the peppers in half and remove the seeds and ribbing. Place on the baking sheet, drizzle with olive oil and pinches of salt and pepper, and roast cut side up for 15 minutes.

In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the onion, cauliflower, red pepper, cumin, coriander, oregano, garlic, 1/2 teaspoon salt, and several grinds of black pepper. Cook until the onion is soft and the cauliflower is lightly browned, about 5 to 8 minutes.

Remove from the heat and stir in the black beans, rice, spinach, lime juice and tomatillo salsa. Taste and adjust seasonings.

Scoop the filling into the peppers and bake for 15 minutes.

Serve with avocado slices, cilantro, tomatillo salsa, green chile cashew cream and lime slices on the side.

Recipe to prepare Rajas con Queso taco filling. The dish is prepared with fresh Poblano chiles, onion, garlic, corn, asadero cheese, and Mexican cream. 

Rajas con Queso

Cut the Poblano chile into 2&quot; by 1/4&quot; strips.

Cut the onion into 2&quot; by 1/4&quot; strips.

Finely chop the garlic.

In a medium-hot pan, cook the onion and garlic until the onion starts to soften, about 4 minutes. Do not brown.

Add the chiles and cook for another 4 minutes.

Add the corn and cook for 2 minutes.

Turn off the heat and add the cream. Stir to incorporate.

Add the cheese and stir continually until the cheese is just melted.

Check the salt and add salt if needed.

Serve immediately on hot tortillas.

Chiles en nogada or stuffed poblano peppers in walnut sauce, are a festive dish eaten during the Mexican Day of Independence festivities. They’re delicious and unlike any other Mexican food you’ve ever eaten.

Chiles En Nogada Made Vegetarian (Poblano Peppers In Walnut Sauce)

Thoroughly clean and pat dry the Poblano peppers so you can roast them. I use the open flame method on a stove top but you may also put the peppers under the broiler in your oven until their skin is nice and charr. On the stove char the chiles evenly on all sides. Once the Poblanos have been charred place inside of a plastic bag and set them aside to “sweat” so you can peel them in a bit.

Instructions for Roasting The Poblano Peppers

Bring the water to a boil then pour in the lime juice and the soy sauce give it a stir then carefully add the dry TVP granules. Stir the TVP around the water to help rehydrate it. Turn off the heat and set aside for 15 minutes.

Once the TVP has been fully rehydrated, strain it over a fine sieve. Then use just a little cold water to rinse and run over the TVP to help cool it down enough for you to handle it. Once you can touch the TVP then you want to use your hands to squeeze out as much of the liquid as possible. After you’ve done that, and only if the granules are large you want to roughly chop it into smaller pieces that resemble cooked ground meat. Set the TVP aside.

How to Rehydrate TVP

Heat the oil in a large pan and once hot add the onion, saute until soft and translucent, about 5 to 8 minutes. Next add the garlic and saute for 2 minutes, stirring often. Now add the drained TVP and stir to combine the onion and garlic into it. Mix in the bits of peach and allow to cook for about 5 minutes, then add the apple and cook another 5 minutes. Now add in the almond bits, raisins, and all of the spices from the filling ingredients list. Give the mixture a very good stir and cook for 5 minutes. Now add the pear and cook under medium heat for a further 15 minutes. At this time if the mixture starts to stick to the pan you may add a little bit of water or vegetable broth to prevent it from burning and just until the fruits release some of their juices. Give the filling mixture a taste and if needed adjust the seasoning if desired. Remove from heat.

Now go back to the peppers and one by one use the back of a butter knife or your fingers to carefully pull off the charred skin away from each pepper. Place them on a clean plate or cutting board until you’ve finished with each chile. Once all the chiles have had their charred skin removed (you don’t need to rinse them as any little bits of charred skin will only add flavor to the dish), make a small incision in each pepper going lengthwise but stopping before you get to the tip. The incision only needs to be long enough to remove the seeds and place the stuffing inside. Now use your hands to pull out all of the seeds and any attached veins from each Poblano. After you’ve done this to all 6 chiles set them aside.

Pour the media crema or milk or cream into the blender then add in the walnut bits and a little splash of milk or water to help get the blender going. Blend until the walnuts have completely broken down. Next add the goat cheese and blend until it is well incorporated into the sauce — if needed add a little more milk to the blender in order to achieve a smooth and creamy sauce . Add a pinch of ground black pepper and fine sea salt to your taste (I added the 1/2 teaspoon), and the 1/2 teaspoon of sugar then blend again for about 2 minutes. Now taste the walnut sauce and if needed add more sugar or salt to it if desired. Pour the sauce into a large bowl and set aside.

Instructions for Preparing the chiles en nogada:

Traditionally it is only one stuffed pepper per person. Carefully place chile on a plate and fill it with the warm filling. Drizzle a generous amount of the walnut sauce over the stuffed pepper, then sprinkle some pomegranate seeds and lastly some finely chopped parsley. Serve immediately.

Traditionally the pepper is served alone, but if you’d like some plain white rice may be added as an accompaniment. I prefer the alone method and find that the rice is unnecessary, but it is up to you. Lastly, I quite enjoy a glass of dry or fruity red wine with this meal — beer is not recommended.
