Japanese Dry Curry is made with ground meat and a few vegetables. Unlike other Japanese curry such as my Katsu Curry, it has no gravy. But it is equally tasty. Japanese Dry Curry is a quick and simple dish to make. It goes so well with rice as well as bread.Don&#39;t forget to see the section &#39;MEAL IDEAS&#39; below the recipe card! Japanese Dry Curry Recipe

/ 0.9lb pork mince ((note 1))

/ 3.5 ounces onion finely chopped

carrot

Salt & pepper

tbsp oil

ginger grated

tbsp curry powder ((note 3))

tbsp ketchup ((or tomato sauce))

Worcestershire sauce

beef stock

tbsp boiling water ((to dissolve stock cube))

rice

Crumble stock cube into boiling water and mix to dissolve.

Heat oil in a frying pan over medium heat, sauté onion pieces until they become soft and translucent.

Add pork mince to the pan, a dash of salt and pepper to season, and cook, breaking it up as you go.

When the mince has changed  colour to light brown, add carrot and cook for a couple of minutes, then add capsicum and quickly mix.

Reduce to low heat. Add ginger and curry powder to the pan and sauté for a minute or two, until the curry powder is all integrated with the other ingredients and there is no dry powder left.

Add ketchup, Worcestershire sauce, and the water with beef stock to the pan. Bring the heat to medium and mix well.

When the liquid is almost evaporated, turn the heat off.

Put rice on a serving plate, shaping a flat mound. Pour the Dry Curry over the rice. Place a sprig of parsley on the side and serve immediately.

If you're asked to bring a plate to a party, you can't go wrong with these pork and chorizo sausage rolls. You'll leave with an empty plate and an invite back.

(220 grams) dried chorizo, cut into 1cm pieces

There&#8217;s something so satisfyingly indulgent about soft, thick udon noodles – they&#8217;re made for slurping and carrying big textures and flavours! Heat the oil in a wok or large frying pan over a high heat, add the pork mince, then stir-fry for 3-4 minutes until browned, breaking up the meat with a wooden spoon as it fries.

Add the garlic, ginger, white parts of the spring onion, chopped coriander stalks and Asian greens, then stir-fry for a further 1-2 minutes.

Reduce the temperature slightly under the wok or pan, pour in the black bean sauce and heatto warm through.

Fill the jar with cold water to rinse, then add to the pan with the noodles, tossing to make sure everything is coated in the sauce. Divide among 4 plates, then serve scattered with the remaining green parts of the spring onion, coriander leaves, sliced red chilli and chopped peanuts.

Simmered Layered Cabbage and Mince

cabbage leaves ((note 1))

onion ((medium size, about 150 grams/5.3 ounces, very finely chopped))

butter

400 grams/0.9lb pork mince ((note 2))

panko bread crumbs

milliliters/1.4fl oz milk

salt

Pepper

300 milliliters/10.1fl oz chicken stock ((salt reduced))

milliliters/1.7fl oz water

Shave the thick stems off the cabbage leaves. Finely chop the stems and set aside.

Boil water in a large pot and blanch the cabbage leaves for a minute or so (you only need to remove crispness of the cabbage). Drain and let them cool.

Prepare Cabbage

Heat the oil and butter in a frying pan over medium heat. Sauté the onion for 3-4 minutes, until some onion pieces start browning around the edges. Turn the heat off and let it cool.
