Protein Pancakes

Preheat a hot griddle or skillet over medium heat.

Add oats and baking powder to a food processor or blender and blend until they&#039;re as fine as flour. Remove to a bowl.

Add the cottage cheese, eggs, water, vanilla, oil and cinnamon to the blender and blend until smooth. 

Add the wet ingredients to the bowl with the dry ingredients and stir to combine.

Scoop about 1/4 cup of batter for each pancake and pour onto a hot greased griddle.

Cook on one side until bubbles begin to appear on the surface of the pancake. Flip and cook on the other side until golden.

Serve with fresh fruit and real maple syrup, or a low sugar syrup.

The Best Protein Pancakes Recipe

gluten-free flour blend** or all-purpose flour

In a large mixing bowl, combine all ingredients; stir well.

Heat a griddle or nonstick skillet over medium heat. Add a teaspoon of butter or coconut oil (may also use cooking spray) to the surface. Once melted and/or hot, swirl around to coat the bottom of the pan.

Spoon batter (using a scant ¼ cup per pancake) into the skillet. Cook for 2-3 minutes or until small bubbles appear on top surface of the batter. Flip over and cook for an additional 2-3 minutes, until the pancake is golden brown. Remove the cooked pancakes from the skillet and keep warm. Repeat until all of the pancake batter is used up. 

Store leftovers in the fridge for up to 3 days. To reheat: microwave for 30 seconds or use a toaster or toaster oven to warm them. 

Made these per recipe using Puori vanilla whey protein and Bobs Red Mill GF flour but cooking them on a 16x12x1 sheet pan, nonstick using cooking spray. 350 degree oven for 15 minutes was perfect. They taste good! We also added blueberries before baking and that worked well. They were a little thin for our families liking so next time we will double the recipe to make them thicker. Two thumbs up for taste and texture! Thanks for all your hard work on healthy recipes for the whole family!

These are the protein pancakes to end all protein pancakes. They’re light, fluffy and very delicious. Packed with over 30g of protein per portion. Make a batch and freeze them for an easy 2-minute breakfast.

Greek Yoghurt

Cottage Cheese

Semi-Skimmed Milk

Vanilla Extract

Flour

Vanilla Protein Powder

Baking Powder

Salt

Non-stick Vegetable Oil Spray

Fruit

Honey

Make the pancake batter. Add the greek yoghurt, cottage cheese, whole egg, milk, protein powder and vanilla extract to a blender. Blend on a high speed until completely smooth, about 45 secs. Pour the mixture into a large mixing bowl.

Add the flour, baking powder and salt to the mixing bowl with the wet ingredients in it and whisk gently until just incorporated. You don’t want to overmix it so some small lumps are fine. Leave it to sit in the bowl at room temperature for 5 mins.

Now cook the pancakes. Set a non-stick frying pan with a lid over a low heat to warm up, about a minute. Spray the pan lightly with some oil, then add a ladle of pancake batter into the pan and pop the lid on top. If your pan is big enough you can cook multiple at a time. Cook for 2 ½ mins. Using a spatula, flip the pancake over and put the lid back on the pan. Cook for another 2 mins. Remove from the pan and set aside.

Once cool, pop them in a ziplock bag and keep in the freezer. Microwave for 1-2 mins to defrost.

Serve with your choice of toppings. Greek yoghurt, fresh fruits and honey work great.

Made these pancakes this morning and no matter how I heated the oil/used lid or no lid the pancakes cooked and stuck to the pan but stayed wet at the top so impossible to flip, complete waste of time.

Followed instructions exactly and turned out really fluffy and moist, added blueberries too. My new go to protein pancakes!

I added some crushed raspberries to mines and they were gr8...didn't have baking powder but didn't bother the pancakes I don't think!

Great recipe! I felt there was a bit too much salt for my taste - not sure it is because I have skipped the protein powder?
