Caribbean Red Snapper is one of my favorite fish. Pan seared and topped with Gulf Shrimp and a lime margarita sauce and its darn near perfection!

Pan Seared Red Snapper And Shrimp In A Lime Margarita Sauce

Red Snapper Fillets

Sea Salt and Black Pepper

jumbo shrimp peeled and deveined (16-20 count)

tomatoes

olive oil

cilantro -chopped

tequila

unsalted butter

brown sugar

juice lime

lime zest

Pan Seared Red Snapper and Shrimp in a Lime Margarita Sauce

Season Red Snapper with Sea Salt and Black Pepper

in a large saute pan add olive oil and allow the pan to get hot before adding snapper

Add Snapper to the pan and sear the top until nicely brown

Place snapper in a baking dish with a little water and place in a 350 degree preheated oven for 15 minutes to finish cooking

In the same pan add additional oil if needed, then saute tomatoes and shrimp till almost fully cooked and remove from heat.

in a small saute pan, add 1 tbsp of butter and after it melts, add in brown sugar and blend well.

add in lime juice and tequila, allow the alcohol in the tequila to burn off.

add in the last tbsp of butter and allow the mixture to thicken and remove from heat

When snapper is done, remove shrimp from saute pan adding to the lime sauce and gently reheat

serve Red Snapper (removing bottom skin when taking out of the baking dish) and arrange tomatoes around the fish and top with shrimp and margarita sauce

Top with lime zest and chopped cilantro

red snapper fillets (about 2-3 fillets)

garlic (, minced)

Worcestershire sauce

Cajun Seasoning

black pepper

breadcrumbs

parsley (, minced)

chives

Parmesan Cheese (, freshly grated (optional))

preheat oven

make garlic sauce

In a small saucepan over medium-high heat, melt the butter until bubbly. Combine garlic, Worcestershire sauce, Creole seasoning, pepper, and parsley with the butter sauce. Cook the sauce low heat for 2 minutes to blend flavors.

Place the red snapper fillets in a baking dish that has been sprayed with cooking spray.

Brush both sides of fish fillets with the butter and herb mixture.

Add the breadcrumbs and parmesan cheese (if using) to the remaining butter mixture; sprinkle over the fillets.

Bake for 12 minutes, or until internal temperature reaches 137°, the fish should flake easily and is no longer translucent. Garnish with chives (if using) and lemon slices (if using).

Place the fillets, skin side down, on the grill. Close or cover the grill. Grill for 6 to 8 minutes or until the fish begins releasing some moisture, flip the fillets and grill for 2 minutes or until the fish is flaky and has reached an internal temperature of 140 degrees F on an instant-read thermometer. 

Serve immediately.

Grilled Red Snapper Recipe

extra virgin olive oil

lemons (thinly sliced)

Cut diagonal slits about 2 inches apart on both sides of each fish. This allows it to cook evenly while on the grill.

In a small bowl combine parsley, garlic, pepper, 1/2 teaspoon sea salt and lemon zest. Rub half of mixture onto the inside of each fish.

Stuff the inside of the fish with 5-6 lemon slices, fold slices in half if they have trouble fitting.

Rub extra virgin olive oil of the outside of each fish. Sprinkle remaining 2 tablespoons of salt over the outside of each fish.

To prepare the grilling basket, arrange a bed of lemon slices on one open side. Lie fish in a single layer over slices. Place remaining lemon slices over the tops of the fish. Close the basket.

Heat grill to medium heat. Grill for 10 minutes on each side or until fish slits look white and flaky. Skin will be slightly charred.

Remove from grilling basket and allow to sit for 5 minutes before serving. The skin is edible. Please be careful... fish has bones! Red snapper is very meaty, but you will find some.
