Roasted Artichoke

artichokes

lemon juice (15 milliliters, per artichoke)

olive oil

Sprinkle salt (per artichoke)

garlic (per artichoke)

olive oil (236 milliliters)

pepper (Freshly ground)

lemon juice (30 milliliters)

Trim the pointy ends of the artichoke. Halve and scoop out the insides.

Sprinkle with lemon juice.

Place 1-2 cloves of smashed garlic in each.

Drizzle olive oil liberally on the inside.&nbsp;

Sprinkle with salt and top with lemon slice.

Turn artichoke halves cut side down using the lemon wedge to hold the garlic in. Bake at 400F cut side down for about 15 minutes.&nbsp;

Remove from oven, cover in foil, and bake an additional 25-30 minutes or until tender.

Blend egg yolks, garlic, lemon juice, salt and pepper until smooth.&nbsp;Add oil gradually.&nbsp;Drizzle over artichokes or pour into a&nbsp;serving dish for dipping.&nbsp;

How to Roast Artichokes

Roasted Artichokes with Lemon-Shallot Vinaigrette

Cooking spray

artichokes,

lemon

garlic cloves, finely minced

avocado oil or olive oil

thyme

salt and black pepper

½ tablespoons champagne vinegar (may substitute white wine vinegar

½ small shallot, finely minced (1 tablespoon)

Dijon mustard

fresh thyme leaves

Spray a 9&#215;13-inch glass baking dish with cooking spray and set aside.

Using a large knife, cut each artichoke in half and use a spoon to scrape out the fuzzy choke. 

Brush all sides of the artichokes with lemon juice and place cut-side down in the baking dish. 

Roast artichokes for 15 minutes. Remove baking dish from oven and flip the artichokes over so the cut side is up. 

Sprinkle artichokes with garlic and drizzle with oil. Sprinkle with salt and pepper. 

Place a lemon slice and sprig of thyme on top of each artichoke half (sprinkle with dried thyme if not using fresh). Lightly spray artichokes with cooking spray. 

Cover the baking dish tightly with foil and return the dish to the oven. 

Bake for 35-45 minutes or until you can easily insert a paring knife into the heart (or the bottom of the stem) and the lower leaves are easily pulled from the artichoke. 

Remove from the oven and serve hot or at room temperature drizzled with vinaigrette. 

Leftover artichokes may be stored in an airtight container in the refrigerator for up to 4 days. 

Combine oil, vinegar, lemon juice, shallot, mustard, and thyme in a small bowl and whisk to combine. Season with salt and pepper to taste. 

Leftover vinaigrette may be stored in an airtight container in the refrigerator for up to 1 week.
