If you&#39;ve never cooked golden beets, this recipe offers an easy and delicious way to prepare them. Roasted golden beets are prepared easily by tossing chunks of beets in oil and fresh herbs, and then roast them in the oven until they are caramelized. They&#39;re a great addition to any meal.

Roasted Golden Beets

fresh thyme, finely chopped (or ½ tsp dried)

fresh rosemary, finely chopped (or ½ tsp dried)

black pepper

garlic powder

Preheat oven to 400℉. Line a baking sheet with some parchment paper.

In a large bowl, mix olive oil, salt, finally chopped thyme, finally chopped rosemary, black pepper and garlic powder. Set aside.

Wash and scrub the beets. Use a veggie peeler to peel the skin. Quarter the beets. Alternatively, you can cut them in to bite size cubes.

Add the beets into the bowl with oil and herbs. Stir until well coated.

Arrange the beets on a prepared baking pan in a single layer. Bake them for about 30-40 minutes until the beets are tender inside. You can check it by inserting a fork or a knife in one the largest pieces. Take it out of the oven and serve.

Preheat the oven to 400°F. Line a baking sheet with parchment paper, then set aside.

In a small bowl, combine the oil, honey, mustard, vinegar, garlic powder, salt, and pepper. Mix well.

In a large bowl, combine the peeled and chopped beets with half of the honey-Dijon mixture. Toss to coat well.

Place the beets on the parchment-lined baking sheet in a single layer.

Roast the beets in the oven for 45 minutes, stirring halfway through, until they’re fork-tender and lightly caramelized.

Remove the beets from the oven and then immediately toss them with the remaining honey-Dijon mixture.

Roasted Golden Beets with Wilted Greens

feta cheese (crumbled)

Heat oven to 425

Trim ends off of the beets and use a vegetable peeler to remove the rest of the beet skin.

Slice beets into 1/2 inch slices.

Add beets, olive oil, and maple syrup to a medium sized bowl and season with salt and pepper. Toss to coat beet slices evenly.

Place beets slices in a single layer on a large baking sheet. I like to use parchment paper here to keep the beets from sticking as well as to make clean up easier.

Bake beets in the oven for 40 minutes

While the beets are cooking, add a tablespoon or two of olive oil to a large saucepan and heat to medium heat.

Trim the stalk ends off the beet greens and slice into 2 inch thick ribbons. What you are looking for is bite sized pieces of greens.

Add a tablespoon or two of olive oil to the pan and add the beet greens, onion, garlic, and about 1/8 cup of water. Toss the greens in the pan until they wilt - about 4-5 minutes.

Place the cooked beets on a serving tray, top with wilted greens and sprinkle with the crumbled feta to serve
