One Pan Roasted Potatoes Sausage and Peppers is one of my favorite, fuss-free sheet pan dinners. Perfect for weeknights and bonus points for easy cleanup!

One Pan Roasted Potatoes, Sausage and Peppers

onion

red bell peppers

tsp extra virgin olive oil

kosher salt and fresh cracked pepper

rosemary

garlic powder

olive oil spray (I use my Misto)

lb Italian chicken sausage

Cut the potatoes into small 1" x 1/2 inch pieces. These take the longest to cook so cutting them small ensures everything cooks evenly.

Preheat oven to 375°F.

Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.

In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. Mix well to be sure everything is coated with oil and seasoned evenly. Pour onto the prepared baking sheet and place in the center of the oven; bake for 15 minutes.

Use a spoon to toss so nothing sticks or burns.

Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through.

Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don't burn.

Cheesy Sausage and Potatoes Recipe

Heat oven to 350°F and spray 13x9-inch baking dish with nonstick cooking spray.

Place potatoes in a large saucepan, over medium-high heat, and cover them with cold water. Bring the water to a boil and reduce the heat to low. Cook, uncovered 8-10 minutes or until the potatoes are just fork tender. Drain the potatoes and place them in the prepared baking dish.

Pour the melted butter over the potatoes.

While the potatoes cook, crumble the sausage in a large skillet set over medium heat. Add the chopped onion and cook until the onion is translucent and the sausage is cooked through. Transfer the sausage/onion mixture to a paper towel-lined plate and dab the top of the mixture with another paper towel.

Spread the sausage/onion mixture over the potatoes and gently toss the mixture together.

Top with cheese and bake, uncovered, at 350°F for 7-10 minutes or until the cheese is melted.

Garnish with chopped parsley, if desired, and serve.

Preheat oven to 400 degrees F.

Slice sausage, potatoes (washed) and onions into bite-sized pieces and place into a large bowl.

Drizzle on olive oil and lemon juice and add seasonings. Stir to coat evenly.

Pour mixture onto a foil or parchment lined sheet pan.

Bake in the preheated oven for about 50 minutes, stirring every 15-20 minutes.

Garnish with fresh chopped parsley and serve hot.

Creamy Sausage and Potatoes- a 30 minute dinner

Fry sausage and onion until browned.

Add enough water to cover sausage, then cook 10 minutes. Do not drain!

While sausage is cooking, dice potatoes. (I love using my Vidalia Chop Wizard for dicing the potatoes. Super fast!)

Add potatoes, salt and pepper to meat.

Cover and cook until potatoes are tender, about 10 minutes.

While potatoes are cooking, whisk milk and flour together until smooth.

Add to sausage and potato mixture and cook just until thickened, stirring occasionally.

Top with parsley and ENJOY!

Delicious!  I got 4 serves out of this -- 2 for tonight and leftovers for another meal.  I used a spicy chicken sausage from Amylu, and added some chunks of zucchini.

One of the easiest sausage &amp; pepper recipes I’ve found, and great flavor!

I’ve made this meal many times and we love it!  I do add a bit more of the seasonings than recommended, but its a fantastic all in one meal!

Liked the marinade. I prepped it on Sunday night, and left everything marinating in the marinade, and then just threw it in the oven for lunch on Monday.

Only issue for me is that the potatoes were underdone after 30 minutes. I mistakenly let it cook a little longer, and the potatoes were fine but the sausages were burnt. Next time I'm going to put the potatoes in for 10 minutes first, then put everything else on the pan for 25-30 minutes.

This was really great!  I followed the recipe exactly and it was a hit.  Will definitely make it again.  My only complaint is that we enjoyed it so much, there were no leftovers, LOL!

This recipe is so delicious! My husband loves it too! Would be a perfect dinner for a cool autumn evening! We will definitely be making this again!

Bangers &amp; Mash with Guinness Gravy Recipe

Chop the potatoes into 1&quot; cubes and place into a medium sized pot. Add cold water to cover potatoes by 2&quot;. Cover with lid and set the pot to boil over high heat. 

Once the pot boils, remove the lid, lower the temperature to medium and continue to boil until the potatoes are tender and fall apart with a fork. About 12 minutes.

Drain potatoes and return to the pot. Add milk, butter, salt and pepper.

Mash potatoes to desired consistency and stir to incorporate seasoning. Cover and keep warm.

The Potatoes

Place the sausages in a medium to large size skillet. Add enough water to come halfway up the side of the sausages. Cover and place over a medium heat. Bring to a boil then drop to a medium low heat and simmer until the internal temperature reaches 155 degrees, about 15 minutes.

Remove the lid, turn the heat back up and allow any remaining liquid to boil off. Brown the sausages for 1 - 2 minutes per side, then remove from heat and allow to rest. 

The Sausages**

Meanwhile, start the gravy. Melt the butter over medium heat then whisk in flour. Allow it to cook for about 1 - 2 minutes, whisking constantly.

Slowly whisk in Guinness and beef stock. Add mustard, worcestershire, salt, garlic powder, and onion powder.

Bring to a boil, whisking constantly. Once the gravy thickens, drop the heat to low, cover and keep warm.

Serve each portion with half the potatoes and two sausages links. This recipe makes just over 1 cup of gravy, which is just slightly more than we use for two people.

I made this for saint pattys day for the family. It turned out great. I used Irish o garlic brats . And guinnes stout draught. The gravy I did a little different. Thin sliced onions with beef broth and stout, salt and pepper flour used as thickener.. turned out great. The family loved it! Thank you!!
