Step 1

Heat the oven to 425ºF. Stir 4 tablespoons melted unsalted butter, 1 tablespoon lemon juice, 4 finely chopped garlic cloves, 1/2 teaspoon dried thyme, 1/2 teaspoon paprika, and 1/4 teaspoon black pepper together in a small bowl.

Step 2

Pat 1 1/2 pounds tilapia fillets dry with paper towels, then season all over with 1 1/2 teaspoons kosher salt. Place in an even layer in a 9x13-inch baking dish, they can overlap slightly if needed. Spoon the butter mixture evenly over the tilapia.

Step 3

Bake until the tilapia is just cooked through, opaque, and flakes easily, 18 to 20 minutes. Garnish with 1 tablespoon coarsely chopped fresh parsley leaves. Serve the tilapia with the sauce in the baking dish and lemon wedges.

Return the steak and any accumulated juices to the pan. Add 1 sliced large red bell pepper and 1 sliced large green bell pepper, and stir-fry until starting to soften, 2 to 3 minutes.

Reduce the heat to medium. Whisk the cornstarch mixture again, then pour into the pan. Toss until combined. Cover and simmer until the sauce thickens and coats the meat and vegetables, about 2 minutes. Serve with cooked white rice.

Heat 2 tablespoons of the canola oil in a wok or large (12-inch) skillet over medium-high heat until shimmering. Add the chicken in an even layer and cook undisturbed until browned on the bottom, 2 to 3 minutes. Flip the chicken and cook until the second side is browned, about 2 minutes more. Return to the bowl (the chicken may not be cooked through).

Drizzle the remaining 1 tablespoon canola oil into the pan. Add 1 peeled and thinly sliced medium carrot, 3 finely chopped garlic cloves, and 2 teaspoons peeled and finely grated ginger. Stir-fry until the garlic is starting to brown, about 1 minute.

Stir in 8 ounces sliced white button mushrooms and 4 ounces halved snow peas. Return the chicken and any accumulated juices to the pan. Add 1 drained and rinsed (8-ounce) can sliced bamboo shoots and 1 drained and rinsed (8-ounce) can sliced water chestnuts. Stir-fry until combined. Drizzle in 1 tablespoon Shaoxing wine and scrape any browned bits from the bottom of the pan.

Step 6

Reduce the heat to medium. Re-whisk the chicken broth mixture, then pour into the pan. Toss until combined. Cover and simmer, stirring occasionally, until the sauce thickens and clings to the chicken and vegetables, 3 to 4 minutes. Taste and season with kosher salt as needed. Serve with cooked white rice.

Remove the mussels and clams from the shells and discard the shells before storing. Reheat on the stovetop over medium-low heat.

Pick any fronds from 1 medium fennel bulb and reserve for garnish. Core and finely chop the bulb (about 1 1/2 cups).

Stir in 1 cup dry white wine and simmer until the wine is reduced by about half, about 2 minutes. Stir in 1 quart fish or seafood stock, 1 (28-ounce) can diced tomatoes and their juices, and the remaining 1 1/2 teaspoons kosher salt. Increase the heat to high and bring to a boil. Reduce the heat to maintain a very lively simmer and cook for 30 minutes to reduce slightly and let the flavors meld. (This is a good time to prepare the seafood.)

Stir in 1 pound mussels and 1 pound clams. Cover and cook until most of the mussels and clams begin to open, 3 to 4 minutes. Gently stir in 1 1/2 pounds cut white fish fillets and 1 pound raw shrimp, making sure they are mostly submerged in liquid. Return to a simmer.

Gently stir again to move the fish and shrimp at the top closer to the bottom. Remove the pot from the heat. Cover and let sit for 2 minutes to let the residual heat gently finish cooking the seafood (the fish and shrimp should be opaque).

Step 7

Taste the broth and season with kosher salt as needed. Garnish with 2 tablespoons coarsely chopped fresh parsley leaves and the fennel fronds. Ladle into serving bowls, discarding any clams or mussels that have not opened. Serve with toasted or grilled sourdough on the side.

It’s not authentic, but it is delicious.

Heat 1 tablespoon neutral oil in a large skillet over medium-high heat until shimmering. Add 1 finely chopped white onion and 1 diced medium red bell pepper and cook, stirring occasionally, until the onions are translucent and slightly softened, about 4 minutes.

Add 1 pound lean ground beef and cook, breaking it up into small pieces with a wooden spoon, until cooked through and browned, 6 to 8 minutes. Stir in 2 tablespoons tomato paste and 1 (1-ounce) packet taco seasoning. Cook until fragrant and the tomato paste is slightly darkened, about 2 minutes.

Stir in 2 cups frozen corn kernels and 1 drained (7-ounce) can diced green chiles, scraping up any browned bits from the bottom of the pan. Remove the pan from the heat.

Reserve 1 cup enchilada sauce from 2 (10-ounce) cans. Stir the remaining enchilada sauce into the beef mixture. Taste and season with kosher salt as needed.

Mix 8 ounces shredded Monterey Jack and 8 ounces shredded mild cheddar cheese together in a medium bowl.

Spread 1/2 cup of the reserved enchilada sauce in the bottom of a 9x13-inch baking dish. Arrange 6 of the corn tortillas in an even layer on top (they can overlap). Dollop and spread 1/2 of 1 (16-ounce) can refried beans (generous 3/4 cup) evenly over the tortillas. Spread half of the beef mixture (about 3 cups) over the beans, then sprinkle with 1/3 of the cheeses (1 1/3 cups). Repeat layering the tortillas, refried beans, beef mixture, and cheeses. Top with the remaining 6 tortillas. Spread the remaining 1/2 cup enchilada sauce over the tortillas, then sprinkle with the remaining cheese.

Step 8

Place the baking dish on a rimmed baking sheet. Bake until the cheeses are melted and the filling is bubbling, 30 to 35 minutes. Let cool for 10 minutes before serving. Serve with desired toppings.

Ok I’ve been making this for the firehouse for over thirty years, Dallas recipe, I use ranch beans, and make a goop of rotel and cream of chicken to spread on bottom and top I try for two beef layers , then cheese top great leftover 

I made a non-meat version by subbing Impossible Ground &#39;Beef&#39; and it was delicious.

Sounds good but I recently made my own version and called it TexMex Lasagna.  Meat sauce was mix of ground beef, de skinned and crumbled chorizo, diced tomatoes, tomato sauce, garlic, AND ground chipotle.  Used corn based lasagna (Barillo) instead.  Also added charred poblano peppers, black beans, and corn. Threw in some Queso cheese to sub for ricotta or cottage.  Topped with shredded cheddar.

If I made this, regardless of how tasty it was, and called it Mexican anything - I would be sleeping in the garage that night !! Looks good - but I will have to rename it.
