These roll-ups filled with spinach and lemon ricotta and topped with melty mozzarella are WAY easier to make than lasagna. Plus, everyone get their own perfect serving. (No more fighting for the edges!)

Easy Spinach Lasagna Rolls

olive oil

onion, chopped

Kosher salt

black pepper

garlic,

tomato paste

tomatoes

Cooking spray

lasagna noodles

(16-oz.) container ricotta

(10-oz.) box frozen spinach, thawed, wrung out, and chopped

c. Parmesan,

basil,

lemon

c. marinara sauce

c. mozzarella

How often do you eat pasta during the week?

Very tasty, however the amount of cheese stuffing and sauce is a little less than I'd like.  I planned to do a double recipe and had only enough sauce and cheese filling to do a large baking pan and four extra rolls.  I had leftover noodles, about 5. (However I like alot of stuffing and cheese) Also the cheese on the topping melted and fell to the sides.  That's prob my fault I left a tiny amount of room to easily dish single rolls.  

I really like how easy it is to serve and how easy it is to divide up for lunches and stuff.  My eight year old who is a picky eater loved it.  Will most likely make it again.  Was fun and easy.

Mushroom Kale Lasagna Rolls are one of the tastiest ways to enjoy kale! They are quick, easy and perfectly portioned.

Mushroom Kale Lasagna Rolls

9 oz dry lasagna noodles, cooked

marinara sauce

kale (stems removed, chopped fine)

oz mushrooms (chopped fine)

garlic (chopped)

oz part skim ricotta cheese (I like Polly-o)

Parmesan cheese

egg (whisked)

salt and fresh pepper

oz 10 tbsp part-skim mozzarella cheese, shredded

Preheat oven to 350F.

Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place kale in a food processor and pulse a few times until chopped.

In a large skillet, heat oil over medium heat. Add garlic and sauté until golden, about a minute. Add kale, salt and pepper and sauté about 5 minutes.

Add mushrooms to the pan, cook until soft, an additional 5-6 minutes. Adjust salt and pepper, to taste.

Combine cooked kale, mushrooms, ricotta, Parmesan cheese, egg, salt and pepper in a medium bowl. Place a piece of wax paper on the counter and lay out cooked lasagna noodles. Make sure noodles are dry.

Take 1/3 cup of mushroom kale mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle 1 cup of sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, until cheese melts.

Makes 10 rolls. Serve with extra sauce on the side.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle remaining sauce over the noodles and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

To serve, ladle a little sauce on the plate and top with lasagna roll.
