Spring Salad With Fruit, Feta, and Pecans

SALAD INGREDIENTS:

c spring mix greens, washed and rinsed well

strawberries,

c crumbled Feta cheese

c chopped pecans

RASPBERRY VINAIGRETTE

raspberry preserves

Tbsp balsamic vinegar

Tbsp extra virgin olive oil

lemon

Spring Detox Cauliflower Salad

chickpeas,

chili powder, salt, and pepper

cauliflower,

apple, sliced thin

shallot, sliced thin

parsley and mint, chopped

avocados,

mustard

honey

olive oil

water

juice and zest of one lime

salt and pepper,

Chickpeas

Preheat oven to 400 degrees. Place chickpeas on a baking sheet lined with parchment. Drizzle with olive oil and sprinkle with chili powder, salt, and pepper to taste. Roast for 20-30 minutes until crispy and browned.

Cauliflower Prep

Working in batches, run the cauliflower florets through a food processor until you get &#8220;rice&#8221; &#8211; it should take about 20-30 pulses.

Dressing

Shake up all the ingredients in a jar, or whisk together. Taste and adjust.

Assembly

Toss everything together. That&#8217;s it!

I don't know if I need a spring detox juuuuuuust yet.

This Cauliflower Salad. It will be perfect for meals at work because I find myself constantly getting burritos from the taco truck that sits outside haha. This salad will be my willpower and distraction.

this is, ahem, yummy! i didn't want to pay $1.70 for a single avocado, but i didn't miss it. the chickpeas didn't quite crisp as much as i would've liked in 30 min., but they were still a nice addition. thanks for this easy, light, quick recipe!

Cauliflower Detox Salad

This salad combines sweet carrots with the liquorice bite of a slightly acidic dressing and creamy blue cheese - a simple lunch or side dish

Warm pearl barley & roasted carrot salad with dill vinaigrette

carrots

banana shallots

garlic

fennel seeds

pearl barley

parsley

pack dill

blue cheese

fennel

tbsp white wine vinegar

Heat oven to 180C/160C fan/gas 4. Put the sliced carrots in a large roasting tin with the shallots, garlic and fennel seeds. Drizzle over the oil, toss everything together and season. Roast for 35-40 mins until everything has caramelised and the carrots are tender.

Meanwhile, boil the pearl barley in a large pan of salted water until al dente, about 30 mins. Make the dressing by whisking all the ingredients together with some seasoning. Remove the carrots from the oven.

Strain the pearl barley and toss through the dressing, carrots, dill, parsley and half the cheese. Finish with a few of the fennel tops and the remaining cheese. Serve warm or cold with a slice or two of warm buttered soda bread, if you like.

Place arugula into large serving plate. Top with roasted carrots (either whole or chopped). Add feta cheese and crumbled feta on top.

In a small mixing bowl, stir to combine olive oil, lemon juice, salt and pepper. Pour dressing over the salad and toss to combine. 

This looks so yummy, we are always looking for more ways to eat our veggies! I can't wait to try it!

This Creamy Cucumber Salad is a refreshing addition to any meal!&nbsp;

Creamy Cucumber Salad

cucumber

grape tomatoes tomatoes

onion

mayonnaise

sour cream

black pepper

salt

vinegar

white granulated sugar

In a large bowl combine cucumber, tomato and onion.  Whisk together the mayonnaise, sour cream, black pepper, salt, vinegar and sugar.  Combine with vegetables. Refrigerate for 3 to 4 hours to let flavors marry before serving.  Makes about 4 cups.

The perfect side dish for spring, filled with sweet peas, asparagus, fresh herbs and goat cheese!

Creamy SpringTime Farro Salad

Bob’s Red Mill Farro

asparagus,

sweet peas

goat cheese, crumbled

almonds

garlic clove,

thyme

white balsamic vinegar

salt & pepper

Add Farro and water to a large pot. Bring to a boil, then reduce heat and let simmer for 30 minutes. Drain out any excess liquid.

Fill another medium size pot with water. Bring to a boil. Add asparagus and sweet peas to pot, cook vegetables for 3-4 minutes. Remove and immediate add to a large bowl filled with water and ice to blanch the vegetables and stop the cooking process. Drain out water. Set aside.

For the dressing: in a small bowl add garlic clove, fresh thyme, white balsamic vinegar, olive oil, ground mustard, salt and pepper to taste. Whisk until combined.

In a large serving bowl, add Farro, asparagus, peas, crumbled goat cheese, sliced almonds and dressing. Toss to combine everything and serve.

I almost never leave comments but I just made this yummy grain salad and I needed to say how much I enjoyed  this. The combination was delicious and the dressing was a perfect addition. I’m going to check all your recipes!

A wonderful way to use seasonal spring vegetables to make an elegant salad that goes with just about everything! This salad combines asparagus, snow peas, peas, cos (romaine). We then add goats cheese for creamy and tangy pops to take it up another notch. You could easily substitute with feta (preferably soft Danish Feta) or if you prefer milder cheese, dollops of fresh mozzarella, bocconcini or fresh ricotta would work beautifully. Or leave the cheese out altogether if you&#039;re being truly virtuous!

Spring Salad with Goats Cheese

(24 spears) asparagus (,

head baby gem

peas ((Note 3))

goats cheese

(loosely packed) fresh mint leaves, (, roughly torn)

tbsp (30 milliliters) lemon juice

tbsp (90 milliliters) extra virgin olive oil

salt and pepper

Bring a large pot of water to the boil.

Add snow peas to pot, boil for 1 1/2 minutes.

Add the asparagus spears, boil for another 1 1/2 minutes.

Add frozen peas, and boil for another 30 seconds or until the water just returns to a simmer, and peas turn bright green.

Immediately drain, refresh vegetables under cold running water until cooled to stop cooking process.

Remove the asparagus and snow peas, blot with paper towels to dry. Leave peas in colander to drain, giving them a toss now and then to help them dry. (It&#039;s important to dry vegetables, otherwise it dilutes the dressing and it won&#039;t stick. You could use a salad spinner with care, o just let them naturally dry which is easier.)

Split the larger baby cos leaves down the middle, use the small ones whole.

Cut asparagus stems in half on a slight angle.

Shake Dressing ingredients in a jar.

Combine vegetables in a bowl, dress and toss.

Arrange salad on a platter (Note 5). Top with small chunks of goats cheese. Serve immediately!

Spring Salad Recipe

Finely chop 1/3 of the herbs. Whisk together with olive oil, lemon juice, salt and pepper.

Salad

Place clean and dry lettuces and greens in a bowl. Toss with a couple tablespoons of the dressing and a pinch of salt (optional). Top the greens with pea shoots or peas, fennel, radishes, turnip and herbs. 

Drizzle with more dressing and a grind of pepper. Add any other enhancements and serve!

Italian Style Rice Salad

310 mls Cold water

tbsp Olive oil

lemon (juice)

garlic puree

Sundried Tomatoes (Chopped)

Orange Pepper (Diced)

½ Cucumber (Diced)

Red Onion (Diced)

g Sweetcorn (¾ cup) (we used tinned)

60 g Green or/and Black Olives (½ cup)

tbsp Pine Nuts

tbsp Fresh Basil (chopped)

tbsp Fresh Parsley (chopped)

tin Tuna (drained)

Mozzarella (Balls or chopped)

Rice

Cook rice before to give time for it to cool off. Follow instructions in notes below to make sure you cook the rice correctly. If adding Pancetta, cook that off in the sundried tomato oil and allow time to cool.

Make the dressing by mixing all the Italian Dressing ingredients together.

Put cooked rice in a mixing bowl and add all the chopped Italian Salad ingredients. Pour the dressing over and mix all in together.

Serve

Serve up in a large bowl or large plate with more fresh herbs.
