This easy sweet potato and chickpea curry uses only a few storecupboard staples and is perfect for a laid-back supper. This is designed to be a low cost recipe.

Sweet potato and chickpea curry

This is a very simple, hearty one pot with a lovely bit of heat &#8211; Mexican made easy!

One Pot Cheesy Black Bean Enchiladas

butternut squash, peeled, seeds removed and cut into 2cm cubes

Tuna pasta bake

Boil 600g rigatoni for 2 mins less time than stated on the pack.

To make the sauce, melt 50g butter in a saucepan and stir in 50g plain flour.

Cook for 1 min, then gradually stir in 600ml milk to make a thick white sauce.

Remove from the heat and stir in all but a handful of the 250g grated cheddar.

Drain the pasta, mix with the white sauce, two 160g drained cans tuna, one 330g drained can sweetcorn and a large handful of chopped parsley, then season.

Transfer to a baking dish and top with the rest of the grated cheddar.

Bake for 15-20 mins until the cheese on top is golden and starting to brown.

This simple ragù imitates an Italian dish that’s usually made with fresh beef and tomatoes, simmered for hours until the meat falls apart in delicate fronds at the touch of a fork. Stewed steak in gravy perfectly replicates the slow-cooked tender meat of its grander cousin. 

I made both versions side by side to test this recipe, and all of the people I gave them to in blind taste tests preferred this version! The lentils aren’t mandatory, but they add extra texture and protein, and make the meal go further; ideal if you’re meal prepping for the freezer, or feeding a crowd.

These easy, storecupboard sweetcorn pancakes are great for a late or weekend breakfast, or even an after school snack

Sweetcorn pancakes

First turn the grill on high. If using fresh corn, remove the husk and slice the kernels from the cob with a large sharp knife, then cook them in a pan of boiling water for 5 minutes. Drain and leave to cool while you whisk the eggs, milk and butter together. Whisk in the flour and a large pinch of salt until smooth, then mix in the corn (fresh or canned) and the spring onions.

Put the tomatoes cut-side up on a large baking tray, drizzle with olive oil and season with salt and pepper. Lay the bacon next to the tomatoes in a single file on the tray. Grill for 8–10 minutes until the tomatoes have softened and the bacon is crispy, turning the rashers over at half time.

While the bacon’s crisping up, heat the sunflower oil in a large frying pan. Add 4 large spoonfuls of the batter and fry for 1-2 minutes on each side until the pancakes are puffed up and golden. Lift out on to a plate lined with kitchen paper and cook the remaining 4 pancakes. Bring to the table with a bottle of chilli sauce.

Mary Berry's tomato soup is quick, easy and delicious. In fact, it is one of her favourite family recipes, as she always have the ingredients in the cupboard. With no onions to chop or tomatoes to skin, it really is ready in ten minutes!

Ten-minute tomato soup

500 milliliters/18fl oz chicken or vegetable stock

tbsp caster sugar

150 milliliters/5fl oz full-fat milk

150 milliliters/5fl oz double cream

This no-yeast bread is made using any plain flour you have at home. It’s slightly denser than a yeasted bread, but very satisfying spread with butter or dunked in hot soup

350 milliliters-400 milliliters natural yogurt or buttermilk

Heat the oven to 200C/180C fan/gas 6 and line a 900g loaf tin with baking parchment. Put a flat baking sheet in the oven to get really hot.

Mix the flour, bicarb, salt and sugar in a large bowl until evenly distributed. Make a well in the centre and tip in the yogurt. Bring together to make a slightly sticky dough.

Lightly dust the dough with extra flour and form into a fat log, around the same size as the tin. Put in the tin. Dip a wooden spoon in flour and make a line along the centre. Top with a small handful of oats or seeds, if you like.
