Gorgeous summer strawberry spinach salad topped with avocado, feta, red onion, toasted almonds, pistachios and drizzled with a flavorful strawberry balsamic vinaigrette. The best ever strawberry salad recipe that&#039;s sweet, tangy, crunchy, creamy and the perfect lunch or easy side dish!

Summer Strawberry Spinach Salad with Avocado

For the salad:

(5 ounces) organic spinach

strawberries, halved (about 2 cups halved strawberries)

avocado,

red onion, thinly sliced

feta crumbles

almonds

pistachios

For the balsamic strawberry vinaigrette:

balsamic vinegar

garlic clove, grated or finely minced

dijon mustard

strawberry jam (or jam of choice)

salt and pepper, to taste

In a mason jar or small bowl, add all of the dressing ingredients. Shake or mix well to combine. Taste and add additional salt/pepper, if necessary.

Toast the almonds on the stovetop: add the almonds to a pan and place over medium heat, stirring occasionally for 2-5 minutes until almonds are slightly golden brown. Remove from heat and allow to cool.

Add spinach to a large bowl, layer on the strawberries, avocado slices, red onion, feta, toasted almonds, and chopped pistachios. Feel free to add dressing now or set it out for individual servings. Top salad bowls with extra toasted almonds and drizzle each bowl with 1/4 of the dressing. Serves 4.

This Strawberry Spinach Salad With Chicken is a super easy protein-packed meal complete with fresh strawberries and a 4-ingredient dressing.

Strawberry Spinach Salad with Chicken

chicken cutlets (or 2 chicken breasts sliced in half lengthwise)

Salt & pepper,

oz container baby spinach (about 6 cups)

lb strawberries, thinly sliced

feta

tbsp red wine vinegar (balsamic also works)

tbsp honey

tsp dijon mustard

salt & pepper

Heat olive oil in a large skillet over med-high heat. Alternatively, preheat the BBQ to 425 F. Season chicken with salt &amp; pepper, then add to the pan, sauteeing for 6-7 minutes per side. If grilling, grill for 5 minutes per side. Remove from heat and set aside.

Mix together ingredients under the dressing heading. Once chicken has rested for 5 minutes, slice chicken up against the grain.

Add spinach to a large bowl, along with strawberries, red onion and nuts.

When salad is ready to serve, toss with dressing, then divide among 4 salad bowls. Top with sliced chicken and goat cheese. Serve and enjoy!

STRAWBERRY SPINACH SALAD WITH CHICKEN | PERFECT summer recipe!

An easy, beautiful strawberry salad recipe to make all summer long. Arugula greens, feta cheese, cucumber, cherry tomatoes and strawberries in a naturally-sweet vinaigrette with fresh strawberries and balsamic vinegar.

Strawberry Salad with Arugula

extra virgin olive oil

shallot

lemon juice

honey

salt

arugula

Italian parsley leaves (tender stems are okay) or basil leaves

strawberries (hulled and quartered)

(seedless)

cherry tomatoes (any color) (sliced in half)

¼ cup sliced red onion

feta cheese

Combine all ingredients in a blender or small food processor until smooth and creamy. Dressing will keep refrigerated up to 5 days.

Make the dressing

Put the arugula in a large salad bowl or a large serving platter. Top with the remaining ingredients and drizzle with 3 tablespoons of the dressing. Toss together gently. Serve with additional dressing on the side.

Strawberry Spinach Salad with Lemon Vinaigrette

Make the Vinaigrette: Add all the ingredients to a mason jar with lid. Seal tightly and shake until combined. Taste and adjust the seasoning to your preference. This dressing can be stored in the refrigerator for up to 2 weeks.

Assemble the Salad: On a serving platter, add the spinach. Top with the bacon, toasted almonds, red onion, strawberries, and cheese.

Serve: Shake up the dressing and serve alongside the salad.

This was so simple &amp; amazing! I had no almonds, so I used pepitas &amp; as well as blueberry chèvre! Definitely a keeper!

Best Strawberry Spinach Salad with Balsamic Dressing

strawberries (hulled and sliced in halves (quarters))

oz goat or feta cheese (crumbled)

red onion (thinly sliced)

pecans

11 oz box baby spinach (pre-washed)

maple syrup

soy sauce (I used Bragg's liquid aminos)

Preheat ceramic non-stick medium skillet on medium heat and add pecans. Toast for about 3 minutes or until fragrant, stirring frequently. Remove from heat immediately to prevent nuts from burning.

In a small bowl, combine olive oil, maple syrup, balsamic vinegar, soy sauce and whisk with a fork. Set aside.

In a large bowl, add spinach and top with strawberries, cheese, red onion and toasted pecans.

Drizzle dressing on top and stir gently until well combined. Serve immediately.

Truly delicious!  And so simple.  Added blueberries.  Made dressing with raspberry vinegar and it was sublime !

I made the spinach strawberry salad tonight and used fresh blueberries instead of strawberries and used blue cheese crumbles. It was one of the best salads and your dressing recipe was fantastic. I used a raspberry balsamic. Just delicious!

Lemon Basil Dressing

For the dried cranberries:

Combine dried cranberries and water in a small microwave-safe bowl or cup. Place in microwave and cook on high power for 30 seconds. Remove from microwave, stir with a fork and set aside to cool, uncovered. (If you don&#039;t have a microwave, simply pour 2 teaspoons of boiling hot water into the cranberries and stir. Cover with plastic wrap until ready to use.)

Place a piece of foil, approximately 1½ feet long, on a work surface. Spray with cooking spray or rub with some oil and a paper towel.

Combine honey, chili powder and salt in a small bowl. Set aside

Melt butter in a small sauté pan over medium heat. Add pistachios and stir for 1-2 minutes or until pistachios smell fragrant.

Add the honey mixture and stir continuously for 2-3 minutes until nuts are golden honey is reduced and coating the nuts.

Remove from heat and transfer pistachios to the prepared foil. Spread apart as much as possible with the back of a spoon or rubber spatula.

These pistachios can be prepared a few days in advance. After cooling store in an airtight container.

For the Sweet and Spicy Pistachios:

In a large serving bowl, toss together spinach, ¾ of the strawberries, ¾ of the cucumbers and all of the red onion. Drizzle with 2-3 tablespoons of the Lemon Basil Dressing and toss again. 

Top salad with remaining strawberries, cucumbers, the plumped cranberries and a generous sprinkle of the Sweet and Spicy Pistachios. Serve immediately with additional dressing on the side.

I made the strawberry and spinach salad for a family dinner last weekend. Loved making the cucumber flowers! The salad and dressing were delicious, but had trouble with the pistachios. They came out too sticky, so I just used lightly salted pistachios instead. I made half a recipe of the pistachios , because I didn't need a large amount. Maybe that was the problem.
