Cook green beans in boiling salted water until tender, then drain and cool under running water. Set aside.

Put olive oil, shallots, garlic cloves and some salt in a frying pan, then cook gently for about 8 mins until soft but not brown. Tip in the beans and a grind of pepper, toss well, then warm through. Finish with a squeeze of lemon and toasted flaked almonds.

This tart combines juicy plums, a soft, almond flavoured filling and a buttery base to make for a beautiful treat.

Sticky plum and almond tart

250 g shortcrust pastry

150 g butter,

150 g golden caster sugar

essential Waitrose Eggs

75 g ground almonds

75 g essential Waitrose self-raising flour

½ tsp baking powder

tsp vanilla extract

400 g essential Waitrose Home Ripening Plums, stoned and quartered

tbsp flaked almonds

Step 1

Preheat the oven to 180ºC, gas mark 4. Roll out the pastry thinly on a floured surface and use to line a 23cm deep, loose-bottomed tart tin. Chill for 5 minutes.

Step 2

Meanwhile, place the butter, sugar, eggs, ground almonds, flour, baking powder and vanilla extract in a large bowl and whisk until well blended.

Step 3

Spoon the filling into the tart case then press the plums evenly into the mixture (they will sink into the centre as the tart bakes). Scatter over the flaked almonds and bake for 40 –45 minutes until risen and golden brown.

Step 4

Melt the apricot jam with 1 tbsp water in a small pan. Brush over the top of the tart and leave to cool. Cut into slices and serve.

Transfer

When they&#39;re done, immediately transfer the almonds to a plate, spreading them in a single layer, to stop the cooking process and prevent the almonds from becoming scorched.

Stove Top Method:

Cook

Spread sliced or slivered almonds in a single layer on a microwave-safe plate. Microwave on full power (100%) for 1 minute and stir. Continue to microwave in 30 second intervals, stirring each time, until almonds are desired color. Microwave ovens tend to heat unevenly. It’s essential to stir the almonds frequently so they brown evenly and don’t scorch.

Transfer to another plate to cool, arranged in a single layer.

Microwave Method:

Preheat

Preheat oven to 350ºF. Line a rimmed baking pan with parchment paper or foil, if desired.

Spread

Spread almonds in a single layer on the prepared pan.

Bake

Bake slivered or sliced almonds for 7 to 8 minutes, stirring every few minutes, or until golden brown. Whole almonds will take longer, about 15 minutes total. Stir once at 10 minutes; then stir again after 5 more minutes. Bake a few more minutes if necessary but watch them closely.

Cool

Immediately transfer almonds to a plate to cool, in a single layer. Don't leave them in the hot pan because they will continue to brown.
