Chicken, sweet potato and pesto tray bake

chicken thighs

600 g (1lb 5 ounces) sweet potatoes, peeled and chopped

peppers, deseeded and chopped

Spiced Chicken Tray Bake

250 g (9 ounces) cauliflower,

200 g (7 ounces) swede,

tsp. each cumin seeds, chilli flakes and curry powder

turmeric

vegetable oil

oregano leaves

mL (31⁄2fl oz) hot chicken stock

Salmon infused with an assertive lemon garlic marinade cooks in just 11 minutes alongside parmesan asparagus and blistered cherry tomatoes. No stove splatter - yay! Green beans would also work great, or thin broccolini stems (and the florets go crunchy!). Shower with parmesan and squeeze of lemon for an easy finishing touch.

Lemon garlic salmon tray bake - easy & healthy!

salmon

tsp lemon zest ((1 lemon))

lemon juice

tbsp extra virgin olive oil

tsp dijon mustard ((Note 2))

garlic

tsp cooking salt / kosher salt

tsp black pepper

asparagus

200 grams/ 7 oz cherry tomatoes ((or grape tomatoes, 1 Aussie punnet))

tsp extra virgin olive oil

salt and pepper

Olive oil spray

Parmesan (, finely grated)

Lemon wedges (, optional)

Parsley (, finely chopped, optional)

Lemon garlic paste - Mix the marinade ingredients in a small bowl. Slather onto the top and sides of the salmon. If time permits, marinade for 1 hour. Otherwise, proceed with recipe.

Preheat oven grill / broiler to 280°C/525°F or as high as yours goes. Place the oven shelf 20 cm /8&quot; from the heat source.

Prepare tray - Toss the asparagus and cherry tomatoes with the olive oil, salt and pepper. Spread out on a large tray then clear space for the salmon. Place salmon on the tray leaving a bit of space between each. Spray surface of salmon with oil.

Cook - Grill/broil for 11 minutes or until the salmon is done - the flesh should flake, the internal temperature should be 50°C/122°F (Note 5).

Serve - Transfer salmon and vegetables to plate. Grate parmesan over the vegetables. Squeeze lemon juice over the salmon, sprinkle with parsley. Eat!

Caramelised cubes of salmon heavily seasoned with a Fajita spice blend, colourful fajita vegetables and a pile of steamy warm tortillas, just add sliced avocado and make a simple taco sauce while they&#39;re in the oven. I used my new Creamy Jalapeño Sauce but if that&#39;s out of reach or you&#39;re worried about spiciness (it&#39;s got a little zing), either use my Instant Pink Taco Sauce or just plain sour cream.

12 Minute Baked Salmon Fajitas

/ 1.2lb skinless salmon

tsp smoked paprika ((or regular paprika))

tsp EACH garlic, onion, cumin powder

tsp cooking salt / kosher salt ((halve

Creamy Jalapeno Sauce

Pink Taco Sauce ((2 ingredients!))

Sour cream

corn

avocado (, sliced)

tbsp coriander

Lime wedges (, optional)

Toss Vegetable ingredients on a tray. Toss salmon with Fajita Seasoning, spread on separate tray lined with wrinkled foil. Bake 12 minutes at 240°C/465°F (220°C fan) along with foil wrapped tortillas. Make sauce. Serve!

ABBREVIATED RECIPE

Preheat oven to 240°C/465°F (220°C fan-forced).

Crinkled foil trick for baking fish – Lightly scrunch up foil, then gently unfold it so it stays wrinkled. Lots of little pointing bits = good! The wrinkles lift the fish slightly, preventing sticking and soggy undersides – clever Japanese fish-cooking trick (thanks mum!). Place on one side of the tray and fold the edges over the rim to secure. Repeat with another sheet to cover the whole tray.

Fajita flavour fish - Mix the Fajita seasoning ingredients in a bowl, it should be like a thin paste. Add fish and toss to coat. Spread out on the foil so the salmon is not touching each other.

Toss veg - On a separate large tray, toss capsicum and onion with the oil, garlic and salt. Spread it out in a single layer.

Wrap stack of tortillas in foil (make 2 parcels).

Bake everything - Put the salmon on the top shelf, vegetables on the middle shelf and tortillas on the floor of the oven. Bake 12 minutes, or until the salmon flakes (don&#39;t turn or toss).

Sauce - Meanwhile, put the sauce ingredients in a small jug and blitz with stick blender until smooth.

FULL RECIPE

Lay everything out - Transfer the salmon and vegetable onto a serving platter, pour all tray juices over. Place warmed tortillas, sauce, avocado, lime wedges and coriander on the side.

Making a fajita - Take a warm tortilla. Stuff with a little vegetables, place 2 pieces of salmon on then flake into large chucks. Tuck in avocado, drizzle with sauce, lime juice, sprinkle with coriander, devour!

SERVING

Made this for supper tonite. Fantastic flavor.  Made the jalapeño sauce also. Really good. Hubby loved it.  And so quick. 
After removing the salmon from the oven I slid the veggies under the broiler for a bit of char.  Another awesome recipe  !!  Can’t wait to serve it to company.

This looks like so much fun, and it is so beautifully explained and pictured, that I can already taste it by just looking at it. I normally don't give stars before trying the recipe, but in this case, I will make an exception. Salmon Fajitas...are up my alley. I have to use gf-tortillas, but it will taste great. I love salmon in every form known to man. I think in a former life I was a bear and lived in Canada. :)
