Drain

Drain the grated cucumber by pressing down on it over fine mesh sieve over a bowl. Alternatively, you could use a nut milk bag or cheesecloth and gently squeeze until all the moisture is out.

Mix all the ingredients in a large mixing bowl until everything is well combined.

Rest

Let the mixture rest for a few minutes for the flavors to meld together. Taste test to see if you need to add any extra herbs, lemon juice, or salt.

Serve

Serve immediately or let it chill in the refrigerator for up to 4 days.

How to Make Tzatziki

Squeeze the juice out of the cucumber. I just did this with my hands over the sink with a strainer underneath to catch any rogue pieces that fall. You can also use a clean kitchen towel to squeeze it out.

Add the cucumber, Greek yogurt, mince garlic, olive oil, lemon juice, dill and salt to a medium mixing bowl.

Stir until well-combined. Heads up: those cucumber pieces will stick together, especially after being squeezed out. Use your spoon or spatula to break those clumps up.

Serve with sliced veggies, pita bread, pita chips. It also goes great on any chicken, fish, kabobs, pita sandwiches, etc.

Refrigerate leftovers for up to 4 days.

Homemade Tzatziki Sauce Recipe

Place a fine mesh strainer on top of a smaller bowl (to catch the water as it drains). Be sure that the strainer does not touch the bottom of the bowl and that there is at least 1-2 inches between them.

Put a coffee filter on top of the strainer.

Mix 1 cup Greek yogurt and ¼ cup sour cream together. Carefully scoop it onto the coffee filter/strainer and place it in the fridge overnight or for at least 4 hours.

To strain the yogurt/sour cream:

De-seed and grate your cucumber. Put it in a colander over a bowl and sprinkle with salt.

Let it sit on the counter for at least 2 hours, occasionally pushing out the excess water.

To strain the cucumber:

When you’re ready to make the sauce: squeeze out all excess water from cucumber by pushing it out while in the colander. Then get some thick paper towels, put cucumber in them and ring it out.

Put yogurt mixture in a clean, dry mixing bowl. Add all ingredients except cucumber. Once thoroughly mixed add cucumber and refrigerate for at least one hour to let flavors blend.

Serve with your favorite Mediterranean food like falafel or gyros!

Easy Homemade Tzatziki Sauce Recipe

Use tzatziki sauce to put a fresh twist on grilled meats and vegetables, boost a pasta dish, or make sandwiches into something special.

½ Tbs lemon juice

plain Greek yogurt

The cucumber should be grated with a cheese grater, then strained of it's juices. To strain it, squeeze it really tight by the fistful letting the water run through your fingers or use a cheesecloth.

Once as much liquid as possible is out, combine the strained and chopped cucumber with all other ingredients.

Mix everything together with a spoon, and taste. Add more salt if needed.

Refrigerate for 1 hour + before serving to let the flavors meld.

Tzatziki Recipe

Peel the cucumber, cut it in half, then scoop out the seeds with a spoon. Grate the cucumber using a box grater, then place the shreds in a fine mesh strainer and squeeze out as much liquid as possible. Sprinkle with kosher salt, then let stand for at least 10 minutes to drain any remaining water. Squeeze once more to drain.

Mince 1 clove garlic and chop 1 tablespoon fresh dill.

When the cucumber is ready, mix cucumber, garlic, dill, 18 ounces Greek yogurt, 1 ½ tablespoons white wine vinegar, 1 tablespoon olive oil, ¼ teaspoon kosher salt, and a few grinds of fresh ground black pepper. Refrigerate for at least 1 to 2 hours so the flavors can marry. Keeps up to 1 week in the refrigerator.

To serve, drizzle with olive oil; if desired, garnish with olives and a sprig of dill. Serve with pita, crackers, or vegetables.

Tzatziki Sauce Recipe

Peel and finely dice the cucumber, or you can grate on the large holes of a box grater if preferred. Transfer to a bowl lined with a cheesecloth* and sprinkle cucumbers with 1/2 tsp salt and give them a light stir. Set aside for the cucumbers to release their juice while you prep the remaining ingredients.

Prep the Cucumber:

In a large mixing bowl, combine plain Greek yogurt, lemon juice, grated garlic cloves, chopped dill, extra virgin olive oil, salt and pepper, or season to taste.

Use the cheesecloth to squeeze out as much juice as you can from your chopped cucumber. You&#39;ll be surprised how much juice comes out. Discard the juice and add squeezed cucumber to your mixing bowl.

Stir everything to combine and season to taste with more salt and pepper if desired. Cover and refrigerate for at least 1 hour, or until ready to serve. I love serving drizzled with a little more extra virgin olive oil.

Tzatziki Sauce

My easy recipe for Tzatziki sauce made with Greek yogurt, cucumbers and garlic. I add this to souvlakis, gyros or grilled pita chips!

Skinny Tzatziki

oz fat-free Greek yogurt (use full fat for Keto)

garlic (crushed)

chives (chopped)

kosher salt and fresh pepper

Strain the yogurt using a metal strainer or a coffee filter for a few hours to remove as much liquid as possible. Set aside.

Scoop seeds out of the cucumber with a small spoon. Place cucumber in a mini food processor or grate with a box cheese grater. Drain the liquid from the  cucumber in a metal strainer and sprinkle with a little salt (this helps release the liquid). You may want to use the back of a spoon to help squeeze out any excess liquid.

Combine strained cucumber, garlic, yogurt, salt, pepper, lemon juice, dill, chives and refrigerate at least 1 hour before serving.

Makes about 2 cups. Store in refrigerator for about a week.

I love this "sauce"! I tried it in several versions, but this original, with Greek style yogurt is definitely the best for me. Here in Croatia we have a habit of making a version ov tzatziki which uses sour cream instead of yogurt and onions instead of garlic.
