The secret to vegan taco meat that pleases everyone? This walnut taco meat is beyond delicious in tacos, salads, &amp; more.

Vegan Walnut Taco Meat (Fast &amp; Easy!)

whole walnuts*

baby bella (cremini) mushrooms

soy sauce

ketchup

cumin

each smoked paprika**, onion powder, and garlic powder

salt

olive oil, divided

Roughly chop the mushrooms. Place them in a large food processor, then add the walnuts and tamari, ketchup, cumin, spices, and salt. Pulse gently multiple times until everything is evenly chopped, being careful not to over process (or it will be too mushy). If you don&#8217;t have a food processor, use a chef&#8217;s knife to roughly chop everything and place in a bowl with the spices. 

Heat 1 tablespoon of the olive oil in a non-stick skillet over medium low heat. Cook for 7 to 10 minutes, stirring until it releases all of its liquid then becomes dry and browned. Stir in the remaining 1 tablespoon olive oil. Taste and add more salt to taste if desired. Store refrigerated for 1 week or freeze on a sheet pan, then place in a sealed container and freeze up to 3 months. 

Thank goodness my husband mistakenly bought two pounds of fresh mushrooms instead of a two cans of mushrooms or I may not have discovered this recipe. We love it! Definitely the best taco “meat” EVER! 🌮

Meatless Monday just got a lot more delicious! This Walnut Taco Meat is made with only 7 ingredients and is a vegan alternative to your favorite taco meat recipe.

Walnut Taco Meat

walnuts

tsp smoked paprika

garlic powder

tsp cumin

soy sauce (or more as needed)

olive oil

shiitake mushrooms (diced)

Add walnuts, paprika, garlic, and cumin to your food processor then pulse for 5 seconds. With the motor still running, pour the soy sauce in through the top and pulse until mixture resembles meat (be careful not to over-mix -- the mixture should come together in 20 seconds or so).

Next, heat the oil in a large skillet over medium, then add the mushrooms and salt and sauté for 3-5 minutes until the mushrooms are soft. Then, add the walnut mixture to the skillet and stir to combine until the walnuts are warm. Add more salt to taste and enjoy!

Walnut meat tacos can be served raw or heated for a healthy meaty alternative to lentils or vegetables. With only a few ingredients, transform walnuts into delicious taco meat in a matter of minutes.

Vegan Walnut Meat Tacos

raw organic walnuts

julienned sun-dried tomatoes

tomato paste

chipotle chili peppers

vegan taco seasoning

Corn or flour tortillas

Boil 2 cups of water and soak 1 cup of sun-dried tomatoes for 10 minutes until they are soft.

Then, drain the water and place them in the base of the food processor with the large blade and process on high until they are chopped into little pieces.

Next, add the raw walnuts and the remaining ingredients.

At this point, you must PULSE the ingredients rather than process or high.

As a result, the walnut meat should look a similar consistency to taco meat.

You don&#39;t, however, want it to be too mushy by over-processing. 

Once processed, transfer the walnut meat to a bowl, and at this point, it can be served as raw walnut meat tacos, or, you can heat it in a pan for crunchier hot taco meat

In order to heat the walnut meat, use a large non-stick skillet and cook over medium-low temperature until the taco meat is heated through (about 10 minutes)

Heat the corn or flour tortilla in a skillet, microwave, or oven.

For an added WOW level, put the walnut taco meat and other toppings on one side of the tortilla, fold it over, and cook it in the pan, making a hot, crunchy exterior taco shell.

Vegan Walnut Taco Meat (Raw or Cooked)

Mushroom Chorizo Tacos are a quick and delicious taco recipe that is easy to make with very few ingredients; you won&#x27;t believe how tasty they are!

Mushroom Chorizo Tacos

baby portobello mushrooms (or mushrooms of choice)

tomatoes

garlic

taco seasoning

Tablespoons adobo sauce

water (for cooking)

organic corn tortillas

skinny pico de gallo (store bought or homemade)

guacamole (store bought

pickled red onion

cilantro

avocado (skin and pit removed)

lime juice

water

cilantro (1/2 cup)

Salt and pepper

Pre-heat oven to 400 degrees

Place tortillas on a baking sheet with a silicone baking mat or parchment paper

Make sure tortillas are not touching each other

Cook for 5 minutes on each side

*Variation: For a firmer corn tortilla (a tostada), cook for 10 minutes on each side. 

OPTION 1

Place individual tortillas in a large skillet (you do not need oil)

Cook on medium-low for 5 minutes on each side

OPTION 2

Boil 1 cup of water in a glass measuring cup in the microwave or on a stovetop in a pan

Once boiled, add sun-dried tomatoes, and let sit for 10 minutes

Drain water

Add all &quot;meat&quot; ingredients (except 1/4 cup water in the ingredients list), including rehydrated sun-dried tomatoes

Turn the food processor on high until you achieve a meaty texture; DO NOT OVER BLEND; the texture should be crumbly

Pour contents into a non-stick skillet; cook on medium-low heat

Add 1/4 cup  water once meat begins to brown and stick to the pan

Heat until browned and heated through; about 15 minutes

*Variation: You can cook this &quot;meat&quot; later and store it in an airtight container for up to 5 days. 

MUSHROOM &quot;CHORIZO&quot; MEAT

Place all ingredients in a small blender.

Blend until smooth

I put the sauce into a squeeze bottle to make drizzling easy.

The sauce will last in the refrigerator for up to 7 days.

AVOCADO CREAM SAUCE

Cook tortillas

Place each tortilla on a plate

Add warmed taco meat

Add pico de gallo

Add pickled onions 

Add chopped cilantro

Add a dollop of guacamole

Drizzle with avocado cream sauce

Pick up and devour

SERVE

Mushroom Walnut Taco Meat

oz cremini mushrooms (sliced)

½ red onion (finely diced)

garlic (minced)

½ tbsp soy sauce

1½ tbsp smoked paprika

tbsp cumin

½ tsp pepper

Combine the walnuts and mushrooms in a high speed food processor and pulse several times to chop the ingredients to resemble ground beef. Making sure not to chop too fine otherwise the mushroom will become too soft and watery.

Transfer to a mixing bowl.

Heat the oil in a pan and sauté the diced onion until soft.

Next, add the minced garlic and walnut mixture to the pan and continue to sauté for 2-3 minutes.

Combine the remaining ingredients and stir to combine.

Sauté for another 3 minutes to cook completely.

Adjust seasoning to taste.

Serve and enjoy.
