Preheat oven to 400°F.

To a 9x13-inch baking dish, add the rice, chicken stock, soy sauce, cooking wine, garlic, mixed vegetables, and black pepper.

Stir and spread rice around so it's fairly even. Sprinkle bacon or ham across the top.

Cover tightly with foil and bake 40 minutes.
Step 5
Uncover, and bake 15 minutes more.
Step 6
Remove from oven, cover loosely with foil once more and let sit 10 minutes.
