Avocado Egg Salad is a delicious twist on a traditional egg salad with the addition of rich creamy avocado. To take this wrap from ordinary to extraordinary,  it’s topped with fresh lettuce, ripe juicy tomatoes and crisp smoky bacon.

Avocado Egg Salad

eggs

avocado

lemon juice

mayonnaise

garlic powder

chives (thinly sliced)

tomatoes

lettuce

bacon (cooked crisp)

salt & pepper

Mash ½ of the avocado with 2 teaspoons of lemon juice.

Add egg yolks, mayonnaise, garlic powder, salt, pepper and chives.  Combine until smooth.

Chop egg whites. Dice remaining ½ of the avocado.  Stir egg whites and avocado into the egg  yolk mixture.

Top each flatbread with lettuce, tomato slices, 2 slices of bacon and the avocado egg salad mixture.

½ ripe avocado, mashed

½ Tablespoon finely chopped dill pickle

½ Tablespoon chopped scallion (white part only)

Stir: Combine all ingredients in a bowl. Top with fresh herbs and serve.

Store

Store salad in an airtight container in the refrigerator. The salad will keep for 3-5 days. The avocado might brown a tiny bit, but it is still safe to eat.

Substituting avocado for mayonnaise is brilliant!  Made myself a sandwich for lunch and then just ate the remainder with a spoon.  I'm definitely going to try adding the curry next time.

My go-to avocado egg salad is a delicious, healthier twist on classic egg salad.  It is ultra creamy, thanks to rich nutritious avocado and a little Greek yogurt. And you&#039;ll love the bright flavors from fresh herbs and a squeeze of lemon juice.

No Mayo Avocado Egg Salad Recipe

lemon, (juice of)

tbsp Greek yogurt

celery rib (finely chopped)

shallot (finely chopped)

dill

Kosher salt and black pepper

red pepper flakes,

Extra virgin olive oil

Bread of your choice, (I used ciabatta rolls)

Romaine lettuce leaves

More parsley and dill

Hard boil the eggs and peel them. Put the eggs in a saucepan and cover them with water. Bring to a rolling boil (I add about 1/2 teaspoon of kosher salt to the water, which helps prevent the eggs from cracking and also helps to peel them). Turn the heat off, cover and allow the eggs to sit in the hot water for 10 to 12 minutes, then drain. Run cold water over your eggs and break the shells off to peel.

Chop the eggs up and put them in a medium mixing bowl.

Slice the avocado in half and remove the pit. With a spoon, scoop the avocado flesh out and discard the peels. Chop the avocado and put in the bowl with the eggs.  Immediately add the lemon juice on top of the avocado (this will help keep the avocado from turning brown too quickly). Mash the avocado a little bit.

Add the Greek yogurt, celery, shallot, parsley, and dill. Season with kosher salt, black pepper and a good pinch of red pepper flakes (I am using Aleppo-style pepper). Add a small drizzle of extra virgin olive oil. Mix everything well with a spoon or fork. Serve at room temp or cover and chill for later.

To make this into a sandwich (optional), simply scoop the egg salad onto your favorite bread (I like to add some lettuce and more fresh herbs in my sandwich).

Cut the avocado in half, remove the pit and take the avocado out of the shell with a spoon.

Mash

In a medium size bowl mash the avocado with a fork until smooth.

I just made your avocado egg salad recipe. I, too, love avocados, but have found I’m too busy and cannot eat them fast enough before they spoil. I just found a bag of frozen diced avocados at Aldis. This made it easy for me to thaw out a portion for my salad, and still have more in the freezer for another recipe, without having to worry about them spoiling before I use them! For my personal taste, I added some garlic and onion powder and a dash of paprika. Thank you for sharing your recipe. It was delicious!

Looking for ideas for lunch that's quick, delicious and easy.  Used all the items except no herbs.  Used Greek yogurt.   So yummy.

This recipe was great!   A keeper.   I love your website, recipes and video!  And looking forward to trying more. I noticed in this recipe video, peeling eggs is a pain, and the same struggle we all have.  However, recently I discovered the trick via Nancy Fuller on Food-network.   This is a game changer, and you will have zero issues: Place the eggs in a large saucepan and cover completely with cool water. Bring to a boil and then cover and remove from the heat. Let the eggs sit in the hot water for 9 minutes, then drain and cool in an ice bath.   The ice bath shocks the eggs, and it's so simple to peel.  The shells just come off like magic.   Hope this helps.  Keep up the great work!

Hard boil the eggs. 

Cover the eggs with water in a saucepan. Bring to a boil, turn heat off, cover and rest (on hot burner) for 8-10 minutes. Run under cold water and break off the shells. Cut the eggs into small pieces.

Mash the avocados

Mash the avocados in a bowl with the back of a large wooden spoon until mostly smooth.

Mix and serve

Mix the eggs with the avocados, herbs, lemon juice, salt, and olive oil if you need it. Serve immediately at room temperature, or chill and serve cold.

This is one of those must try recipes of summer for me! I'm like you in only eating egg salad every few years, but I've been wanting it lately and I'm one of those few who do put everything bagels on their list quite often. I can't wait!

Very tasty!  Added some slightly mashed garbanzo beans.
Our neighbor makes a variation of this (he's from el salvador):  hard cooked eggs, avocado, red onion, lime juice, salt/pepper, and some cilantro if he has it.  Serve with tortilla chips.  I'm pretty sure he and his family were making this egg/avocado combo for many years prior to it becoming a "thing" on the internet.
