blue cheese sauce

Here I'll not only show you how to make the easiest blue cheese sauce in the world, but I'll also give you some tips for the perfect steak to go along side!

Blue Cheese Sauce for Steak

Unsalted Butter

Fresh Thyme

Fresh Rosemary

Garlic, (left in skins & gently crushed with the palm of your hand)

Oil, (as needed (veg oil

Salt & Black Pepper

/ 250 milliliters Heavy/Double Cream, (at room temp)

/ 125 milliliters Beef Stock

Blue Cheese, (crumbled (see notes))

Steak

Ensure you take your steaks out the fridge 30mins before needed. Pat dry with papers towels, then sprinkle with a heavy seasoning of salt and pepper on each side. Rub into the meat, then coat with a drizzle of olive oil.

Bring a heavy bottom pan to the highest heat it can go. Once it's smoking hot (literally) lay down your steaks. For medium rare with a steak approx 2-2.5cm thick fry for 2 mins, or until the sighting of blood emerges through the upper surface. Then flip.

Baste

Add in your butter, rosemary, thyme & garlic and baste the steaks for another 2mins. Remove steaks from pan & leave to rest (important). Leave herbs and garlic in the pan.

Sauce

Lower heat to a medium and pour in beef stock. Scrape off any flavour from the pan, then pour in cream. Give it a good stir and allow to simmer for 5 or so mins until it begins to thicken. Remove herbs and garlic, then add in blue cheese and chives.

Simmer

Continue simmering until cheese has blended and the sauce has thickened. The stock, cheese and steak itself all taste fairly salty, so it's unlikely you'll need to season with salt, but a good pinch of black pepper is recommended.

Serve

This classic, storecupboard white sauce is loaded with strong cheddar cheese – our easy recipe is ready in 15 minutes. Use to make macaroni or cauliflower cheese

Cheese sauce

milk

tbsp plain flour

butter

Pour 500ml milk into a large saucepan and add 4 tbsp plain flour and 50g butter.

Turn on the heat to medium and start to whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil – the flour will disappear and the sauce will begin to thicken.

Whisk for another 2 mins while the sauce bubbles then stir in 100g grated strong cheddar cheese (or 50g grated cheddar, 50g crumbled blue cheese) until melted.

YES please. These really should have been included in my American book, but you know, there is only so much room! Delicious. Iconic. Easy. Enjoy.

I made it, just like the recipe, didn't change a thing, and it was good.
But after 24 hours, it got watery & turned into soup.

I make the mash together variety and add just a drop of worcesteshire sauce. Add the leftovers to mac and cheese. Wonderful.

I love everything about this sauce. Being an absolute nut for blue cheese I can think of a ton of ways I'll be able to use it.

This easy blue cheese sauce comes together in just a few minutes with loads of amazing flavor. Perfect for satisfying your blue cheese cravings whether it be together with a salad, on top of a pizza or to dip your cauliflower buffalo bites in. And as a treat for us non-US foodies - no need for buttermilk in this one.

Easy Blue Cheese Sauce

Buffalo Chicken Baked Potato

Chicken Breasts, 450 g

Salt, 3 g

Chicken bouillon powder, 4 g

Shallots, 1/2

Cooking oil, 10 g

Blue Cheese, 70 g

Sour Cream, 140 g

dill, a sprinkle

Granulated garlic, a sprinkle

Black Pepper, 20 cranks

Water,

Russet potatoes, 2

Salt, a sprinkle

Buffalo Sauce,

Scallions,

Cook the potato

Poke several holes all over the potato with a fork. Microwave it for 3 minutes to give it a head start.

Rub the potato with a little oil and salt, then transfer it to a 425°F (220°C) oven and bake for about 30 minutes, or until the skin is crisp and the center is tender.

Grind the chicken

Cut the chicken breast into rough cubes and add them to a food processor with the salt, chicken bouillon powder, and shallot. Process for about 1 minute, or until the chicken is evenly chopped into a ground texture.

If you don't have a food processor, finely chop the chicken and shallot by hand until the mixture resembles coarse ground chicken.

Brown the chicken

Set a pan over high heat and add the cooking oil. Add the chicken mixture to the pan and spread it into an even layer to sear.

Let the chicken sit undisturbed for a couple of minutes so it can brown deeply on the bottom.

Flip the larger pieces, then continue browning until the chicken has developed crusty edges. Break it up with a spatula or potato masher into small, pebbly pieces.

Remove from the heat and set aside.

Blend the blue cheese sauce

Add the blue cheese, sour cream, dried dill, dried minced garlic, black pepper, and water to a jar or blending cup.

Blend until mostly smooth. Add more water as needed until the sauce is pourable but still thick.

Sauce & finish the chicken

Set a pan over medium heat and add a thin layer of buffalo sauce. Bring it to a simmer.

Add the cooked ground chicken and toss until heated through and coated. Add more buffalo sauce if needed for a saucier texture. Turn off heat.

Assemble the potato

Cut into the top of the baked potato and fluff the inside with a fork to make a potato bowl.

Drizzle some blue cheese sauce directly onto the potato. Spoon the buffalo chicken over the top, then finish with more blue cheese sauce and finely sliced scallions.
