Perfect for leftovers, this breakfast casserole is hearty and delicious.

Bubble and Squeak

cabbage (thinly sliced)

bacon (diced)

onion (diced)

potatoes (see note)

leftover vegetables (optional)

paprika

salt & pepper

Place cabbage and ¼ cup water in a saucepan. Cover and simmer until cabbage is tender, about 10-15 minutes.

Cook bacon in a frying pan. Once crisp, remove from pan and add onions to the drippings. Cook until tender.

Stir in potatoes and vegetables; give them a bit of a mash. Add cooked cabbage and ham. Season with salt &amp; pepper.

Cook until browned adding a bit of butter if needed.

Use up leftover mashed potato and vegetables by turning them into Bubble &amp; Squeak Fritters!

Bubble & Squeak Fritters

courgette

potato

cooked vegetables (I used carrots and parsnips)

tbsp flour (can use gluten free)

cheese

egg, beaten

salt and pepper

oil butter

creme fraiche and spring onions

Grate the courgette and press between several sheets of kitchen paper to remove as much water as possible..

Place the grated courgette in a large bowl and add the rest of the ingredients. Mix well until everything has combined.

Heat oil or butter in a frying pan and add a large spoonful of the mixture to the pan. Flatten into a roundish fritter shape about 1/2 inch thick. Cook for 2-3 minutes on each side until golden brown. You will need to fry the fritters in batches, depending on how big your frying pan is. I was able to fry 4 at a time in mine.

Serve warm with a dollop of creme fraiche and some chopped spring onions.

Such a brilliant idea for using up leftovers! We pretty much have this once a week now and it's so nice not to be wasting as much food.

Bubble & squeak should be on everyone's radar come Christmas time – it's a great way of using up leftover mash, sprouts and cabbage

tbsp duck fat, goose fat or butter

rashers of streaky bacon, chopped

garlic clove, chopped

Brussels sprouts, sliced,

cold leftover mashed potato, potatoes

Melt 1 tbsp duck fat, goose fat or butter in a <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">non-stick pan</a>, allow it to get nice and hot, then add 4 chopped streaky bacon rashers. As it begins to brown, add 1 finely sliced onion and 1 chopped garlic clove.

Next, add 15-20 sliced cooked Brussels sprouts or shredded boiled cabbage and let it colour slightly. All this will take 5-6 mins.

Add 400g cold mashed potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan.

Allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour.

If you’ve got lots of leftover veg and potatoes, there’s no better way to use them up than Bubble and Squeak. It’s easy, fast, incredibly yummy, and super nutritious. Perfect for Monday Dinners.

1tbsp butter oil

Mashed Potato

Vegetables

Salt and Pepper

Flour

Mash the ingredients

Mash together the potatoes, leftover veggies and a good pinch of salt and pepper until well combined

Shape the Patties

Use your hands to shape burger size patties around 1-2cm thick

Rest on plate

Place on the plate with the flour and coat both sides (you can reshape a bit here if needed)

Heat oil

Heat the oil in the frying pan and add the patties

Fry for 5 minutes on each side until the edges have browned and crisped

Tbsp oil, plus more if needed for crisping

Start by chopping and mashing roasted potatoes in a a bowl or sheet pan. Chop bigger veggies like carrot, cabbage and broccoli and mash them into the potato mixture. Lastly add corn and peas and mash them a little with the rest of the mixture. You can leave this mixture on the coarser side if you prefer.

You have two options to cook bubble and...

You have two options to cook bubble and squeak. The traditional way is to fry it as hash until crispy and caramelized. For this, spread the mixture evenly in the heated skillet and let it sizzle for 2-3 minutes. When it starts to brown up, flip and fry the mixture, occasionally pressing it into the pan to brown a little before turning. Do this several times until it all caramelizes. You can add a drizzle more butter or oil along the sides to crisp it more if desired.

The other option is to serve Bubble and...

The other option is to serve Bubble and Squeak in patty form. For this, fry the mixture the same as above until it caramelizes. In the final step, make a big patty by pressing the mixture together into patty form. Let the base cook for 2-3 minutes to get crispy on the bottom. Then carefully flip the patty over and cook the other side until crisp.

Serve it along with fried or poached eggs...
