When I was a kid, I was addicted to these little canned puddings the other kids always had in their lunches. This reminds me of that pudding, thanks to chia’s silky smooth thickening power.And, of course, this chocolate pudding has the “functionality” of chia: high fiber, omega-3 fatty acid in the form of alpha-linolenc acid, and a fair amount of protein. Me, I just like pudding. This recipe first appeared in Season 1 of Good Eats: The Return.

Chocolate Chia Pudding

cocoa powder

maple syrup

chia seeds

avocado,

vanilla extract

Place the cocoa powder in the blender. Microwave 1 cup of water for 1 minute, then add to the blender and blend on high for 30 seconds.

Add the maple syrup, chia seeds, avocado, vanilla extract, and salt, plus 1 cup of water to the blender and blend on high for 45 seconds.

Slowly stream in the coconut oil with the blender still running. Continue to blend on high until the pudding homogenizes, about 1 minute more.

Transfer to a resealable container and chill in the fridge for at least 2 hours. The pudding will continue to set up as it cools. You can also dose the pudding into individual serving containers then cover and cool.

Overnight Chocolate Chia Seed Pudding

cacao powder cocoa powder

Almond Breeze Almondmilk Original Unsweetened

To a small mixing bowl add cacao powder (sift first to reduce clumps), maple syrup, ground cinnamon, salt, and vanilla and whisk to combine. Then add a little dairy-free milk at a time and whisk until a paste forms. Then add remaining dairy-free milk and whisk until smooth.

Add chia seeds and whisk once more to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it's achieved a pudding-like consistency). It may also be helpful to give the mixture an extra whisk/stir once it has been in the refrigerator for 30-45 minutes.

Leftovers keep covered in the fridge for 4-5 days, though best when fresh.&nbsp;Serve chilled with desired toppings, such as fruit, granola, or coconut whipped cream.

A creamy chocolate pudding made from chia seeds. Healthy enough for breakfast and delicious enough for dessert, this chocolate chia pudding is bound to be a staple in your kitchen! Gluten-free and vegan.

Add almond milk, chia seeds, maple syrup, cocoa powder, vanilla and salt into a high powered blender. Start at a low setting on your blender (variable on the Vitamix) and progress to high. Blend until chia seeds are almost undetectable and mixture is smooth, scraping down the sides of the blender with a spatula if needed. 

Chia pudding should be thick and ready to enjoy so you can top with your favorite toppings and dive in or if you like your chocolate pudding cold, transfer to a resealable container, cover and refrigerate for 3-4 hours to chill before eating.

Chia Seed Pudding

Sift

Sift cocoa powder over a medium mixing bowl to remove any lumps. (I know–sifting is the worst, but you don’t want any lumps in your pudding.)

Whisk

Add the maple syrup, vanilla, salt, and espresso powder, and whisk slowly to combine. The mixture will seem very dry at first but will come together eventually and resemble a thick, fudgy sauce.

Pour in a few splashes of the milk and stir gently to create a paste (this will help prevent lumps from forming). Then add the rest of the milk, and whisk until smooth. Whisk in the Greek yogurt until smooth.

Refrigerate

Add chia seeds and whisk to combine. Cover the bowl with plastic and refrigerate overnight, or at least 4 hours, until the mixture thickens into a pudding-like consistency. I find it helps to whisk it once about 30 minutes in to make sure the chia seeds stay distributed in the mixture.

Serve

Once set, stir the pudding once more. Scoop out your desired portion, and enjoy with any toppings. You can also portion the mix into jars and store them in the refrigerator for 4 additional days.

To begin, pour almond milk, honey, and cacao powder into the NutriBullet and blend until evenly combined.

Next, pour in the chia seeds and pulse about 5 to 6 times to distribute the seeds. Allow this mixture to sit for at least 20 to 25 minutes, but the longer the chia seeds have a chance to gel, the better. Overnight is best.

When ready to serve, simply spoon into little parfait dishes and enjoy as is or add a few mint leaves or chopped berries for a tasty and lovely garnish.

In a mixing bowl (with a pour spout, if possible) combine the milk, 2 tablespoons of cacao powder, and 2 tablespoons maple syrup. Taste the mixture, and add more cacao powder or maple syrup to taste. Keep in mind that the chia seeds will dilute the chocolate milk flavor slightly.

To make two individual servings, pour 2 tablespoons of chia seeds into two separate storage jars that have lids. Transfer the pudding to the fridge to thicken up, for at least 15 minutes, but it will get even thicker the longer it chills. You can make this pudding up to 3 days in advance as a make-ahead meal option, as long as you store it in an airtight container in the fridge.

Chocolate Chia Pudding: Mix the warmed non dairy milk, vanilla, cocoa, coffee, maple syrup with a whisk. Then add the chia seeds and let sit for 15 mins to thicken. (see notes for overnight oats variation)

Mascarpone Cream Chia Pudding: Mix the warmed non dairy milk, almond extract and salt. Add chia seeds and let sit for 15 minutes to thicken. then fold in lemon juice. (Fold in 2-3 tbsp whipped coconut cream for creamier layer).

Taste and adjust sweet. Add a tsp or so more chia seeds to either pudding layer if not thickened to preference.

Add spoonfuls into serving containers (I use weck jars and layer chocolate then cream layer). Top with 1-2 tbsp whipped coconut cream or just coconut cream. Dust with cocoa powder. Chill for a few hours and serve. You can also add granola or fresh fruits on top to serve.Store: Refrigerate for upto 3 days.

When you can have Tiramisu Chia seed pudding for breakfast, then why wouldn’t you!

This easy chia pudding has 3 layers. The Chocolate Coffee layer has warmed non dairy milk, vanilla, cocoa powder, some coffee, maple syrup or other sweetener, and chia seeds. The warmed milk helps the chia seed absorb the liquid evenly and quickly and the pudding thickens within 15 mins!

For the cream layer I use warmed non dairy milk, almond extract, a pinch of salt and lemon juice for the cheese flavor, maple syrup or other sweetener, and chia seeds. The almond extract adds a bit of amaretto flavor without the liquor. You can add the extract to either the chocolate layer or the cream layer. The lemon and salt add a slight cream cheese like flavor which works amazingly. You can omit them for a plain vanilla pudding layer. The third layer is some fluffy whipped coconut cream and a dusting of good cocoa! and done.

You can make this without coffee and chocolate and vanilla layer pudding. Make it into Overnight oats for less chia seed texture. Loads of options on the post!

Pour into the Glass

Prepare Dalgona Coffee Topping

Place instant coffee, sugar sweetener, and boiling water in equal parts into the food processor and start mixing it. It will take approximately 3 to 4 minutes until the foam begins forming.

Nice texture but geek yoghurt makes quite tart flavour - maybe regular yoghurt is better for little ones . 
My 1 year old wasn't a fan but gran thought it was good .

A quick and easy way to make chia seed pudding in a variety of flavors for snack or breakfast meal prep.

Easy Chia Seed Pudding

soy milk (or any plant-based milk of choice)

extra sweetener ((to counteract the bitter chocolate))

berries

peanut butter

extra sweetener

Add the milk, chia seeds, sweetener and flavor of choice to a blender and mix for about 20 seconds.

Let it sit for about 3-5 minutes and then come back and blend again for another 20 seconds.

Pour into small glass jars and seal with a lid. Keep in the fridge until ready to eat.  (up to 5 days).

To make 1 chia pudding

Triple or quadruple recipe for 1 flavor and make the same as you would a single pudding.  Then pour into 3-4 small cups and store them in the fridge.

Rinse out the blender between each flavor and repeat until you have 12 cups of chia seed pudding ready to grab and go.

To make a large batch

I tried the berry version and it was great. I had chia pudding once before and it was too thick and the seeds weren't softened. But this recipe has a nice smooth consistency. I used three heaping tablespoons of berries and a little more maple syrup, as I like sweetness. 5/5 - loved it!
