This easy Chopped Salad recipe is a perfect light meal or side dish! Serve it with your favorite pizza, pasta, or classic cookout fare. Adapted from What&#x27;s Gaby Cooking: Eat What You Want by Gaby Dalkin

Italian Chopped Salad

olive oil

lemon juice

red wine vinegar

shallot (finely chopped)

garlic (finely chopped)

oregano

sea salt

black pepper

lettuce

radicchio

red onion (thinly sliced)

cherry tomatoes (halved

chickpeas

mozzarella

provolone cheese (diced)

pepperoncini

oregano (for garnish)

sea salt and black pepper

Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, vinegar, shallot, garlic, oregano, salt, and pepper, and set aside.

Cut the iceberg lettuce in half through the core, then cut out the core. Slice the lettuce lengthwise into 1/4-inch strips. Repeat with the radicchio.

In a large bowl, combine the lettuce, radicchio, tomatoes, chickpeas, mozzarella, provolone, and pepperoncini. Drizzle with the dressing and toss gently to coat. Season with salt and pepper and toss again. Sprinkle with extra oregano, and serve.

Shrimp, Avocado, and Egg Chopped Salad

red onion, thinly sliced

lime juice

Kosher salt and pepper

c. grape tomatoes, halved

c. butter lettuce

c. fresh cilantro leaves

In&nbsp;a large bowl, toss onion with lime juice and&nbsp;½  tablespoon oil and let sit for 5 minutes. 

Heat&nbsp; 1/2 tablespoon oil in a large skillet on medium high. Season shrimp with 1/4 teaspoon each salt and pepper and cook until opaque throughout, 2 to 3 minutes per side. 

Toss tomatoes with onions, then toss with lettuce and cilantro. Divide among bowls and top with shrimp, avocado and egg.

Big Bunch of Basil (50 grams)

Jarred Roasted Red Peppers

Shelled Pistachios (15 grams)

Cucumbers

Preheat your oven to 180°C. Season your chicken breasts generously with salt and pepper. Place your breasts onto a baking tray and get them in the oven for 25 mins. Allow them to cool once cooked – the salad doesn’t need to be warm.

Chop up the basil, the roasted red peppers, cucumbers, pistachios, and chicken into even-sized pieces. Combine in a bowl before topping with kalamata olives and the dressing. Toss vigorously. 

Serve with a dollop of cottage cheese on each portion and enjoy.

This Portillo&#x27;s Chopped Salad is a knock off from the famous salad recipe at Portillo&#x27;s in Chicago. It&#x27;s hearty and topped with the tastiest dressing.

Portillo's Chopped Salad

Ditalini pasta ((2 cups cooked))

lb bacon ((about 1 cup cooked and crumbled))

romaine lettuce

iceberg lettuce

red cabbage

grape tomatoes, quartered

green onions

gorgonzola cheese ((about 1 cup))

chicken

white balsamic vinegar ((see note))

garlic,

Dijon mustard

sugar

salt

Cook Ditalini pasta according to package instructions. Make sure you salt the pasta water while cooking to give it some flavor. Drain and cool. Set aside.

Cook bacon in a skillet until done. Let bacon cool, then crumble it.

Combine romaine, iceberg, red cabbage, tomatoes and green onions in large salad bowl.

Add cooled pasta, bacon and gorgonzola cheese to salad. Add chicken if desired.

Add dressing to taste right before serving so that it doesn't get soggy.

For the Dressing: Whisk together olive oil, vinegar, garlic, Dijon mustard, sugar, oregano, salt and pepper.

This salad is spot on! Thank you for the recipe! Use the WHITE balsamic vinegar as suggested. It is sweeter and does not stain the pasta! I would not change anything 😊

Delicious!  The dressing is better than Portillo's &amp; it can be made lower in fat by replacing some of the oil with water.

This salad is a perfect 10. My husband and I both love it. We eat it about once a week. And I make no changes to your recipe whatsoever.

I’ve ate at Portillos a few times when I visited family in Chicago. I loved their chopped salad. It’s been a few years so I really don’t remember all that was in it. Anyway, I made this left out chicken and added red &amp; yellow peppers, cucumber and shredded carrots &amp; feta cheese.  Followed directions for dressing but I added honey to it &amp; a little more Dijon. This salad is fabulous. It is also easy to assemble in layers so it keeps in the cooler, I layer pasta mixed with a 1/4 of the dressing, chicken, bacon, cheese, tomato, onion, cabbage, and lastly lettuce. When we are ready to eat I add the rest of the dressing replace the lid and shake it up.

No honey, if you read the entire post, the person who contributed the recipe has NOT eaten at Portillo’s. Anyone who has actually eaten there would know that the dressing is completely different. This recipe was great but I would definitely add mayo to the dressing in order for it to be creamy like the Portillo’s original. TBH adding a teaspoon of mustard into all that oil plus the vinegar seemed so pointless. Didn’t add any flavor at all. But add some mayo and boom it’s perfect.

Made this tonight for dinner. Really delicious. Only had shredded iceberg, next time I’ll get some red cabbage. Used 2-3 ounces packages of pre cooked bacon. Definitely like the variety of chopped veggies! Will make again, the perfect summer dinner. 🥗

Chickpea Chopped Salad

red bell pepper (finely chopped)

English cucumber (finely chopped)

parsley (finely chopped, about ½ cup)

green onions (thinly sliced)

extra virgin olive oil

garlic powder

maple syrup

In a small bowl, combine the vinegar, oil, garlic, oregano, mustard, maple syrup, salt, and pepper. Whisk well, then set aside.

Chicken & Bacon Chopped Salad

Chicken Breast

Smoked Streaky Bacon

Tenderstem Broccoli

Sweet Gem Lettuce

Quinoa

Wholegrain Mustard

Lemon

Honey

Boil the broccoli in a pot of salted boiling water for 3-4 mins until it’s just about cooked. Then remove it and allow it to cool.

Preheat your oven to 180°C. Season your chicken breasts generously with salt and pepper. Place your breasts onto a baking tray and get them in the oven for 25 mins. Allow them to cool once cooked – the salad doesn’t need to be warm. Add the bacon in for the last 10 mins until crispy.

Heat up your quinoa according to the package instructions.

Add lettuce, broccoli, chicken, and bacon to a board and chop it all up.

Make the dressing with oil, lemon juice, mustard, and honey. Mix it all up until emulsified and coat the salad.

I used the dressing to make my own take on this salad, which was very good. Cooked shredded chicken, tomatoes, peppers, avocado, mixed grains, lettuce & cucumber. I think fresh chilli would have worked too :)

This is a top tier salad which my girlfriend asks me to make for her all the time!

I'm am absolute fiend for a chicken and bacon salad and this really makes it a more filling, healthier meal than what I'd usually make myself. Really rated this one.

Quick And Easy Chopped Salad - A Use What You Have Recipe

beans (white, black, garbanzo, etc.)

cheese (feta, queso fresco, Parmesan, blue, grated cheddar, etc.)

vinegar (rice, white wine, cider, balsamic, etc.)

garlic, (minced)

Add vegetables to a large serving bowl as you chop them into similar, bite-sized pieces.

TIP: any vegetables that need to be softened can be blanched while chopping the other vegetables: boil water, add the cut vegetable for 30 seconds, remove to a bowl of ice water to stop the cooking, and drain before adding to the bowl of salad ingredients.

Add any other ingredients you choose, beans, olives, cheese, etc.

Make Salad:

Combine all vinaigrette ingredients in a bowl or jar and mix well. Toss the vegetables with the vinaigrette and serve.

I have made this time and time again, with an exception.....used honey mustard
dressing.....it sure made extra special for those that are not too keen on veggies.

Chop up the basil, the roasted red peppers, cucumbers, pistachios, and chicken into even-sized pieces. Toss together in a large bowl with kalamata olives.

Divide the salad between Tupperware containers with a dollop of cottage cheese in each box and pop them in the fridge. Keep the dressing separate – either pour a little over in the morning or stash it in a little pot inside your lunch box to add just before eating.

Shopska Salad is the Macedonian version of a chopped salad with cucumbers, tomatoes, onions, peppers and white [feta] cheese. It&#x27;s a healthy and refreshing salad perfect for lunch or dinner!

Shopska Salad {Macedonian Chopped Salad}

ripe tomatoes, (chopped)

green banana peppers, (chopped,

English cucumber, (chopped)

yellow onion, (diced)

salt and black pepper, (to taste)

red wine vinegar, (or to taste)

feta cheese

parsley

Place the chopped tomatoes, peppers, cucumbers, and onions in a large serving bowl.

Add salt, pepper, oil, and vinegar to a bowl and whisk to combine. Pour the dressing over the salad mixture, toss it, and mix until well blended. Taste for seasonings and adjust accordingly.

Top with crumbled feta cheese and sprinkle with fresh chopped parsley.

Refrigerate for about 20 minutes, or until ready to use.

Serve.

This is a gorgeous salad. I eat it every week, if not every day.

Otherwise, all people from all countries are welcome to enjoy this dish.

I have a co worker from Macedonia  and just this week a few of us gathered again  at his  house for the full Macedonian feast. Coarse after coarse but it  began with this salad. Absolutely delicious. Going to be making it at home often. As for the other dishes, I’ll have to get the names written down as I don’t recall the names. All fantastic and I’m a fan!

I have to agree with all those who said that it’s always THEIR culture’s salad.  My late husband was born and raised in Beograd and he was adamant than any variation of this salad was Serbske’ salate (spelling?).  😆. Since he passed, I’m left with his grandmother’s old tattered cookbook, in Serbian, which I can’t read and, even if I did, there’s no standard of measurement to be found…it’s a ‘large spoonful’ or ‘small handful’ or ‘a slightly hot oven’ 🤣 so for years it was trial and error.  

Ive tried to recreate the old dishes from recipes I’ve found on line but none come close…except for this one!!! Thank you SO much Katerina for sharing this recipe.  I’m going to make this for Thanksgiving dinner tomorrow night for my kids to get an authentic taste of their fathers’ culture.

An alliterative salad of carrots, chicken and cabbage. The spicy peanut dressing is so good you'll want to bathe in it. But please don't.

Chicken, Carrot & Cabbage Chopped Salad

Carrot

White Cabbage

Salted Peanuts

Coriander

Mint

Pickled Ginger

Smooth Peanut Butter

Crispy Chilli Oil

Rice Wine Vinegar

Lime

Soy Sauce

Fish Sauce

Peel your carrots and de-seed your cucumbers.

Add your carrots, cucumber, cooked chicken breasts, and white cabbage to a chopping board and chop up into even-sized pieces.

Add pickled ginger, salted peanuts, coriander, and mint to the chopping board (reserving some peanuts and coriander for later) and keep chopping. Add all of your chopped ingredients into a large bowl. 

Squeeze the juice from your limes and combine with the rest of the dressing ingredients and a splash of water to loosen it up. Add the dressing into your bowl and toss together. Garnish with an extra bit of coriander and a scattering of peanuts. Enjoy.

I absolutely love this salad. The sauce is lip-smackingly delicious. My chilli oil was wasn’t very spicy last time so for two-person portion I added a 1/4tsp of lazy chilli. It’s my go-to posh WFH lunch.

I made a portion for 1, it’s HUGE. Which is great when it’s miserly veg. The dressing is delicious. I didn’t use anywhere as much chilli oil, slightly regretting that.

Soya sauce is missing from the dressing recipe, please add. Great recipe did hot chicken and Al dente cabbage so warm and worked.
