Crispy Oven Roasted Potatoes

potatoes,

olive oil

salt

pepper

garlic powder

onion powder

Preheat oven to 450 + line a cookie sheet with parchment paper or a silpat baking sheet.

In a bowl, toss together chopped potatoes, olive oil + spices. Make sure all pieces are evenly coated

Spread out potatoes on lined baking sheet

Bake for 20 minutes and stir potatoes to make sure sides are getting evenly coated. Bake for additional 20 minutes until potatoes are browned.

*IMPORTANT NOTE* FOR AIR FRYER: USE 1/2 THE AMOUNT OF OIL - you only need 1 tablespoon of oil

Air Fry at 400 for 20 -25 minutes. If your air fryer has a basket, remove it at 10 minutes, shake, and return to cooking. This allows the potatoes to cook evenly. Every air fryer is different so check after 20 minutes to make sure they don&#039;t burn!

Crispy Roasted Potatoes

These crispy garlic roasted potatoes recipe has a light honey miso garlic drizzle caramelized at the very end to give it a layer of umaminess which makes them a super addictive snack or side dish.

Honey Miso Garlic Roasted Potatoes

lbs russet potatoes

white vinegar

salted butter

water

miso ((See notes about types of miso))

honey

garlic powder ((not garlic salt))

green onions ((finely chopped))

Scrub the potatoes clean and cut them into 1-1 1/2 inch chunks.

Place the cut potatoes in a bowl of clean water to wash out the excess starch

In a large pot, put the potatoes in the pot and cover it with COLD water, enough to cover the potatoes

Add in the white vinegar and salt and set the stove to medium high heat.

Boil it for 20-30 minutes, do not use a lid.

Once the potatoes have finished boiling, drain the water and let it sit for about 10 minutes to cool and dry out. (It cools faster if you can spread it out into 1 layer)

Preparing the Potatoes for Roasting

In a small bowl, add in the miso and hot water and mix until the miso has melted.

Add in the honey and mix well until the sauce is smooth.

Add in the garlic powder and mix.

Set aside for later

Making the Honey Miso Garlic Sauce

Melt the butter (I like to use the microwave and nuke it for 20 seconds, 10 seconds at a time so it doesn't splatter. If you don't have a microwave, use a small pot or pan)

Mix in the oil with the butter and set it aside.

Once 10 minutes is up and the potatoes are dried and somewhat tacky and sticky, place the potatoes in a roasting pan (use one large enough that you can spread the potatoes into a single layer) and mix the butter/oil mixture with the potatoes until they are all well coated.

Set the oven rack to the center of the oven.

Place the potatoes in the oven and broil it for 15-20 minutes. Flipping them every 5 minutes. (It is crucial that you watch the oven on this step, since things burn really quickly under broil.)

Once the potatoes are brown and crispy (If the potatoes are not crispy yet, broil for another 5 minutes), mix in the Honey Miso Garlic sauce and mix well until all the potatoes are well coated.

Put it back in the oven, and broil it for 2-3 minutes

Crispy Baked Smashed Blue Potatoes

lb (~ 700 gram) blue potatoes, small size

(~ 50 gram) unsalted butter, melted

scallions/cilantro/chives/fresh parsley, finely chopped (garnish)

Place potatoes in a pot and top with 2 inches of water. Bring to a boil, then reduce the heat to a simmer until continue cooking until potatoes are soft. About 20-25 minutes depending on size.

Drain potatoes over a strainer and set aside until there is no more steam from the potatoes. About 5 minutes.

Preheat oven to 180 Celsius (350 Fahrenheit).

Arrange potatoes on a baking sheet. Smash each potato with a fork, brush with melted butter, drizle with olive oil (~ 1/4 teaspoon per potato), and sprinkle with salt and pepper.

Return the pan to the hot oven and roast the potatoes for 45 minutes to an hour, until they&#39;re golden, crisp and crunchy on the outside. You can give them a stir towards the end of cooking, but don&#39;t be tempted to do so until they&#39;ve formed a really good crust, or you&#39;ll lose all the crunchy bits to the bottom of the pan!

If you dare, season the potatoes with extra flaky salt, then pile them into a warmed bowl and serve.

Start by using petite gold or fingerling potatoes. You want to use small potatoes to make it easy to smash them with the bottom of a glass. If they are too large, they will just fall apart. I prefer yukon gold potatoes because of their creamy texture and thin skins.

Place the potatoes in a large pot and fill with water. Place on high heat until boiling. Boil for about 20-25 minutes or until the potatoes are soft and fork-tender. You want them to be soft enough to smash! The larger the potatoes, the longer the cooking time.

Preheat oven to 425 degrees. Drain the water and place the potatoes in a colander to allow the steam to release for about 5 minutes. Get a large baking sheet ready. Place the potatoes on the baking sheet and press on each one with the bottom of a glass to &quot;smash&quot; them.

Drizzle the potatoes with melted salted butter and extra-virgin olive oil. Sprinkle with salt and pepper. 

Bake in a 425-degree oven for about 35-45 minutes, depending on the level of desired crispiness. Sprinkle with fresh parsley and serve with garlic cheddar sour cream dip.
