1.	Slice cucumber in half long ways. Use a spoon to scrap the center of the cucumber and remove seeds. Use a grater to shred cucumber. Place shredded cucumber in a cheese cloth or several paper towels layered together. Squeeze as much liquid as you can from the cucumbers and discard juice.

Easy Baked Salmon Recipe

Preheat oven to 425 degrees F. Line a baking sheet with foil and lightly spray with non-stick spray.

Place salmon out on counter for 10 to 15 minutes, to bring to room temperature. Use a paper towel to blot and remove any moisture from salmon.

Place salmon on foil-lined baking sheet and drizzle with oil, covering top and sides. Season with salt and pepper. Bake for 7 to 10 minutes or until salmon reaches 140 degrees F at the thickest portion.

While the salmon is cooking, prepare the quick pan sauce. Heat a small skillet over medium heat and add in the butter. Once melted, stir in the garlic until fragrant (about 30 seconds).

Whisk in the flour, cooking for about 1 to 2 minutes. Gradually stir in the milk, until the sauce is smooth. Stir in the dill, dijon and salt and pepper. Simmer on low heat until the salmon is ready, stirring occasionally.

Serve salmon while hot with the creamy dill sauce drizzled over top. Enjoy!

This dill sauce is easy to make and is full of creamy, herby flavor! It takes only 5 minutes and works as a drizzle or dip.

Easy Dill Sauce

full fat Greek yogurt (or half mayonnaise and half yogurt*)

dill

lemon juice

extra virgin olive oil

garlic powder

kosher salt,

In a small bowl, stir together the Greek yogurt, dill, lemon juice, olive oil, garlic powder, dried dill, and kosher salt. Stir in the water, then add a bit more as necessary until it comes to the desired consistency.

Taste and add additional pinches of salt as desired. Refrigerate up to 2 weeks. (Leftovers will become thicker in the fridge, so allow to come to room temperature and/or add a splash of water or lemon juice as necessary.)

This cucumber sauce is full of flavor and fast to make! Made in minutes with Greek yogurt, lemon, and dill, it's like a quick tzatziki.

Peel the cucumber and coarsely grate it. Place it in a clean tea towel or dish towel and squeeze tightly over a sink to remove excess liquid.

In a medium bowl, stir together all ingredients, then stir in about 2 to 3 tablespoons of water, until the sauce is smooth and creamy (the water amount will vary based on the yogurt brand). Store for up to 1 week refrigerated.

Just to ask: instead of adding water, why not use the juice squeezed out from the cucumber? Is that a ‘no-no’?

The recipe was inspired by Trader Joe&#39;s vegan creamy dill dressing, but made allergy-friendly and without oil. It&#39;s every bit as versatile and delicious!YIeld: makes about 12 fluid ounces (1.5 cups). Serving size = 1/4 cup (or 4 Tbsp).

Creamy Dill Dressing (Dairy Free)

raw sunflower seeds

soy milk (see Notes) (or other neutral-tasting non-dairy milk)

½ teaspoon dried parsley (or 2 teaspoons finely chopped fresh parsley)

Soak

If using a high-speed blender, no need to soak the seeds. If using a standard blender you may want to soak them in hot water for about an hour. Then drain and rinse under cold water.

Blend

To a blender add the seeds, milk, water, lemon juice, vinegar, salt, garlic, onion powder, mustard powder, and black pepper. Gradually increase to high speed, and blend until completely smooth. Stop to scrape down the sides of the blender as needed. Taste and adjust the amount of salt and acidity as desired. Keep in mind, the dressing will thicken in the refrigerator - you can always add water later to thin it.

Chill

Add the herbs and pulse the blender a few times to incorporate. Pour the dressing into a jar or container, cover, and refrigerate for several hours or overnight. The flavors develop and improve as it chills.

2 Minute Greek Yogurt Dill Sauce

A delicious, fail-proof dish that&#39;s ready in just 20 minutes. The salmon is seared until crispy on the outside and juicy in the middle, then smothered in a divine sauce enhanced with fresh dill for a fine dining touch. Serve it with buttered potatoes for a quick yet satisfying dinner.

Salmon in Creamy Dill Sauce

½ tsp sweet paprika

½ tsp black pepper (divided)

salt (divided)

unsalted butter

onion

carrot

⅛ tsp ground turmeric

tbsp all-purpose flour

vegetable broth

heavy cream

dill (more for serving)

black pepper (for serving)

seasoning

Get your prep done before you start cooking: Pat the salmon fillets dry. Season both sides with garlic powder, sweet paprika, ¼ teaspoon salt and ¼ teaspoon black pepper.

Peel and grate the carrot. Dice the onion, mince the garlic cloves and chop the dill.

Heat oil and butter over medium high in a large nonstick skillet. Add salmon fillets and sear 3 minutes per side. Remove from skillet onto a clean plate.

Add carrot, garlic and onion. Sauté for 3 minutes. Add turmeric, and the remaining salt and black pepper.

simmering

Add flour and stir until incorporated. Add vegetable broth and simmer for 1 minute while stirring constantly.

Pour in cream, bring to a simmer. Add dill and lemon juice. Stir until combined. Taste and adjust salt. If the sauce thickens too much, add a splash of cream.

Return salmon to the skillet and simmer for 3 minutes. Finish off with dill and freshly ground black pepper. Enjoy!

Made this today and it is sooooo good!! I carmelized the onions for longer than the recipe called for because I really wanted to get them soft and translucent and golden, and then I added in the carrots and garlic. I served it with baby gold potatoes tossed in butter and garlic and the leftover dill, along with a Caesar salad and it was a 10/10.

Very complimentary for salmon and trout. Great drizzled over vegetables as well. Many may not know however that a brown onion is the same as a yellow onion. Commonly, stores have yellow onion bins, but not brown onion bins. My point is most people are more inclined to try a new reciepe knowing the ingredients are easily accessible. No sense making it complicated. The reciepe is very good and 
worth a try.

Served this at a dinner party and the results were nothing short of FANTASTIC!  I may eat this sauce on shoe sole!
