Preheat the oven to 400F and place 2 tbsp of the butter on a rimmed baking sheet. Place the baking sheet in the oven as it preheats.

Melt the remaining butter in a small bowl and whisk in the garlic, parsley and lemon zest.

Remove the pan from the oven when the butter is melted and add the cauliflower florets. Sprinkle with salt and pepper and toss to coat in the butter. Bake 10 minutes.&nbsp;

Remove the pan from the oven and make space for the salmon filets. Sprinkle with salt and pepper, then drizzle with plenty of the garlic butter.&nbsp;

Bake another 10 to 12 minutes, until the fish is opaque and flakes easily with a fork. How long will depend on how thick your filets are.&nbsp;

Just under ½ cup (40 grams) parmesan cheese

Pat salmon fillets dry with paper towels.

Heat olive oil and butter in a large skillet over medium-high heat.

Season salmon with salt, pepper and smoked paprika. Sear in the hot skillet (flesh-side down first) for 3-5 minutes on each side. Once cooked, remove from the pan and set aside.

Melt the 3 tbsps. of butter in the same skillet. Sauté minced garlic and then add fresh spinach. Cook for 1-2 minutes.

Reduce heat to low-medium heat, add heavy cream and bring to a gentle simmer, stirring occasionally. Add the boullion cube to the cream and let it simmer again (add water if necessary, if you like the sauce to be thinner).

Add the parmesan cheese and allow sauce to gently simmer for a another minute or so until the cheese melts and sauce thickens.

Add the salmon back into the pan, cover it with the sauce, sprinkle with chopped parsley, and a squeeze of lemon juice.

This was delicious!! For the buillion cube, I used "better than buillion" chicken flavor. They only change I made was added complete seasoning to the fish and the cream sauce. As a side I made lemon/sazon flavored cauliflower rice. I will definitely be using this recipe again!!! Thank you!

Wow!  This salmon was soooo good and so quick and easy. My husband and son raved about it. It will definitely go onto the regular weeknight dinner rotation. The ingredients are things I’ve pretty much always got on hand and only one pot to wash for the win!

This is so delicious, as I was making it just for myself, I cooked two salmon darnes and some prawns, and reduced the recipe.  Had the second piece of salmon the following day, reheats well in the oven covered.  So tasty, I had it with cauliflower mash. Yum yum yum

Baked salmon smothered with fresh minced garlic, butter, dill and a hint of lemon juice. Quick and delicious dinner for any day!

Garlic Butter Dill Salmon

tbsp extra virgin olive oil

salted butter

Pre-heat oven to 425°F.

Cut defrosted salmon into ~2-inch wide fillets (See picture below and Note 1). Rub salmon fillets with olive oil (including skin side)

Place salmon skin-side down onto baking sheet lined with aluminum foil or parchment paper. Sprinkle each salmon fillet with lemon juice, salt, dill, and minced garlic. (See Note 2)

Then add a few chunks (each chunk is ~1/4 tsp) of soften salted butter to the salmon (see picture)

Bake in oven for 8-11 minutes. (See Note 3).

Preheat the oven to 350°F/180°C.

To a sheet pan, add the potatoes, drizzle with olive oil, season with salt and pepper. Arrange them cut side down and bake in the oven until fork tender (about 15 minutes). Or you can parboil the potatoes for 10-15 minutes, drain them and add to the sheet pan.

Meanwhile, make the garlic butter sauce. In a small bowl, combine all of the ingredients and give them a whisk.

Remove the sheet pan from the oven, move the potatoes to one side, place the salmon in the middle and arrange the green beans around the salmon.

Pour the garlic butter sauce over the salmon and green beans.

Place the sheet pan in the oven and cook for 15 more minutes.

I made this recipe the other night and it turned out awesome! This is the kind of recipe I like - easy to make, wholesome, and delicious. I made it with Sockeye Salmon, small red potatoes, and frozen green beans from my garden.  It was easy and quick to make, and it was delicious!
