Greek Lemon Rice Recipe

long grain rice (uncooked)

Early Harvest Greek extra virgin olive oil

yellow onion, chopped (just over 1 cup chopped onions)

garlic clove,

orzo pasta

lemons, juice of (PLUS zest of 1 lemon)

broth

salt

parsley

tsp dill weed (dry dill)

Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.

Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking.  Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.

Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)

Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.

Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

I tried this last night, not sure I used the right rice (Jasmine) as it came out overcooked. Going to try again and halve the cooking time to see what happens. For the record, even overcooked, it was tasty!

I didn’t have the orzo and it turned out just perfect without it. It was an amazing and simple dish.

The print function doesn't present the recipe fully plus it shows big gray splotches.  It must not be set up correctly in the "PRINT" button.  This also happened with the Lebanese rice recipe.  It displays on the screen correctly in both cases but when I look at a preview of the print page, three pages are gray splotches and the Nutritional Info follows.  Also the first page is cut off and does not continue on the 2nd page....only gray area at top, then two pages of gray splotches.  I like printing my recipes so I can take notes on it.  I hate to have to use screen prints or cut and paste.  thank you.

Spanakorizo (Greek Spinach Rice) is an easy side dish or hearty main. Rice is cooked with fresh spinach, onion, dill, lemon and tomato to create a delicious pilaf that's a traditional recipe from Greece.

Greek Spinach Rice (Spanakorizo)

olive oil

onions (diced)

dill (or 1 tsp dried)

white long-grain rice

water

tomato paste

salt and pepper

of ½ a lemon

Heat the oil in a large pan over a medium heat, add the onion and gently cook for 7 minutes or until softened but not browned.

Add the spinach and half the dill and cook, stirring, until the spinach has wilted and any liquid has evaporated.

Stir in the rice, water and tomato paste, then bring to the boil.

Reduce the heat and simmer, covered, for 20 mins or until the rice has cooked and absorbed all the water. Add more water if necessary.

Stir in the remaining dill and lemon juice, and season with salt and pepper.

Greek Spinach Rice

I used whole grain brown rice. It was awesome! Just need to make sure that you wash it and then soak it for 20 minutes :) Also found that it was better to salt to taste after it was made. And then if you let it refrigerate overnight, the flavors melded perfectly!!

Tastes and smells like pilaf, like my grandmother made.
I put more lemon in and more garlic and added pine nuts.

Light and delicious summer dinners are the best! And this one pot Greek chicken and rice pilaf dish is exactly that! It's easy enough to pull together on a weeknight and has the most delicious lemony fresh taste!

One Pot Greek Chicken and Rice Pilaf

boneless, skinless chicken breasts (or thighs)

EACH olive oil AND lemon juice

red wine vinegar

garlic

salt black pepper

red pepper flakes (or more!)

oregano (or 2 tsp dried)

butter

¼ cup long grain bparboiled rice/b

chicken broth

lemon juice (see notes)

CHICKEN: Combine 2 tablespoons of olive oil, lemon juice,...

CHICKEN: Combine 2 tablespoons of olive oil, lemon juice, minced garlic, red wine vinegar, salt, pepper, red pepper flakes, and oregano in a zip top bag. Add the chicken breasts, zip the bag and give it a good shake until the chicken breasts are evenly covered in the marinade. Allow the chicken to marinate for 15 minutes and up to 1 hour.

In a large sauté pan, heat the remaining 1 tablespoon of olive oil over medium high heat. Remove the chicken breasts from the marinade and discard marinade. Cook the chicken breasts for 4-6 minutes per side or [b]until the chicken is all the way cooked through and registers 165ºF on a thermometer[/b]. Remove the chicken to a plate. Cover loosely with a piece of foil and keep warm.

RICE PILAF: Rinse the rice in a fine mesh...

RICE PILAF: Rinse the rice in a fine mesh strainer under cold running water for 2 minutes, use your fingers to rub the rice, set aside. Place the butter in the same sauté pan and allow it to melt over medium high heat. Add the rinsed rice and allow to toast for 3-4 minutes, stirring frequently so the rice doesn't burn. Add the chicken broth and lemon juice to the pot and allow it to come to a boil. Stir just once to break up any lump. Cover, reduce heat to low and let the rice cook for 8 minutes. At the 8 minute mark, remove the cover, the rice won't be cooked through yet, add the lemon zest and lemon slices to the rice and top with the cooked chicken breasts. Cover and continue to cook for 5-10 minutes or until the liquid dried up and the rice cooked through. Allow to stand for 5 minutes before topping with parsley and serving.

Cook onion and garlic: Heat the olive oil in a large saucepan with a lid over medium heat. Add the onion and cook for 3 to 4 minutes until translucent and soft. Stir in the garlic and cook for another 30 seconds until aromatic.

Sauté rice with onion and garlic:

Sauté rice with onion and garlic: Add the rice and cook (without liquid) until the rice turns almost translucent.

Cook the rice:

Cook the rice: Add the broth, lemon juice, salt and pepper to the saucepan. Cover the pan with lid and bring to a simmer. Turn the heat to low and cook for about 20 minutes or until the rice is done, the liquid should be fully absorbed. Remove the rice from heat and leave it covered, undisturbed for 10 minutes.

Finish with fresh herbs:

Finish with fresh herbs: Uncover the saucepan and stir in the parsley and dill. Garnish with lemon slices and serve.

In a microwave-safe measuring cup, heat chicken broth to a boil. Add better than bouillon and stir until dissolved; set aside.

Heat olive oil in a pot with a tight-fitting lid, uncovered, over medium-low heat.

Saute onion and garlic, uncovered until soft and translucent.

Add rice to the pot and continue to saute, stirring constantly, until rice is slightly toasted.

Stir in chicken broth with dissolved better than bouillon, lemon juice, and black pepper. Bring to a roiling boil, stir, reduce heat to low, and cover tightly. Cook until rice is tender, about 20 minutes.

When rice is tender, remove from heat, stir in lemon zest, dried dill, fresh parsley, and butter and allow to sit, covered for 10 minutes. Stir again, adjust seasonings as needed. Serve.

Heat olive oil in a large saucepan over medium-high heat. Add onion and cook until translucent, 5-7 minutes. Add garlic and cook 1 minute more.

Stir in oregano, half of the dill, and spinach. Cook, stirring frequently, until spinach wilts, about 3 minutes.

Stir in the rice, the vegetable broth, and bring to a boil. Cover, reduce to medium-low and let simmer 20 minutes.

Uncover, stir in butter, lemon juice and zest, and remaining dill. Season to taste with salt and pepper.

Serve with feta cheese, if desired. Enjoy!

This spinach rice dish is simple, easy and wonderfully comforting, without being heavy. Great as a side or as a vegetarian main.

Spanakorizo (Greek spinach rice)

spinach

spring onion ((scallion))

red onion ((or 1/2 if small))

tbsp virgin olive oil

water ((or vegetable stock, if you prefer))

lemon juice ((ie from 1/2 lemon, approx))

feta cheese (to serve, approx (optional))

Remove any tough stems from the spinach and roughly chop the leaves. Slice the spring onion into thin slices and finely chop the red onion.

Warm a little over half the oil in a medium pan over a medium heat and add the spring onion and red onion. Cook the onions for a couple minutes to soften them without browning  (add a little more oil or reduce heat, if needed).

Add the spinach and wilt it down in the heat of the pan. Stir regularly and lift up the cooked spinach from the bottom to the top to help it wilt a little faster.

Once the spinach has all wilted down, add the rice and water or stock. Stir to combine and scrape down any spinach that has become stuck to the sides of the pan.

Once it comes to a simmer, cover and reduce the heat. Cook for around 20 - 25 minutes until the rice has cooked and absorbed the liquid.

Add the dill, the remaining oil and the lemon juice and stir to mix through. Serve either as it is or topped with a little crumbled feta on top.
