Preheat 2 inches of oil in a large skillet to 365 degrees.  In a medium sized mixing bowl add the flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, paprika, and pepper.  Add the egg and buttermilk and stir until combined.  Stir in cubed butter.

Drop the batter by rounded teaspoonfuls in the hot oil.  Let cook until they are golden brown 2-3 minutes.  Remove with a metal strainer on a paper toweled lined plate.  Serve with tarter sauce if desired.

Hush Puppies are gently fried cornbread with a crunchy outside and soft, doughy inside. Serve with fish fry, fried shrimp or any BBQ!

Crispy Hush Puppies

yellow cornmeal

baking powder

Make Batter

In a medium mixing bowl, whisk together flour, yellow cornmeal, baking powder, sugar, baking soda, Kosher salt, and onion powder.

In a small mixing bowl, whisk together buttermilk and eggs.

Combine the two, folding until just mixed. Do not over mix the batter.

Chill

Cover and refrigerate for a minimum of 30 minutes, but up to 24 hours.

When ready to cook, preheat oven to “warm” setting.

Pour 2 inches of peanut oil into a high sided Dutch oven or other heavy bottom pot. Heat until 350 degrees.

Pour oil to a depth of 2&quot; in a 6-qt. Dutch oven or large sauce pan and heat over medium-high heat until a deep-fry thermometer reads 350°.

Drop 1 tablespoon of batter into the oil. Continue, working in batches and being mindful to not crowd the pan.

Fry until outsides are a crispy, golden brown, approximately 3-4 minutes.

Remove to a paper towel lined plate to drain. Transfer to a baking sheet in the warm oven to keep heat until all are fried and ready to serve.

Southern Sweet Onion Hush Puppies

sweet onion, finely chopped (about 1 cup chopped)

cornmeal

vegetable or peanut oil

Add about 3 inches of oil to the bottom of heavy bottom dutch oven or deep skillet - being sure  the oil doesn&#039;t come more than halfway up the side of the vessel. Heat to 350°F.

While the oil is heating, combine the onion, cornmeal, flour, sugar, and salt together in a medium bowl.

In a small bowl, whisk the egg into the buttermilk. Add to the dry mixture and stir until just combined. Allow the batter to rest for about 5 minutes.

Drop the batter by heaping tablespoonsful carefully into the hot oil and fry for 5 to 6 minutes, turning over once, or until golden brown and cooked through. Drain on a wire rack over paper towels. Working in batches, being sure not to cook too many at one time as the oil temp will drop and the hush puppies will end up greasy. Be sure to adjust the heat to keep the oil at about 350°F.

Combine 2 cups milk and 2 cups water in a medium saucepan. Bring to boil over medium to medium-high heat, but do not scorch. Add grits and cook for 20 minutes on low, stirring often.

Remove from heat and whisk in salt, pepper, butter, and cheese. Fold in diced ham and green onions.

Transfer grits mixture to a casserole dish and refrigerate for at least 3 hours (and up to overnight).

When ready to fry the fritters, heat 3 inches of canola oil to 350˚. Mix teaspoon of water with eggs and whisk well. Pour breadcrumbs into a separate bowl.

Using your hands, roll spoonfuls of the cooled grits into balls about 2 inches across. Dip fritters one at a time first into egg mixture and then into breadcrumbs before frying.

Fry until golden brown, about 3-4 minutes per small batch. Set aside to drain on paper towels before serving.

The Best Fried Catfish (Fish Fry 101)

Marinate the catfish: In a large bowl, combine the catfish fillets, buttermilk, ranch seasoning, salt, garlic powder, white pepper, paprika, and hot sauce together. Use your hands (with disposable gloves, if desired) to mix everything together to fully combine. Cover the bowl with a lid or plastic wrap and transfer it into the refrigerator to marinate for at least one hour.

Prepare the catfish flour dredge: In a shallow pie plate, combine the cornmeal, flour, salt, minced onion, garlic powder, white pepper, and paprika together. Use a fork to mix everything together until well combined. Then set the flour dredge aside.

Mix dry ingredients: In a large mixing bowl, combine the cornmeal, flour, minced onion, salt, sugar, white pepper, baking powder, and baking soda together. Use a whisk or a fork to mix all of the dry ingredients together until fully combined.

Add in the wet ingredients: Add in the egg, buttermilk, and hot sauce. Mix everything together again until just combined.  Carefully fold in the corn until fully incorporated in the batter.

Fill a large heavy bottomed dutch oven or deep cast iron skillet with oil over medium high heat. Use a deep fry thermometer to monitor the temperature of the oil until it reaches at least 350°F.

Frying the hush puppies: Take a spoonful of the hush puppie batter and use another spoon to scrape off the batter directly into the hot oil. Repeat the process until you get as many dollops of batter into the pot without any overcrowding (fry them in batches if you need to). Fry the hush puppies until golden brown, about 1-2 minutes on each side. Use a slotted spoon to take them out. Then set the hush puppies aside onto a plate/baking sheet lined with paper towel.

Frying the catfish: Make sure the oil is at least 350°F. One by one, take each of the marinated catfish fillets and dredge them into the cornmeal mixture until coated on all sides, shaking off any excess flour. Carefully place the catfish fillets (fry in batches to avoid overcrowding) into the hot oil and fry them until golden brown and crispy, about 4-5 minutes. Note: if you prefer your catfish fried hard then fry them until your desired consistency is reached. Use tongs or a fish spatula to carefully take the catfish out and place the fried catfish fillets onto a baking sheet fitted with a wire rack to allow excess oil to drip off. Repeat the process until all of the catfish is fried.

Enjoy the catfish warm alongside hush puppies and side items such as coleslaw, collard greens, and macaroni and cheese. Also serve with condiments like tartar sauce and hot sauce, if desired.
