Ponzu Sauce

Gather all the ingredients.

Combine all the ingredients in a sterilized mason jar and mix well.

Steep in the refrigerator overnight (minimum), for several days, or for up to a week. Some restaurants steep for a month, especially if you make a big batch.

After steeping, drain over a sieve to get rid of katsuobushi and kombu. You can use leftover kombu and katsuobushi to make homemade furikake (Japanese rice seasoning).

You can keep homemade ponzu in the mason jar for up to 1 month (to be safe); however, if you substitute mirin with water and sugar, please use it within a week. When you use ponzu, make sure not to cross-contaminate. The sauce can last for 6-12 months if you sanitize and keep everything clean during making the ponzu.

Pour all ingredients (soy sauce, lemon juice, lime juice, dashi powder, mirin and rice wine vinegar) into a small bowl.

Sesame Seeds (optional)

Place all the ingredients, except the xanthan gum, in a saucepan over medium heat. Whisk together.

Bring to the boil and reduce by about ¼ of a cup (keep a close eye on the sauce as it is prone to boiling over).

Sprinkle the xanthan gum over and whisk in.

Continue to boil until the sauce has thickened, then remove from the heat.

Stir through the sesame seeds, if using.

Serve the hot sauce over chicken, fish, steak or vegetables or allow to cool to room temperature before storing in an airtight container in the fridge.

Whisk all the ingredients for Yakisoba sauce. It&#039;s important to taste the sauce and see if you need to add more sugar (For example, some ketchup is sweeter than others while some Worcestershire sauce is less sour than others.). Set aside.

eggs (50 g each w/o shell)

pickle ((7 cornichons or 4 sweet gherkins))

Put water in a saucepan, and gently put eggs. Make sure the eggs are completely covered by water. Bring the water to boil on medium heat. Meanwhile you rotate the eggs with a spoon once in a while (this is a tip to make sure the egg yolk will be in center). Once the water boils, lower heat but keep the water boiling (but don’t let the eggs jumping around) for the next 12 minutes. Discard the water and run under cold water. When eggs are almost cool, they are ready to peel.

Meanwhile you dice the onion finely and soak the onion in cold water for 10 minutes to get rid of bitter flavor.

Finely chop the pickles.

Drain the onion after 10 minutes. Put it the center of paper towel and squeeze the excess water out.

In a bowl, break the eggs into small pieces with a fork.

Add the pickles, the onion, salt, and pe,pper and squeeze some lemon juice. Then add the mayonnaise (also parsley and karashi mustard) and mix all together. Cover and keep it in the fridge until used.

You can keep the leftovers in an airtight container and store in the refrigerator for up to 3 days.

Yakisoba Sauce Recipe

tbsp oyster sauce (or vegetarian oyster sauce)

tbsp rice vinegar

tsp raw sugar

hoisin sauce

tsp minced ginger

Japanese 7 Spice (to taste, or chilli powder)

Add the soy sauce, Worcestershire sauce, oyster sauce, rice vinegar, tomato sauce (or ketchup), raw sugar, hoisin sauce, ginger and Japanese 7 Spice powder into a small bowl and mix well.

Taste

Taste, and add a little of any ingredient until you&#039;re satisfied with the flavour.

Set a small sauce pot over medium heat. Measure and pour in the Mirin, soy sauce, and sugar. Stir to combine. Allow the mixture to come to a boil. Then reduce the heat to medium-low and simmer for 15 to 20 minutes, stirring occasionally.

The eel sauce is done when it has reduced by about half, and is thick enough to set up a little bit on a sushi roll. Remember, it will continue to thicken as it cools so remove it from the heat when it&#39;s just a bit runnier than desired.

Cool completely, then move the eel sauce to an airtight container and store it in the refrigerator for up to a month.
