Creamy Mango Ice Pops

mangoes (peeled and pit removed (see note))

Greek yogurt

sugar

Blend mangoes, yogurt and sugar until smooth. Mixture will be quite thick. Scoop into ice pop molds and freeze for several hours or overnight. Remove from molds according to manufacturer instructions.

Pineapple Mango Popsicles

Add all ingredients to a high speed blender or food processor.

Combine the defrosted or fresh mango chunks, banana, and frozen pineapple in the pitcher of a high-speed blender. If you&#8217;re using frozen mango that you have defrosted, there should be a little bit of liquid that you need to use too. If you are using fresh mango, you&#8217;ll need to use a blender that has a tamper to help push the ingredients into the blade (or add a few tablespoons of water or milk).

Pour the mixture into your popsicle molds. Freeze for at least 6 hours, or until frozen solid.

To remove the popsicles from the molds, run them under warm water for about 15 seconds. Then, carefully remove the popsicle from the mold.

Papaya Mango Popsicles

mango (fresh, about 1/2 to 1 mango)

papaya juice

First, cut a fresh mango into cubes. Here is a video showing the easiest way to cut a mango.

Add 1 tablespoon water to the corn starch to make a paste before adding it into the blender.

Next, add all of the ingredients into a blender and blend on high until they are fully combined and the texture is like a thick juice. 

Pour the juice into a popsicle mold and add the sticks. 

Freeze overnight until the popsicles are fully frozen. 

If you prefer to add in a slice of candied ginger to the popsicles do that before freezing. This adds an even spicier flavor and a chewy texture in the middle.

Vigorously shake the can of coconut milk to mix the contents inside. If the cream and liquid is still separated, whisk them together until smooth.

In a blender, add chopped mango, coconut milk, coconut yogurt, maple syrup, vanilla extract, salt, and cardamom. Blend until smooth and creamy.

Pour the mixture into each popsicle mold, filling ¾ full. Tap the popsicle molds against the countertop to remove any air bubbles. Carefully cover and insert a popsicle stick into each mold.

Freeze the popsicles for 4 hours or until firm. After, gently remove and enjoy!

Only 4 ingredients, and you can make these with fresh or frozen mangoes or even canned mango puree or pulp.EASY - Easy, no-bake summer treat. The addition of pickle juice or electrolytes introduces another layer of flavor that makes these popsicle EXTRA refreshing for summer!

Mango Popsicles (Refreshing &amp; Creamy)

mL pickle juice (1 cup (any pickle brine you like, OR unflavored electrolytes))

lime juice (from fresh limes)

tajin seasoning (optional)

If you’re using fresh mangoes, peel and cut the flesh from the mango, and discard the seed.

Chop the mango flesh into chunks and place them in a single layer on a parchment paper lined tray or plate.

Freeze (or partially freeze) the mango chunks for a few hours. This is an optional step, but it gives the popsicles a smooth, sorbet-like texture!

Place the pickle brine or electrolyte water in the blender, with half of the sugar, and about 3 tbsp lime juice. Then add the mango chunks. Add salt if you&#39;re not using pickle brine.

Blend the mixture until you have a smooth mango popsicle mixture. Use a blender tamper to help smoothly blend the frozen mango.

Taste the mixture and add more sugar or lime juice if needed, and blend to properly dissolve the sugar.

If you used frozen mango, the popsicle mixture will be thick like a soft sorbet. Thawed fruits will result in a more runny mixture. Both of these consistencies are OK!

OPTIONAL - Take about ¾ cup of the mango mixture and place it in a bowl. Add the tajin (amount adjusted to your preference), and stir it in. When making the popsicles, layer a few spoonfuls of the mango tajin mixture in between the regular mango mixture to add a little spice and heat to your popsicles.

Spoon in or carefully pour the mixture into popsicle molds. I use molds that have a capacity of 90 mL / 3 fl oz here, and this mixture made 12 popsicles. If you&#39;re using tajin, make sure to layer a little of the tajin mango mixture as well.Insert the popsicle sticks.

Transfer into the freezer to freeze for at least 6 hours (or overnight).

When you’re ready to serve, dip the mold in warm water for a few seconds and wriggle the popsicle to release it from the mold. Serve immediately, OR wrap unmolded popsicles really well in freezer paper or parchment paper or plastic bags and store in the freezer for later.
