You can buy tapioca pearls or boba from Walmart or Amazon (or your local Taiwanese store) then make the tea with a blend of your favorite black tea, sweetener, and half and half or non-dairy substitute. Just add ice and a wide straw, and you can have your favorite treat anytime!

In a medium pot over high heat, combine the water and tea bags. Bring to a boil, then remove the pan from the heat and let the tea cool to room temperature.

Bring a medium pot of water to boil over high heat. Once the water is boiling, add the tapioca pearls and boil until softened, about 20 minutes.

Set the strainer with the pearls over a medium bowl. Add the brown sugar to the strainer and pour the hot water over.

Stir to dissolve the brown sugar. Soak the pearls in brown sugar syrup for 30 minutes, then store the bubbles and syrup separately until ready to serve.

Assemble the tea: Divide the pearls and ice between 2 glasses, then add the brown sugar syrup, tea, and half and half.

Stir with a wide-opening straw, then serve.

Add 6 cups of very hot water to a pot. Add the tea and bring to a boil. Turn down the heat and simmer for 15 minutes.

Place the tea leaves in a brewing pot or French press.

Heat the water to 205°F / 96°C (if you don&#039;t have a thermometer to measure the temperature, bring the water to a boil, and then leave it off-heat for about 3 minutes to reach the correct temp.), and THEN measure 2 ¼ cup of water into the brewing pot. Stir once or twice to make sure the tea leaves are saturated with water, then cover the pot and let it sit for no more than 5 - 6 minutes.

Strain the tea leaves, and place the tea in the fridge to cool down.

Hot brewed tea

Place the tea leaves in a French press.

Pour the room temperature water into the French press, and stir the leaves to make sure they are saturated with water.

Press the French press plunger, until the tea leaves are just below the surface of the water, so that they remain submerged in the water.

Let the tea leaves steep for 12 hours, at room temperature. Strain the tea leaves, and place the tea in the fridge to cool down.

Cold brew tea

If you’re using homemade boba pearls, follow the recipe here to cook the boba pearls.

If you’re using quick cook boba pearls, follow the directions on the package to cook the boba pearls.

When the boba pearls have been cooked, place them in cool water to prevent them from sticking to each other.

Boba pearls

Place the sugar and water in a saucepan, and stir to combine. Heat over medium heat while stirring, to melt all of the sugar.

Let the syrup come to a boil. Cook for a further 2 - 3 minutes, until the syrup has thickened up slightly. Let it cool a little bit, while you cook the boba pearls.

Using a slotted spoon, transfer the boba pearls from the cool water into the warm syrup. Stir to coat. Use the pearls while slightly warm.

Sugar syrup (make this before cooking the boba pearls)

In a glass (15 - 16 oz), place some boba pearls, along with some of the sugar syrup.

Pour about 1 cup of brewed tea. The tea should be chilled or at least at room temperature (if you’re adding ice).

Add ice, and top up the glass with milk. Stir to combine. Taste and add more sugar syrup if you&#039;d like the drink sweeter.

How to Make Boba from Scratch (aka Tapioca Pearls) for Bubble Tea

60 ml or ¼ c water

95 g or ¾ c tapioca starch or flour

g sugar

In a saucepan over medium-high heat, add 40 grams of dark brown sugar and 60 milliliters of water and stir until the sugar is fully dissolved. Remove the pan from heat and make sure there are no bubbles any longer.

Add about 1 tablespoon of tapioca starch and mix in quickly before it gets too lumpy. Add the pan back onto the stove on medium-low heat and stir constantly until it begins to thicken. Once you start seeing the mixture thicken on the bottom of the pan, remove it from the stove and begin to stir until the entire mixture thickens.

Add the rest of the tapioca starch into the pan and continue to stir constantly until you incorporate all the starch into the mixture. It should become slightly sticky and thicker to stir.

Sprinkle tapioca starch onto a clean surface and transfer your dough. Sprinkle more tapioca starch on top of the dough and carefully knead until it&#039;s smooth and you get a less sticky texture. I knead for about two minutes and add more tapioca starch if the dough still feels too sticky. Pull the dough apart and if it snaps in the middle, then your dough is done kneading.

Cut the dough into quarters and place three of the quarters under cling wrap to prevent them from drying out.

Take one quarter and roll it into a long rope with ¼ of an inch diameter. Cut small pieces of about ¼ of an inch sections along the rope. Take one piece and roll it between the palm of your hands to form small balls. Add some tapioca starch into a bowl or sheet pan to prevent the balls from sticking. You want to move pretty quickly because you don’t want to dry out the dough. Repeat until you have formed all the boba balls.

Once you have enough balls you can start to cook them.

Making dough

Boil 10 cups of water in a large pot. Once it hits a boil, add ½ cup of boba. Wait for the boba to float and then lower to medium heat. Continue to cook on a simmer for 20 minutes.

Then move the pot off the stove, cover with a lid, and rest on the counter for an additional 20 minutes.

Strain the pearls and run them under cold water to stop the cooking process and remove the starchy outer layer.

If you want to sweeten your boba, put them in a bowl and mix in two tablespoons of dark brown sugar. Marinate for 10 minutes and serve with your favorite milk tea!

A popular drink in Japan, Royal Milk Tea is made with Assam and Darjeeling tea leaves and milk. You can add sugar or honey to suit your taste. It's a delicious drink to serve when you have friends over for tea time. Enjoy with some homemade matcha cookies or mochi!

Gather all the ingredients.

In a milk pan or small saucepan, add warm water and bring to a boil.

When the water is boiling, add tea leaves and reduce the heat and simmer for 90 seconds to 2 minutes. To make iced royal milk tea: You can cook the tea leaves a slightly little longer so ice will not dilute the flavor as much.

Add milk and slowly bring just to simmer. Meanwhile keep your serving cup nice and hot with hot water (drain the water before you serve tea).

When the tea is about to boil, remove from the heat and pour the tea through a tea strainer or fine mesh strainer and into your serving cup.

Serve with sugar or honey and sweeten it to your liking.

NOTE:
To make dark colored tea, use Assam tea and to make light colored tea, use Darjeeling tea.

Please note that the ratio for water is NOT double when you make 2 cups of royal milk tea. Water won't be evaporated as much so ¾ cup is right amount.

If you know how much sugar you like to add already, add sugar at the end before pouring into cup so sugar will be dissolved completely.

To make iced royal milk tea, you can cook the tea leaves a slightly little longer so ice will not dilute the flavor as much.

How to Make Royal Milk Tea (Recipe) ロイヤルミルクティーの作り方（レシピ）

This milk tea boba cake represents everyone's favourite bubble tea drink. The base is a light and fluffy genoise cake topped with a mascarpone royal milk tea cream, and a mountain of boba pearls on top.

Milk Tea Boba Cake

Eggs

Cup (50 grams) + 1 Tbsp (12 grams) Granulated Sugar

Tsp (2 grams) Cornstarch* (omit if you have cake flour)

Kosher Salt

Tsp Vanilla Extract (or 1/2 Tsp Vanilla Bean Paste)

Tbsp (15 milliliters) Milk

Tbsp (15 milliliters) Neutral Oil (like Vegetable Oil,

Tbsp (30 milliliters) + 1/2 Cup (120 milliliters) Heavy Cream

Cup (60 grams) Mascarpone Cheese

Tbsp

Tsp Vanilla Extract

Cup Uncooked Boba Tapioca Pearls

Line a 6- inch round cake tin with parchment paper on the bottom and around the sides. Don’t grease the pan. Set the pan aside. Preheat your oven to 325 degrees Fahrenheit.

Separate the egg whites from the yolk from 2 eggs. To the egg yolks, add 1 tsp of cornstarch (if you are using cake flour, skip this step), 1 tbsp of sugar, and a pinch of salt. Whisk until you cannot feel any sugar granules.

Using a stand mixer or an electric mixer, whisk the egg whites until they become frothy. Add 1/3 of the granulated sugar (total 1/4 cup sugar) and mix until the sugar is dissolved. Continue to add the sugar in thirds until the entire 1/4 cup of sugar is added. Before the meringue becomes forms medium peaks, add in your vanilla extract or vanilla bean paste and mix it in.

Once the meringue is well formed, add in your egg yolk mixture. Carefully mix in the egg yolks without deflating the meringue.

Sift in half of your flour (total 1/3 cup). Gently fold in half of the flour using a spatula. Fold the meringue from the outside, gently lifting the spatula and scooping on the outside of the bowl. This will prevent your meringue from deflating. Once you can no longer see any flour, sift in the last half of the flour and repeat folding until no flour remains visible.

In a separate bowl, add in 1 tbsp of vegetable oil and 1 tbsp of milk. Add in around 2 tbsp of the batter and mix well. It’s okay to deflate this small amount of batter. Pour the oil milk batter around the outside of the main batter and gently fold until it becomes one.

Pour the batter into your lined cake pan. Using a chopstick, swirl it around the batter to gently deflate air bubbles and evenly spread out the batter. Tap the cake pan on a flat counter once to again, deflate any air bubbles.

Bake at 325 Fahrenheit for 25 minutes, or until the top is golden brown. Do not open the oven door, until the cake is around 95% baked, otherwise, it will deflate. Once the top is golden brown, remove it from the oven and let it cool completely on the counter in the pan. The genoise may deflate slightly (especially around the sides) but that’s okay. The genoise should not deflate more than around 10-15% height-wise.

Genoise

Use store-bought or homemade boba pearls. To cook: Boil a medium-sized pot of water. Once the water comes to a boil, add in 3/4 cup of uncooked boba pearls. Cook for 30 minutes on medium-high heat, stirring once in a while.

After 30 minutes, remove the pot from the heat. Cover with a lid and let it sit for 15 minutes. After 15 minutes, add 1/4 cup of packed brown sugar (or to your level of sweetness) and mix. Remove around 1 cup of pearls and let it cool.

Boba Tapioca Pearls

In a microwave-safe cup, add in 2 tbsp of heavy cream. Warm it up for around 20 seconds, until it is warm to touch. Add in 2-3 tbsp of Royal Milk Tea powder (depending on how strong you want it) and mix well, until the powder is dissolved. Add in ¼ cup of mascarpone cheese and mix well.*If you don't have Royal Milk Tea Powder, steep 2-3 tbsp of heavy cream with one black tea bag of your choice. Cool slightly, then add mascarpone cheese. Continue on to step two.

Using a whisk, hand mixer, stand mixer (or even an immersion blender- which is what I used), add in ½ cup of heavy cream with 1 tbsp of granulated sugar. Whip until you form soft peaks. *If you don’t have Royal Milk Tea Powder, and are using black tea to flavour the cream, add in an additional tbsp of sugar.*

Add the milk tea mascarpone to the whipped cream and add ½ tsp of vanilla extract. Mix until the mascarpone is just mixed into the whipped cream.

Mascarpone Milk Tea Cream

Remove the cooled genoise from the cake pan. Remove the parchment paper and place the cake onto a plate. Add a generous amount of mascarpone milk tea cream on top. You can add some to the side if you like, but I chose not to for a more rustic look.

Add around 1 cup of cooled boba pearls on top of the cream. Slice and serve immediately! Boba pearls are best consumed the day of, however will still be good for one day in the fridge.

Place almond milk, honey and matcha powder in a blender and blend. Add ice and blend again, adding more ice to desired thickness. I like this thick enough to stay on a spoon. Enjoy!

However you do require a specialty ingredient - Ube and ube extract which can be found in Asian stores (or Filipino stores)

226 g frozen ube, thawed (1/2 packet, frozen ube)

coconut milk

tbsp vanilla extract

tbsp ube extract

quick cook tapioca pearls

½ cup of the ube base

ice cubes

Honey (optional)

Place all the ingredients (except for the ube extract and evaporated milk) in a saucepan.

Cook the mixture while stirring frequently, and bring it to a boil.

Continue to stir more frequently while cooking, until the mixture becomes thick. The consistency at this stage should be such that when you stir it with a spatula, it should leave a trail in the mixture. Stir in the ube extract at this point.

Add about ½ cup of evaporated milk to get the mixture to a thick but pourable consistency. Add more if needed. Heat through for 1 – 2 minutes.

Place the ube base in a jar and store in the fridge for up to 4 – 5 days.

First, cook the tapioca pearls according to package instructions. If you&#039;d like to make my homemade boba pearls instead, cook them according to the recipe here.

Let the cooked boba pearls soak in cold water (just for a few minutes) until you get the drink ready. Alternatively, mix the drained tapioca pearls with some honey to keep them from sticking to each other.

Place the ube base in a blender, along with the ice and milk. Blend until the mixture is smooth and the base has mixed in well.

Add honey if you like your drink to be sweeter.

Divide the tapioca pearls into two glasses (at least 10 oz capacity).

Optional -  Create some purple streaks with the ube base along the wall of the glass (see pictures in the post). If the ube base is too thick the following day, take a small portion of it and heat it gently in the microwave to make it more spreadable.

Pour the ube milk into the two glasses and serve with boba straws.

Combine 2 cups water and cinnamon sticks in a small saucepan. Bring mixture to a boil.

Remove water from heat, then add tea bags. Cover pot and let tea steep for 7 minutes.

While tea is steeping, heat milk in microwave or another saucepan until warm. Set aside.

When 7 minutes has passed, remove tea bags and cinnamon sticks from saucepan.

Stir in maple syrup and vanilla extract. Then add milk.

Divide tea between 2 cups and serve immediately. Enjoy!
