We really enjoyed these scrumptious tea sandwiches. They're slightly salty and creamy from the Bleu cheese spread. The mildly sweet and crisp slices of pear are a tasty contrast to the creamy filling. They are perfect sandwiches for parties or afternoon tea.

Bleu Cheese, Walnut & Pear Sandwich

There are so many things to love about this easy pasta dinner. It's simple, made with inexpensive ingredients, beautiful, and tastes amazing. The Italian sausage gives this unmistakenly Italian flavor. Colorful bell peppers add a mild flavor and combine with the tomatoes nicely. Pasta isn't the star of this recipe so the mild egg noodles are the perfect pasta choice. Wine adds a lot of flavor, as do the fresh parsley and basil. Topping with a bit of fresh Parmesan makes is tasty. This recipe is casual enough to be served as a weeknight dinner but could be presented on a platter and served at a dinner party. If you have leftovers, this is even better the next day.

This is a traditional dish all Puerto Ricans could relate to, it's very good and flavorful and could be eaten with pork chops or fried chicken or any other meat.

The New Year always sparks my resolve to eat more vegetables. I have not made this cashew cabbage recipe in a long time, but the flavors are wonderful, plus it's versatile - you can use what you have on hand.

These delicious Hawaiian roll ham sliders are little delights that are great for a picnic, a party, a main dish or just a snack. They are a great "go to" recipe when asked to bring something to any gathering.

Hawaiian Roll Ham Sliders Recipe

Croquettes are a fantastic way to use leftovers. For testing we used turkey, but ham, chicken, or roast beef could easily be substituted. A great recipe to have on hand to use extra meat and vegetables from a holiday meal. After frying, the bread crumb outside is crunchy and the savory filling is soft and full of flavor. We tried them dipped in mustard and on a roll with mustard. Both ways are delicious!

Kroketten (Dutch Croquettes)

Very kid-friendly, this is a classic tater tot casserole. With one pound of ground meat and a few other ingredients, you can easily feed a family. Switch up the veggies with what you prefer. We opted for ground beef, but ground turkey would be great too. The soup mixture adds a creaminess that mixes with the tater tots. A weeknight meal that's perfect for a busy parent. If there is any left at the end of the meal, it heats up well for leftovers the next day.

Delicious southern butter beans made from dry beans. This recipe is not only yummy but easy on the pocketbook. I like to save the fried bacon for a salad topping, but my husband likes them cooked in the beans. Either way these are sure to be a hit !
 I will divide leftovers into freezer bags as sides for other meals. I hate buying canned butter beans and this way you save money and homemade just taste so much better !
We'll have a big pot of them served with a skillet of cornbread and a wedge of onion.

This is a very simple ham and bean recipe. A meaty smoked Ham Hock and homemade chicken broth with give plenty of flavor to the beans.  But if you want celery and carrots or anything else added in, go for it.  It's all good! :)

My last test for the "grilled cheese weekend"...this morning we had panko crusted grilled cheese sandwiches with tomato. Very yummy and crusty. I used Italian bread instead of regular sliced bread. The possibilities for these sandwiches are endless! Enjoy :)
