The perfect traditional Greek beef stew (stifado) recipe. Find out how to prepare beef stifado the traditional Greek way for that melt-in-the-mouth texture you've been looking for.

Beef Stifado recipe (Greek beef stew)

1.5 kg pearl onions, peeled (60 ounces)

olive oil

red wine

tbsps red wine vinegar

cognac

large, juicy ripe tomato, roughly chopped

To prepare this delicious Greek beef stifado recipe, heat the oil in a saucepan, add the meat (in batches) and sauté, until browned on all sides. Do not add all the meat in the sauce pan, rather sauté in batches, so that the temperature of the oil remains high and the meat is sealed. When done, remove with a slotted spoon, place on a platter, cover and set aside.

Carve the baby shallot onions crosswise, add in the same oil used to browned the meat, turn down to medium heat and sauté until the onions have softened, but not browned (about 10 minutes).

Pour in the cognac, the wine and red wine vinegar, cover and let it simmer for 3 minutes.

Pour the meat along with its juices to the saucepan, add the chopped tomato, tomato puree, bay leaf, allspice berries and nutmeg. Bring to a boil, turn the heat down and simmer the beef stifado for 1 1/2 hours or until the beef is tender and the sauce has thickened. While the beef stifado is simmering, check if it needs some water; you don&#8217;t want it to dry out. If it does, pour in half a cup of boiled water and stir. Towards the end of cooking time season well with salt and pepper to taste.

Serve beef stifado with pasta and grated cheese, or boiled new potatoes. Enjoy!

Roast Pork Tenderloin With Pearl Onions

Sprinkle tenderloins with salt and pepper.

Put the tenderloins in a small roasting pan large enough to hold them side by side, and brush with oil. Sprinkle evenly with cumin and rosemary. Add bay leaf. Cook the pork over medium heat on top of the stove, turning so the pieces are lightly browned all over. Put in the oven.

Meanwhile, put the onions and potatoes in a saucepan. Cover with water and salt to taste. Bring to a boil and simmer 5 minutes. Drain well.

Scatter the onions and potatoes around the meat. Turn the pork, and continue baking 30 minutes, basting once in a while.

Drain fat from the pan, and discard bay leaf. Add chicken broth, return to the oven, and bake 5 minutes more.

Remove from oven, and cut pork crosswise into slices. Sprinkle with parsley, and serve immediately with onions, potatoes and pan gravy.

Classic Creamed Pearl Onions

Preheat oven to 375 degrees F and grease an 8x8 baking dish.

Bring a large pot of water to a boil. Once boiling, add frozen onions and simmer for 5-8 minutes or until tender. Drain.

In another large saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.

While continuously stirring, slowly add in the heavy cream and broth to saucepan. Simmer another 1-2 minutes over low heat and add nutmeg.

Remove from heat and stir in ¼ cup of the parmesan cheese and season with salt and pepper.

Add onions to sauce and stir until fully combined.

Transfer mixture to the prepared baking dish and top with remaining cheese.

Bake for 30-35 minutes or until top begins to brown.

In a large heavy-bottomed saucepan or Dutch oven, heat the bacon and oil over medium heat. Cook, stirring occasionally, until the fat renders and the bacon is crisp, 8 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Set aside.

Add the chicken legs to the pot, increase the heat to medium high and season with salt. Cook the chicken, turning occasionally, until brown on all sides, 10 to 12 minutes. Sprinkle with the flour and stir to distribute evenly, 1 to 2 minutes. Add the wine and reduce by half, 1 to 2 minutes. Add the water, potatoes, pearl onions, carrots, garlic, thyme and reserved bacon. Season with more salt and pepper, and bring to a boil. Reduce the heat to medium, cover and cook until the chicken is cooked through and the vegetables are tender, 20 to 25 minutes. Add the mushrooms, cover and cook for 5 more minutes. Stir in the peas and cook for another 2 minutes to heat through. Taste and adjust the seasoning.

Soak the onions in cold water to make it easier to peel them; then peel them.

Thyme-Roasted Pearl Onions

Preheat the oven to 375°F and line a shallow baking pan with parchment paper.

Combine the onions and thyme leaves in a large bowl. Drizzle with the melted butter and honey, season with salt and pepper and toss to coat thoroughly.

Arrange the onions in a single layer on the prepared baking sheet and roast the onions until tender and lightly caramelized, 18 to 22 minutes. Transfer to a bowl and serve.

Note: This recipe may be made ahead and reheated. Remove the onions from the refrigerator 30 minutes in advance, then heat in a covered casserole at 325°F oven for 25 to 30 minutes.

Beef bourguignon with celeriac mash

Heat a large casserole pan and add 1 tbsp goose fat.

Season 600g large chunks of shin beef and fry until golden brown, about 3-5 mins, then turn over and fry the other side until the meat is browned all over, adding more fat if necessary. Do this in 2-3 batches, transferring the meat to a colander set over a bowl when browned.

In the same pan, fry 100g sliced smoked streaky bacon, 350g peeled shallots or pearl onions, 250g chestnut mushrooms, 2 sliced garlic cloves and 1 bouquet garni until lightly browned.

Mix in 1 tbsp tomato purée and cook for a few mins, stirring the mixture. This enriches the bourguignon and makes a great base for the stew. Then return the beef and any drained juices to the pan and stir through.

Pour over 750ml bottle red wine and about 100ml water so the meat bobs up from the liquid, but isn’t completely covered. Bring to the boil and use a spoon to scrape the caramelised cooking juices from the bottom of the pan – this will give the stew more flavour.

Heat oven to 150C/fan 130C/gas 2. Make a cartouche: tear off a square of foil slightly larger than the casserole, arrange it in the pan so it covers the top of the stew and trim away any excess foil. Cook for 3 hrs.

If the sauce looks watery, remove the beef and veg with a slotted spoon, and set aside. Cook the sauce over a high heat for a few mins until the sauce has thickened a little, then return the beef and vegetables to the pan.

To make the celeriac mash, peel 600g celeriac and cut into cubes. Heat 2 tbsp olive oil in a large frying pan. Tip in the celeriac and fry for 5 mins until it turns golden. Season well with salt and pepper.

Stir in 1 or 2 sprigs of rosemary and thyme, 2 bay leaves and 4 cardamom pods, then pour over 200ml water, enough to nearly cover the celeriac. Turn the heat to low, partially cover the pan and leave to simmer for 25-30 mins.

After 25-30 mins, the celeriac should be soft and most of the water will have evaporated. Drain away any remaining water, then remove the herb sprigs, bay and cardamom pods.

Lightly crush with a potato masher, then finish with a glug of olive oil and season to taste.

Spoon the beef bourguignon into serving bowls and place a large spoonful of the celeriac mash on top. Garnish with one of the bay leaves, if you like.

Balsamic Glazed Cipollini Onions (Cipollini Agrodolce)

Bring a saucepan of water to a boil. Drop in the onions and boil 2 minutes. Drain and cool slightly.

Use a small, sharp knife to slice off the top of the onions, then slip off the skins. Trim any hairy roots, but leave the stem end intact so that the onions don't separate. If the onions are larger than 1 1/2-inches diameter, slice into halves or quarters.

Heat the butter and oil in a medium (8-10-inch) nonstick skillet over medium-high heat. When the butter stops foaming and begins to smell nutty, add the onions to the pan. Cook 5 minutes, or until the onions are browned, stirring occasionally.

Sprinkle the onions with the sugar and salt. Pour the water and vinegar over them (the pan will sputter). Turn the heat down to medium and cover the pan. Cook 5 minutes.

Uncover the pan and continue cooking until the liquid in the pan looks syrupy and has large bubbles, another 2-3 minutes. Sprinkle with the thyme and serve.

Great recipe. The onions don't get overcooked!

This is a winner. Easy side to accompany any dish. At the end, I quartered the onions and mixed them back in the pot with the glaze and it took them to the next level. I used rosemary and was absolutely excellent. Also I agree with someone you could leave out the sugar if you wanted and they would be just as good.

My late mother always did the caramelized pearl onions at Thanksgiving - your notes talk about this holiday dish served in a "bowl" and having an unappealing texture.  I never had her recipe until it was discovered by a cousin last year.  In my years of attempts to recreate it, I found frozen pearl onions always had a slimy texture so I switched to fresh and solved it.  The other key to success was roasting the pearls in a single layer in a clay tart baking dish.  Crispy edges !  If you pm me, I will send you her recipe.

I made your recipe with a few tweeks of my own.  It was wonderful, but not what I remember cooking. Many (!) years ago I lived in Bay Ridge, Brooklyn.  My Italian mother-in-law introduced me to cippolini.  However, the onions which are called by that name aren't the ones I remember cooking.  They were small, brownish/yellow in color and when we cleaned them we did it under running water because they emitted a sticky, slimy juice.  They resembled small shallots. You mentioned that in your description of the recipe.  I can't find those anywhere in the U.S.  Can you direct me to where I might purchase them.  I live about 100 miles south of Chicago.  Thanks

I only made this because I received those tiny onions from a farm share today. It was delicious and i think i could use regular onion slices in place of tiny onions. So good!!
