On a lightly floured surface, roll out the pastry. Use the pastry to line a 23cm tart tin, keeping any off-cuts in case you need to fill any cracks after blind-baking. Prick the base of the pastry case with a fork and chill for 30 mins, or until firm.

Heat oven to 190C/170C fan/gas 5. Line the pastry case with baking parchment, fill with baking beans and bake for 15-20 mins until the sides are set. Remove the beans and parchment and return the tin to the oven for 5-10 mins until the pastry is golden and the base is set. Leave to cool.

Increase oven to 200C/190C fan/gas 6. Use an electric whisk to beat the butter and sugar together until light and fluffy. Keep the beaters going and pour in both of the syrups. Gradually add the eggs, ¼ tsp salt and the vanilla, then whisk until combined. Stir through the pecans, then pour the mixture into the tart case. Bake for 10 mins. Turn heat down to 160C/140C fan/gas 3 and continue baking for 30-35 mins (the pie should be golden brown and the filling should wobble a little in the centre when shaken). Leave to cool in the tin. You’ll probably need to run a knife around the tin to lift out the pie. Serve with whipped cream or ice cream.

Preheat the oven to 350 degrees Fahrenheit.

Grease a 12-cup muffin tin generously with butter.

Roughly chop the pecans. Thinly slice the green onions. Dice the roasted red peppers.

In a medium bowl, whisk together the eggs, milk, garlic powder, smoked paprika, kosher salt, and a few grinds of black pepper. Divide the mixture evenly into the muffin cups (fill them about halfway). Sprinkle the shredded Parmesan cheese evenly into each cup. Then top with the green onions, then the red peppers. Finish by adding the pecans, divided evenly between the cups.

Bake for 20 to 25 minutes until golden brown and puffed. (When you remove them from the oven, they’ll immediately start to deflate and will continue deflating as they cool.) Allow to cool for 5 minutes in the tin, then remove. Eat immediately, refrigerate up to 4 days, or freeze up to 3 months. They work great as an on-the-go breakfast or lunch, and are good at room temperature or cold (don’t need to be reheated).

French Quarter Cheese Spread

In a small bowl, combine the cream cheese, onion, and garlic until thoroughly incorporated. Transfer to a serving plate; shape into a 6-inch disk. Cover with plastic wrap and chill for 1 hour, then bring to near room temperature before you make the pecan mixture.

In a small saucepan, combine the butter, brown sugar, Worcestershire sauce, and mustard. Cook and stir over medium heat for 2-3 minutes or until sugar is completely dissolved. Remove from the heat; stir in pecans.

Cool slightly for a couple minutes. Spoon over cream cheese mixture, allowing it to fall over the sides.

Preheat oven to 300°F. Line baking sheets with parchment.

In a large bowl with a hand mixer (or stand mixer fitted with the paddle attachment) cream the butter, sugar and vanilla until light and fluffy.

On low speed add the flour, salt and pecans; mix until combined.

Roll into 1-inch balls and place 1-inch apart on prepared baking sheets.

Bake in preheated oven for 45 minutes or until the bottoms are  golden brown.

Cool 5 minutes then roll in sugar. Cool completely and roll in confectioners sugar again.

Store in an airtight container at room temperature for 5-6 days.

Chocolate Chip Pecan Cookies

Prep: Preheat the oven to 350F. Spray or line a large baking sheet and set aside. Prepare the flax “egg” by mixing the flaxseed and water well; set aside for at least 5 minutes to let thicken. Combine the chocolate chips and pecans together in a small bowl; set 1/4 cup of the mixture aside, to top the cookie dough before baking.

Cream the Butter: Add the softened butter, cane sugar, and brown sugar to a large mixing bowl or stand-mixer. Use an electric mixer to cream the butter and sugar together on low speed for 3 to 5 minutes, until the butter is smooth, light, and fluffy. Scrape the sides of the bowl with a spatula as necessary.

Wet Ingredients: Add the flax “egg” and vanilla to the bowl and beat again, until the mixture is smooth and combined.

Dry Ingredients: Add the flour, cornstarch, baking soda, baking powder, cinnamon (if using), and salt. Mix well until a thick, non-sticky dough forms. Add the chocolate chips and pecans to the batter and fold into the dough using a spatula.

Form the Cookies: Use a cookie scoop or spoon to form 12 cookies with ~3 tablespoons of dough per cookie. Roll each cookie into a smooth ball and space evenly across the prepared baking sheet. Sprinkle the remaining chocolate and pecan mixture across the top of each cookie dough ball, pressing it in slightly so it sticks.

Bake: Bake in the middle rack of the oven for 10 to 12 minutes; the cookies will look puffy and pale, but the bottom edges should be golden.

Cool: Take the cookies out of the oven and carefully “drop” the baking sheet onto the counter a few times to help them deflate. Sprinkle with flaky salt, if desired. Let the cookies rest on the baking sheet for another 10 minutes, where they will deflate fully. Transfer to a wire rack and let cool completely.

Serve &amp; Store: Enjoy the cookies immediately, or store in an airtight container for up to 5 days. You can also store the baked cookies in the freezer for up to 2 months, but I would recommend storing the cookie dough balls instead and baking when desired :)

I believe the recipe is good, but the baking time was not good for my oven. My pecans burnt. I was by the oven the entire time. I'll try it again with less heat next time.

Wonderful, have made them several times, they are delicious!!!

I followed the directions exactly -- using use raw pecans and flipping halfway through cooking time-- continuing to cook the full time even though they smelled so good already.  Once they cooled, they were perfect.  I can't believe such a simple recipe tastes so good.

Twice the baking time needed. Cut back on butter also. Mine burned and were greasy.  The package gave accurate baking times, but I hadn’t seen that.  These were for an event and I couldn’t make another batch- salvaged them with a few sprinkles of tajin and served.
