Perfect Baked Plantains Recipe

Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper.

Cut the ends off each plantain and score the peels from end to end, making sure not to cut through the plantains. Pull the peels off and discard.

Slice the plantains on an angle to make longer pieces, 1/4- to 1/3-inch thick.

Pile the plantain slices on the baking sheet and drizzle with oil. Toss to coat all the plantain strips on both sides. Lay them out in a single layer. Then sprinkle generously with salt.

Bake the plantains for 10 minutes. Then flip and bake another 10 minutes. Serve warm or at room temperature.&nbsp;

Fried Sweet Plantains make the perfect side dish for African and Latin meals or a wonderful snack all by itself. They are crispy on the outside and soft on the inside. Sooo good with rice &amp; beans, stews, or a replacement for tostadas! Amazingly delicious!

Using a sharp knife cut both ends off the plantain. This will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain.

Cut plantains in diagonal pieces or medium-sized slices and set them aside. You can make them smaller by cutting the pieces in half.

Heat oil in a large skillet over medium-high. Test if oil is ready by carefully trying out a slice of plantain. Oil should bubble on contact before proceeding with the rest. If it doesn’t, wait another minute or two. If oil is too hot, remove from heat and wait for about 2 minutes before proceeding.

Fry in batches until the plantain slices have reached the desired color (golden brown), turning once, about 2-3 minutes per side. Then continue cooking, turning plantains occasionally until soft and deep golden brown, 5–7 minutes.

Carefully remove plantains with a slotted spoon and transfer them to a paper towel-lined plate or tray. Season with salt and/or cinnamon sugar, if desired. Serve hot.

Plantain chips or Plátanitos are very popular in Colombia. You will find them in any supermarket in bags, just like you find potatoes chips in the United States. However, the best platanitos are prepared fresh at home. Try them with avocado sauce.

Grease parchment paper with a little avocado oil to ensure the chips don&#039;t stick. Place plantain slices on parchment paper in a single layer, spacing them about 1/2 inch apart. Bake for 15-20 minutes until golden brown and crispy. I found 18 minutes was the sweet spot.

Remove from oven and let cool completely on baking sheets. If you have excess oil on the sheets, try to wipe it off. Sprinkle with sea salt. Enjoy!

To Make the Mojo Sauce:

Add the garlic cloves, oregano, salt and pepper to a mortar and pestle. Grind and twist and grind and twist again to make a paste. Slowly add the orange juice and lime juice and then lastly, the olive oil. Give it a taste and adjust the salt according to taste.

To Fry the Plantain Chips:

Line a cutting board with a few layers of paper towels. Heat about 3 inches of oil 350-360 degrees F. Peel plantains and slice with a vegetable peeler or a mandolin. Or you can thinly slice them using a knife.

Gently drop the plantain strips into the hot oil. Cook for 30 seconds to a minute, flipping them over about halfway through. Remove and transfer to the paper towels.

Repeat until you’ve worked your way through the plantains. Sprinkle with salt and serve alongside the mojo sauce.

This is a great recipe and perfectly in tune with a starter dish I get in Florida at a Cuban restaraunt. Will be making again very soon.
