Creamy Spinach Rice

Jasmine Rice

Tbsp Canola oil

chicken broth

heavy cream

oz cream cheese

salt & pepper

oz fresh spinach (coarsely chopped)

parmesan cheese (grated)

Monterey Jack Cheese (grated)

Saute rice in oil for 2 minutes. Add the broth, heavy cream, cream cheese, spices and bring to a boil. Simmer for 10 minutes.

Stir in the spinach, parmesan cheese and simmer for 10 more minutes.

Stir in the Monterey Jack cheese and serve.

How to make creamy Spinach Rice

Here’s the very best sauteed spinach recipe, guaranteed to make eating your greens taste amazing! Even better, it takes just 10 minutes to whip up.

Sauteed Spinach (in 10 Minutes!)

If your spinach is in a bunch, chop off the stems. For bunch or baby leaves, roughly chop the leaves (this should only take a few seconds, just to get the larger pieces a bit smaller).

Heat the olive oil in a large skillet. Add the whole garlic cloves for 2 minutes, stirring occasionally. The carefully the add spinach leaves and cover the pan. It will seem like a lot of volume, but it will wilt down to be very small. Cook for 2 minutes.

Remove the lid. Depending on the size and maturity of your spinach leaves, it may already be done, or stir and continue cooking about 30 seconds until the spinach is wilted but still bright green.

Stir in the kosher salt and fresh lemon juice. Taste and add additional salt to taste: spinach is very susceptible to salt, so use only small bits at a time! The flavor should pop but not be salty.

This nutritious vegetarian curry recipe is made with spinach, garlic and lots of wonderful aromatic spices for a quick and easy dinner.

Fenugreek and garlic spinach curry

sunflower oil

tsp fenugreek seeds (see tips)

½ tsp asafoetida (see know-how)

garlic cloves,

washed,

onions,

tsp salt

tsp turmeric

tsp coriander

tsp cumin

1½ tsp medium red chilli powder

Heat the oil in your largest heavy-based pan with a lid for 2 minutes over a medium heat. Add the fenugreek seeds and stir through the warm oil for a few seconds. Stir in the asafoetida and garlic, then fry until the garlic starts to brown (about 30 seconds).

Add half the spinach, cover and cook for 3 minutes. Add the onions and emaining spinach, stir gently, then cover again and cook for 5-6 minutes until totally wilted.

Mix everything together, then add the salt, turmeric, coriander, cumin and chilli powder, gently stirring it in, and cook uncovered for 4 minutes. Taste and season, then serve immediately. This recipe is from Prashad at Home by Kaushy Patel (RRP £25; Saltyard Books).

Stuffed Pork Chops

sweet or smoked paprika

garlic powder

salt and fresh ground pepper, (to taste)

vegetable oil, (divided)

garlic, (minced)

baby spinach

Preheat oven to 400˚F.

Insert a sharp paring knife through each pork chop; carefully cut an opening to create a pocket. Don't cut all the way through.

Season the pork chops with paprika, garlic powder, salt, and pepper. Set aside.

Heat 1 tablespoon oil over medium-high heat in a large oven-safe skillet.

Stir in minced garlic and cook for 20 seconds, or until fragrant.

Add the spinach and cook for 1 minute.

Stir in the blue cheese, season with salt and pepper, and continue to cook for 1 more minute, or until spinach is wilted and cheese has just started to melt.

Remove from heat.

Stuff each pork chop with the prepared spinach mixture and secure the pork chops with toothpicks. I use 6 to 8 toothpicks per pork chop, depending on the size of the chop.

Wipe down the skillet and set it back on the stovetop; heat remaining oil over medium-high heat.

Sear the pork chops in the skillet for 3 minutes per side. You may want to do this in batches because it will be much easier to flip the pork chops over when there's only two pork chops in the skillet.

Transfer all the pork chops to the oven and continue to cook for 10 to 12 more minutes, or until internal temperature of the pork chops reaches 145˚F. Use an Instant Read Thermometer to check for doneness. Do not overcook the pork chops because you&#x27;ll end up with tough, dry pork.

Remove from oven and let stand 5 to 8 minutes.

Serve.

This easy pizza recipe with ham, spinach and mascarpone will quickly become a go-to midweek supper or weekend lunch dish.

Ham pizza with spinach

Pillsbury Pizza Kit (from large Sainsbury’s stores)

l small pinch of chilli flakes (optional)

tomatoes, sliced

mascarpone

Preheat the oven to 220°C/fan200°C/gas 7.

Open the Pizza Kit packet according to the instructions. Unroll the pizza dough and transfer to a large baking sheet lined with baking paper. Spread the tomato sauce from the kit over the base and sprinkle with chilli flakes, if you like.

Place the spinach in a colander and pour over boiling water. When wilted, drain, cool slightly, then squeeze out any excess water and scatter over the pizza base. Top with the tomato slices, then add dollops of mascarpone.

Transfer to the oven and bake for 10-15 minutes until the base is golden, crisp and cooked through. Drape over slices of ham, sprinkle with Parmesan shavings and add a good twist of black pepper. Serve hot.

This Spinach and Feta Tarte Soleil Is an Easy and Impressive Appetizer That Can Be Whipped Up in Less Than One Hour, and No Fancy...

Spinach and Feta Tarte Soleil

Spinach 2 (10-oz) packages

Scallions 2

tbsp

Feta cheese 2½ oz

cloves

Lemon zest 1 tbsp

Kosher Salt

Black pepper ¼ tsp

Frozen puff pastry 1 (17.3-oz) package

All-purpose flour 1 tbsp

Eggs 1

Make filling

In a bowl, mix together chopped spinach, 2 finely chopped scallions, 2 tablespoons finely chopped dill, 2½ ounces crumbled Greek feta, 2 cloves minced garlic, 1 tablespoon lemon zest, kosher salt to taste, and ¼ tsp freshly ground black pepper.


Prepare pastry

Place one of the pastry sheets on a lightly floured piece of parchment paper. Roll out the pastry to form a 12-inch square. Use a pot lid or a plate to cut out a 10 or 11-inch circle in diameter. Transfer to a baking sheet and chill while you prepare the second sheet of pastry.


Preheat oven

Brush pastry with egg wash

Remove the chilled pastry sheet from the fridge and brush the egg wash all along the edges.


Assemble tarte

Spread the filling over, leaving a ½ -inch border. Top with the second circle and press gently to seal.


Slice rays 

Place a 2-inch bowl or glass in the center of the pastry. Transfer the tarte with parchment paper to a work surface. Using a sharp knife, cut away from the bowl 12 to 16 even rays, depending upon how big your puff pastry circle is.  


Twist rays

Gently transfer the tarte with parchment paper back to the baking sheet. Working with one ray at a time, carefully twist 3 or 4 times. Brush all over with egg wash. Season with more salt and pepper if you wish. 


Bake

Bake the tarte in the middle of the oven for 30-35 minutes or until well-browned.


Serve

Let the tarte slightly cool before transferring it to a serving platter. Serve with a dip of your choice and enjoy!
