The Ultimate Strawberry Filling for Cakes Tarts and Desserts

Place strawberries in a saucepan with the sugar,  lemon juice, and salt.

Divide the water into two - pour half with the fruit and combine the other half into the cornstarch/cornflour.

Heat the fruit on low to medium until sugar is dissolved shaking the pan to cook evenly.

Add the well-mixed cornstarch mixture into the bubbling fruit.

Continue to cook on low - the mixture will thicken and looks glossy.

The color will change from an opaque light red to a translucent&nbsp;deep strawberry red color.

When thick enough to coat the back of a wooden spoon or spatula it&#039;s ready.

Check consistency - for a cake filling you can make a bit more thicker.&nbsp;Personally, I prefer one consistency for all. Thick and not too runny.

At this point, you can strain the filling by simply pouring it thru a sieve. Or leave it fruity and chunky just as I have here.

Remove from heat - Pour into a mason jar.&nbsp;Let cool completely.

There is no rival for homemade strawberry sauce. It has just 3 ingredients and this is the easiest strawberry sauce recipe. This strawberry sauce is completely wonderful over ice cream, pancakes, waffles, pie, cheesecake, this trifle, you name it!

Strawberry Sauce Recipe

(rinsed,

sugar

lemon juice (from 1/2 Lemon)

In a medium saucepan, combine sliced strawberries, 1/3 cup sugar and 1 Tbsp lemon juice. Place over medium heat and bring to a boil, stirring occasionally. Strawberries will release juice without any mashing required.

Reduce heat and simmer 20-23 min or until sauce is thickened, stirring occasionally. Remove from heat and cool to room temperature. Keep in mind sauce will thicken up slightly as it cools and even more with refrigeration.

Homemade waffles are super easy to make and this recipe has minimal ingredients. A delicious way to treat your sweetie to a special breakfast. Turning the waffles red makes these fluffy waffles fun. The fresh strawberry sauce is tasty and a pretty topping. It would be yummy on ice cream or shortcake.

These Make-Ahead Berry Yogurt Parfaits are perfect for breakfast, meal prep or a snack!

Make-Ahead Berry Yogurt Parfaits

light butter ((I use Land O’Lakes light butter spread with canola oil))

berries

white granulated sugar

Greek Yogurt

Melt the butter in a small saucepan over medium heat. Add the berries and stir to coat with the butter. Cook uncovered for about 5 minutes, stirring occasionally. In a small dish, combine the cornstarch and hot water and stir together until thoroughly combined. Pour the sugar and cornstarch slurry over the berries and stir to combine. Once the mixture is bubbling (should happen almost immediately), cover the pan and reduce the heat to low. Cook for another 2-4 minutes until the mixture thickens.

Once the berry sauce is cooked, transfer it to a container you can refrigerate and let it cool on the counter for a bit before transferring it to the refrigerator. Refrigerate until cooled (about an hour).

To build each parfait, measure out ¾ cup of yogurt and place about half of it in the bottom of a 7-8 oz sealable mason jar or yogurt cup (the ones I use are linked in the post above). Spoon about 2 ½ tablespoons of berry sauce on top of the yogurt and then top with the remaining yogurt. Repeat with the remaining ingredients to build six parfaits. Place the air-tight lid on to seal and refrigerate until ready to use. Eat within 5 or so days.

I absolutely LOVE this recipe!! I’ve made it about 10 times now and I just cannot get enough. I also sometimes like to make the strawberry sauce and let it cool, then mix it in with the cream cheese filling before I stuff the egg roll wrappers. DELICIOUS!!

I made these and when frying the rolls, the cheesecake started oozing out a bit and I wrapped these really well so I don’t get what I did wrong.  Also when I turned them over, the wrap was so thin it punctured :(

These made from scratch strawberry pancakes are perfectly light, fluffy, and crispy around the edges. Topped with fresh strawberries and a lightly sweet strawberry sauce, these homemade pancakes are a perfect weekend brunch recipe.

Strawberry Pancakes with Strawberry Syrup

lime juice

milk

white vinegar or lemon juice

flour

baking powder

baking soda

salt

butter

Combine strawberries (except for the ones reserved), 1/4 cup sugar and lime juice in small saucepan. Simmer over low heat for ten minutes stirring every couple of minutes. Remove from heat and allow to cool. Sauce will thicken upon cooling.

Combine milk and vinegar in small bowl and set aside for 5 minutes.

Combine flour, 3 tablespoons sugar, baking powder, baking soda and salt in large mixing bowl.

Add melted butter, egg, and vanilla to milk mixture.

Pour milk mixture into flour mixture stirring with whisk just until combined. Gently fold in the reserved strawberries; resisting the urge to over-mix.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cup of batter onto the skillet.  Cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

These will have everyone running out of bed to get some breakfast!

Strawberry Sauce

strawberries (cleaned, divided)

Take 1 c. of the strawberries, hull and chop. Add them to a small bowl and mash, set aside.

Hull and chop the remaining 1 c. of the strawberries and set aside.

In a medium saucepan, stir together the sugar and cornstarch. Then stir in water and the mashed strawberries.

Bring strawberry mixture to a boil, stirring constantly. If you desire a darker red color you can stir in red food coloring at this time.

Cook and stir the strawberry mixture for  3 minutes or until it has thickened.

Remove from heat, stir in reserved chopped strawberries. Transfer mixture to a bowl and let cool for 10-15 minutes.

Add strawberry sauce to a jar or container with lid.

Serve immediately or store in refrigerator for up to 2 weeks in airtight sealed container

vanilla bean paste (or vanilla extract)

In a medium saucepan, combine strawberries and sugar. Use a potato masher to smash strawberries, then turn heat to medium. Bring mixture to a boil, reduce to simmer, and cook for 10 minutes without a cover.

Remove saucepan from heat. Add vanilla and stir to combine.

Fresh Strawberry Jam made without pectin takes just three ingredients for an easy small batch jam recipe.

Strawberry Jam Without Pectin-Just 3 Ingredients!

Strawberries (1 quart = 24 ounces or 4 cups of sliced berries)

Granulated sugar (you can add up to 1 cup for a sweeter jam)

lemon juice

Rinse the strawberries under hot water then cold water, then hull, and slice the strawberries into a medium-sized saucepan.

Juice one lemon, then add the juice and the sugar to the saucepans with the berries. Stir well.

Over medium heat bring the strawberry mixture to a boil, stirring occasionally.

Lower the heat to medium-low and continue cooking at a steady boil for about 20 minutes, or until a candy thermometer reaches 220 degrees F.  Mash the strawberries with a potato masher frequently until you get the desired size of strawberries.  You can also use an immersion blender to reduce the size of the strawberries. Be careful as the mixture will be very hot. Another trick I use is after I mash the berries, any large pieces I just cut with kitchen scissors.

This cooking process will reduce the liquid and thicken up the jam.

When the jam is cooked, remove it from the heat and let cool for about 15 minutes, then fill clean glass jars with the jam, then continue to cool. I had 2 cups of jam which fit perfectly in a 16-ounce jar.

Store the jam in the refrigerator for up to two weeks.

For freezer jam, let the jam completely cool then pour it into a freezer container.

Feel like Martha Stewart and make your own homemade strawberry sauce! This is an easy, 4 ingredient fresh strawberry sauce recipe.

In a small-medium sized pot over medium heat, combine the diced strawberries, sugar, vanilla extract, and squeeze of fresh lemon juice.

This light and silky Italian Panna Cotta With Strawberry Sauce Recipe is perfect for holidays and especially summer. It combines the yumminess of a smooth dairy base pudding with the bright flavors of strawberries.

Italian Panna Cotta With Strawberry Sauce

gelatin (.25 ounce)

Tablespoons Almond milk (unsweetened)

Almond milk (unsweetened)

Heavy cream

Yogurt (plain

Confectioner's sugar

Kosher salt

Vanilla extract

Tablespoons Cornstarch

Begin by sprinkling the gelatin over the 3 Tablespoons of almond milk in a small bowl. Set aside.

In a medium size saucepan, over medium/medium-high heat, heat the heavy cream, yogurt, 1/3 cup almond milk, confectioner&#39;s sugar, and salt until the mixture is bubbling around the edges, about 2-3 minutes.

Be sure to stir as it is heating so that the sugar dissolves and the cream doesn&#39;t scald.

Remove the pan from heat and stir in the vanilla extract and the gelatin/almond milk mixture to the pan and stir to combine. Pour into 8(4.8ounce)glasses.

Place in the refrigerator and cool for 30 minutes to 1 hour or until the top is firm enough to hold the strawberries.

Panna Cotta

Mix the strawberries with the cornstarch and sugar in a medium-size saucepan.

Cook over medium heat for about 5 minutes, occasionally mashing with a potato masher or fork, until the strawberries soften and the juices thicken. Stir frequently. Let slightly cool.

Place the strawberry mixture on top of the cooled panna cottas. Place in the refrigerator for 1-2 hours or until completely cooled.

Top each with a whole strawberry, whipped cream, slivered almonds or mint leaves for garnish (optional).

Keep in the refrigerator until ready to serve.

Fresh Strawberry Sauce (Strawberry Topping)

Combine strawberries and sugar in a medium pot or saucepan.

Whisk together lemon juice, vanilla extract and cornstarch in a small bowl until fully smooth/no lumps remain. Pour over strawberries and stir well.
