Vanilla Chia Seed Pedding

Vanilla Chia Pudding is a healthy make-ahead breakfast that doubles as dessert! A mixture of chia seeds, milk, natural sweetener, and vanilla creates a pudding-like treat, perfect for topping with granola, coconut yogurt, and your favorite fresh fruit.

almond milk (or any other milk)

maple syrup (or any other sweetener)

vanilla powder vanilla

Coconut yogurt (or any other yogurt of your choice)

Granola

In a glass or mason jar bowl, stir together the chia seeds, almond milk, maple syrup, and vanilla. Stir well.

Let the chia seeds mixture sit for 5 minutes. Give it another good stir to avoid clumps (this is super important!).

Cover and let it set in the fridge for at least 1-2 hours or overnight.

Remove from the fridge and add your favorite toppings: coconut yogurt, fresh berries, and/or granola.

Whisk together all of the ingredients except the chia seeds

Add the chia seeds and whisk again until well combined.

Pour the mix into a storage container and place it in the refrigerator. After twenty minutes, give it another stir to make sure everything is evenly combined.

Leave the chia pudding in the fridge overnight. In the morning give it a good stir and then top it with berries, your favorite granola, and even a little nut butter if that&#8217;s your thing. Enjoy!

My go-to breakfast! Seriously, this is so good. My fave is to top with mango and toasted coconut. I love this is satisfying but light!

The almond butter is genius, it really adds a lot of depth and flavor to the pudding. Add a little pinch of salt to bring out the vanilla: PERFECT!

Easy Chia Seed Pudding

milk (or milk alternative (we like 2%))

chia seeds (measured level)

maple syrup (or preferred sweetener)

sea salt (1/8 tsp

Combine all ingredients in a jar that has a well-fitted lid (16-ounce volume or greater will work best).

Seal the jar and vigorously shake for about 1 minute to agitate the pudding and make sure all the chia seeds are suspended in the liquid.

Place the sealed jar into the fridge for at least 1 hour, or overnight. Highly recommended: Shake the sealed jar every 20 minutes for that first hour to ensure you don’t get any clumps.  If you don&#39;t shake the pudding, the chia seeds float to the top and will get clumpy!

Serve with additional sweetener (if desired), fresh fruit, shaved chocolate, coconut, or any of your favorite toppings.

I just started eating chia seeds to try to help control my blood sugar.  Last night I made my first chia pudding and had it for breakfast this morning.  I used fat-free lactose free milk.   I added frozen cherries to it right before I ate it.  It was thick and delicious!  I plan on making this again.

Loved the recipe, was simple and easy to make. I left mine to sit overnight and it had a good consistency. I like that it wasn’t too sweet either, and that I could still had some fruit after if I wanted to.
