This hearty Rosemary Chicken Salad with Avocado and Bacon is HUGE – perfect when you want a low-carb meal that will fill you up! It's also gluten-free, dairy-free, egg-free and soy-free for people with food allergies.

Rosemary Chicken Salad with Avocado and Bacon

bacon (diced)

(trimmed skinless chicken thighs (4 oz each))

rosemary

lettuce

baby arugula

cherry tomatoes

oz avocado (sliced (1 small))

tsp dijon mustard

olive oil

tbsp red wine vinegar

Cook bacon in a large heavy nonstick skillet until crispy, about 7 minutes. Transfer to a paper towel to drain and set aside.

Drain the fat but don’t wipe the skillet, leaving any excess oil in the pan to cook the chicken.

Season chicken with salt and rosemary, cook in the skillet over medium-high heat until golden and cooked through, about 5 minutes on each side.

Make a bed of the romaine and arugula (or watercress) in a large serving bowl or platter (or divide between 2 plates). Scatter the cherry tomatoes, red onion and bacon on top.

Slice the avocado, sprinkle with pinch of salt and arrange on salad. Slice the chicken thighs and add to the salad.

To make the rosemary vinaigrette, in a small bowl whisk the ingredients. Pour over the salad and serve right away.

This light and easy chicken salad recipe made with leftover rotisserie chicken breast meat and my homemade ranch dressing. Great for lunch and meal prep!

In a medium bowl combine the buttermilk, mayo, chives, salt, garlic powder, onion powder, parsley, basil and black pepper and mix.

Add the shredded chicken and mix well. Refrigerate until ready to eat.

Dice or shred the 2 large cooked chicken breasts and place into a large mixing bowl.

Peel and pit 2 large avocados, slice into bite-sized pieces and add to the mixing bowl.

Add 1 cup of cooked corn (freshly cooked corn is best), toss in 1/4 cup chopped green onion, chopped bacon, and 2 Tbsp fresh Dill.

Add dressing ingredients to a small bowl and stir to combine. Drizzle over your salad and toss to combine. Serve with slices of hard boiled egg if desired.

This zesty Sous Vide Chicken Salad is fresh and delicious, made with the juiciest chicken breast, avocados, lime juice, and cilantro – and no mayo!

Sous Vide Chicken Breast and Cilantro Lime Chicken Avocado Salad

8 oz boneless (skinless chicken breasts, organic if possible)

seasoning salt

freezer gallon bags

avocado (from 2 small haas)

limes

extra virgin olive oil

Fill the inner pot of the Deluxe Multi Cooker to the 1/2 fill line with water.

Lock the lid and select SOUS VIDE. Set to 145°F (63°C) and the timer to 2 hours. Press and hold START.

Season the chicken with seasoning salt. Place in a single layer in a gallon-sized resealable bag, remove the air, and seal.

When you hear three beeps and "Add" is displayed, open the lid and submerge the bag with the seal above the water. Lock the lid; press START.

When the timer is up, press CANCEL. Remove the bag from the water. Remove the chicken from the bag.

Dice the chicken breast in small pieces and combine with remaining ingredients.

Season with salt, to taste.

Mexican Avocado Chicken Salad

Place Lime Dressing ingredients in a jar, shake well.

Put 2 tablespoons of Dressing in a ziplock bag. Add chipotle, oregano, cumin, salt and pepper, mix/squidge bag. Add chicken, seal and massage to coat. Marinate 30 min – overnight.

Heat 1 tbsp olive oil in skillet over medium low, cook chicken to taste (2cm / 4/5” takes around 8 minutes), getting a nice brown crust on it. Rest 5 min then slice.

Add 2 tablespoons of coriander into Dressing, shake.

Place avocado, corn, tomato and onion in a bowl. Add remaining coriander, drizzle with a bit of Dressing, toss gently.

Place lettuce in a bowl, drizzle with a bit of Dressing, toss.

Assemble Salad: Place lettuce on a serving platter. Top with Salsa and sliced chicken. Drizzle with remaining Dressing. Serve.

Creamy chunks of avocado are combined with tender pieces of chicken in a fresh and slightly spicy dressing to make this Avocado Chicken Salad.

Add the dressing to the chicken and avocado and stir well to coat. Serve on sandwiches, on toast, on lettuce, or with crackers. Sprinkle with fresh cilantro or parsley before serving.

Store in an airtight container and refrigerate if not eating immediately. This salad will keep nicely in the refrigerator for a few days.

I love this!  I'm a bit of a wimp, so I probably won't go full bore on the hot sauce next time, even though the flavor is awesome.  Since I needed to use them up, I added some finely julienned radishes.  That turned out great and I will consider adding celery next time also, just for a bit of a crunch.  I am also a great lover of avocados and always have them in the kitchen. Recently  I found myself with a few too many ready to eat all at once.  Decided to search for an avocado soup recipe - didn't even know if there was such a thing - and found a recipe for Crema de Aguacate on a site called MyColombianrecipes.com  It is amazing!!! I was just wondering what to make for dinner tomorrow night…problem solved….the clincher was the cut up carrots….I had just cleaned out my pantry and found a can of pinto beans and one of white beans..so was a no–brainer…but I like the idea of the carrots…also the olives…never have used it in chili before, so will be a new experience…

Cherry Tomatoes

Onion (chopped)

Cilantro leaves (chopped)

In a jar add all the ingredients mentioned under dressing. Close the lid and shake well.

Make the salad dressing

Add 2 tablespoon of dressing, smoked paprika to the chicken. Let it rest for 10-15 minutes.

Then heat a cast-iron skillet, cook chicken until done. It should take 4-5 minutes on each side depending on the thickness.

Take out the chicken when done, keep it on a plate and cover with a foil. Let it rest while you do the rest of the steps.

Grill Chicken

In a big salad bowl add the chopped greens, halved cherry tomatoes, Onion, sliced avocado, and cilantro.

Cut chicken add it to the salad. Drizzle the dressing and toss everything well.

Serve.
