Homemade gravy is quick and easy. If you’ve roasted chicken, turkey or beef, use the drippings left in the roasting pan. They make the gravy extra flavorful and seasoned. You can make gravy without drippings and use stock or broth in it’s place. Store-bought stock is usually under seasoned. Take care when seasoning with salt and pepper towards the end of the recipe. Finally, for more flavor, whisk in mushroom powder. This is optional, but adds a deep savory flavor.

Juicy and delicious pan-seared pork chops cooked in a rich onion gravy. 

Smothered Pork Chops

FOR THE PORK CHOPS

pork chops, (1-inch thick)

poultry seasoning salt

pepper

olive oil

FOR THE ONION GRAVY

yellow onion, (thinly sliced)

salt

garlic, (minced)

chicken broth

heavy cream

parsley (for garnish)

Season pork chops with seasoning salt and pepper.

Heat oil and butter in a large skillet over medium-high heat until butter is melted.

Add pork chops to skillet and sear for 5 minutes per side, until golden brown. If skillet isn't big enough, cook the pork chops in batches.

Transfer to a plate and keep covered.

Return skillet to heat and add a tablespoon of butter; melt over medium heat.

Stir in sliced onions and add a pinch of salt.

Cook onions for 12 minutes, or until very soft and caramelized, stirring frequently.

Add garlic and fresh thyme; continue to cook for 30 seconds.

Pour in chicken broth and using a wooden spoon, scrape up the browned bits from the bottom of the pan.

Whisk in heavy cream and simmer for 1 minute.

Return pork chops and all the pork juices to the skillet.

Reduce heat to medium-low and continue to cook for 3 more minutes, or until pork is completely cooked through and sauce has thickened.

Remove from heat; garnish with parsley and serve.

Liver & bacon with onion gravy

rashers smoked streaky bacon

tbsp plain flour, seasoned

sage (optional)

lamb's livers (about 400 grams/14 ounces)

onion, thinly sliced

beef stock

Cook the bacon in a large non-stick frying pan until crisp. Meanwhile, mix the flour and sage, if using, and use to dust the liver. Remove bacon from the pan and set aside. Add the oil to the pan and brown the liver for about 1 min on each side. Remove from the pan, then fry the onion until softened. Stir in stock and ketchup, then bubble for 5 mins.

Put the liver back in the pan and cook for 3 mins until cooked through. Serve with the bacon broken over the top and some mash. (see related recipes)

Grandma&#039;s southern tomato gravy is a breakfast staple. You&#039;ll love this savory, indulgent gravy spooned over fresh biscuits, cornbread or even grits or rice. 

Grandma's Southern Tomato Gravy

tomatoes

Pour the tomatoes into a medium sized skillet set over medium heat.

Let the tomatoes cook until hot, stirring occasionally.

Add the flour to the broth, and whisk vigorously until the two are completely incorporated and the mixture&#039;s smooth.

Pour in the flour/broth mixture, whisking constantly until it&#039;s incorporated completely. Don&#039;t skip this step! You don&#039;t want any lumps or odd bits of mini dumplings in your tomato gravy.

Stir in the bacon grease, and bring the tomato gravy to a full boil. Once it&#039;s reached a boil, immediately reduce the heat and let the mixture simmer for 10 minutes- or until the gravy&#039;s thickened.

Season with the salt and pepper, taste and adjust if needed.

Serve the gravy hot, ladled over fresh biscuits.

How to Make Gravy (2-Ways!)

fat (from pan drippings)

roasting juices (from pan drippings)

kosher salt (as needed for seasoning)

Collect the Drippings - After cooking the roast, scrape the browned bits (fond) stuck to the bottom of the pan, using the juices to help dissolve the drippings. A small amount of water and heating the pan over low heat can help loosen the fond.

Separate the Fat - Pour the juices, fond, and fat drippings into a measuring cup or fat separator. Allow to sit and separate until the fat rises to the surface. Refrigerate or freeze to speed up the process. Reserve the fat. Measure out 1 cup of the juices. Use additional store-bought stock or broth if needed to reach the required volume.

Make a Roux - In a medium saute pan, add 2 tablespoons of the reserved fat, and 2 tablespoons of flour. Heat the pan over medium heat, whisk, and cook for 1 minute.

Thicken the Consistency - Turn the heat to medium-high. Gradually whisk the juices into the pan, cooking for about 3 to 5 minutes or longer for a thicker consistency. For a thinner sauce, add more juice or stock.

To Finish - Season gravy with salt and pepper to taste. For a smoother consistency, strain the sauce. Serve hot, and rewarm if needed.

Method #1) Gravy with Pan Drippings

Method #2) Gravy with No Pan Drippings

This Southern Egg Gravy is amazing for breakfast over biscuits or toast. Or try it for dinner over roasted turkey or chicken.

Southern Egg Gravy Recipe

Tbsp. bacon fat

Tbsp. flour

milk

Warm the bacon fat in a large skillet over medium heat. Whisk in the flour. Cook, whisking often, until it just starts to get a little bit darker, a beige color, 3-4 minutes.

Slowly drizzle in the milk, whisking continuously to keep it smooth. Add the salt and pepper.

Continue to cook over medium heat, stirring often, until the mixture comes to a simmer and has thickened. If you&#8217;d like it thicker, cook and stir it for a few minutes extra so more liquid evaporates.

Add the eggs and stir for a minute to heat them through. Serve hot.

The Best Swedish Meatballs

white bread, no crusts

onion powder

garlic powder

beef (I use 85/15)

ground pork (you can also sub with another pound of ground beef instead)

brown sugar

butter (you can also use some drippings from the baked meatballs)

flour

beef broth (more as needed)

Worcestershire sauce (more

Very slight dash of nutmeg (optional)

Meatball Mixture

In a small bowl, soak the white bread in the heavy cream for 5-10 minutes. Mash with a spoon or you hands. Mix the bread paste in a large bowl with the garlic and onion powder, beef and pork, egg, brown sugar, salt, and pepper. When it&#8217;s all well-mixed, roll into smallish meatballs. (If you find the mixture is too wet to handle, you can add a bit of panko or a tablespoon of cornstarch to help them hold a bit more. But don&#8217;t panic &#8211; wet is normal for this mixture. It makes for very tender meatballs!)

In a small bowl, soak the white bread in the heavy cream for 5-10 minutes. Add the soaked bread and the onion and garlic to the bowl of a food processor. Pulse for 10-15 seconds until mostly smooth. Mix the bread paste in a large bowl with the meat, egg, brown sugar, salt, and pepper. When it's all well-mixed, roll into smallish meatballs.

Preheat the oven to 400 degrees. Place meatballs on a sheet pan or baking dish. Bake for 20-25 minutes until cooked through.

Stir in the heavy cream and season with Worcestershire sauce, sugar, salt, and a bit of nutmeg if you want. Taste and adjust to get it just right! That&#8217;s where the magic happens.

Gravy time! Drain off and reserve the grease from the meatball pan. Add 2 tablespoons of the grease to a small skillet (alternatively, you can use butter). Over medium heat, whisk in the flour; sauté for 2-3 minutes. Add the beef broth, slowly, stirring after each addition. Gradually a smooth gravy should start to form. Stir in the heavy cream and season with Worcestershire sauce, sugar, salt, and a bit of nutmeg if you want.

Add meatballs in with the gravy. Cover to keep warm until you want to serve them, or transfer the pan to the oven where they can hang out on low / warm heat and continue to get tender and delicious. (The meatballs are already great on their own, but the longer they soak in sauce, the more tender and  delicious they get.) Serve over mashed potatoes, with a cucumber salad and lingonberries.

I love Swedish meatballs, they are our families go-to quick comfort food, but this is because we use the frozen Ikea meatballs and I'd rather make them from scratch. It looks like the beef and pork is quite smooth, was it also put in the food processor?

Thank you, Eman!  I made the recipe above (the simpler one) and they were the best Swedish meatballs we've ever had!  I actually tripled the recipe, using six pounds of just beef.  They were WONDERFUL - these are not Fred Flintstone's Swedish meatballs - they are soft, tender little nuggets of joy!  And that gravy.  There really was the moment where I saw the sauce I was making turn into the smooth silkiness which is the delicious gravy.  Even found lingonberry preserves.  AND made the cucumber salad*.  Thank you for this amazing recipe.  

* In the link provided for the salad, it is necessary to sign up in order to get the directions.  I used the ingredients (very nice) and found directions elsewhere.  For salad, directions do not usually matter, but for Norwegian cucumber salad, they do.  Just thought a high quality website such as this would want to know :).

These were easy and very good! I used sour cream in the sauce, instead of heavy cream. My family said they prefer my typical Swedish meatballs more, but this was an easier version.

How to Make Gravy: An easy gravy recipe that comes out perfect every time! Lots of rich flavor, accented with a lovely blend of seasonings.

How to Make Gravy

After cooking your roast or searing your meat, remove it from the pan and pour the drippings into a fat separator.

Place the roasting pan over medium high heat, add 1 tablespoon of fat from the pan drippings along with the butter, and cook until browned.

Whisk in the flour and continue to cook until a deep nut-brown color.

Whisk in the wine, scraping up any brown bits from the bottom.

Continue whisking until no lumps remain and the mixture is a mahogany brown color.

Slowly whisk in the pan juices, then the stock, making sure to whisk out any lumps.

Whisk in the fresh sage, onion powder, poultry seasoning, salt, and pepper.

Simmer the gravy until thickened.

Once your meat is cooked, transfer it to a plate to rest. Use the liquid from the drippings to scrape any brown bits from the bottom and sides of the pan. Strain the drippings through a fine sieve if desired.

Allow the drippings to rest for a few minutes (use a gravy separator, or a tall narrow container) so the fat and drippings separate. The fat will rise to the top. Spoon ½ cup of the fat into a medium saucepan, adding butter to make ½ cup if you don&#39;t have enough fat.

Stir in the flour and poultry seasoning and cook for 3 to 4 minutes over medium heat, while stirring, until the flour begins to brown slightly and the mixture has a slightly nutty smell.

Gradually add the drippings and/or broth, whisking until smooth after each addition. The mixture will be very thick at first and will gradually thin out; you may not need all of the broth.

Bring to a boil over medium heat while whisking, and let boil for 1 to 2 minutes.

Taste the gravy, and season with salt &amp; pepper as needed. Stir in parsley or other fresh herbs and serve.
