Vitamin C Superfruit Salad

1½" piece ginger, peeled, finely grated

carrot juice

lime juice

turmeric

kosher salt

2½ lb. mixed citrus,

peeled,

red pepper flakes (for serving)

Mix ginger, carrot juice, lime juice, turmeric, and kosher salt in a small bowl.

Using a paring knife, remove peel and white pith from citrus, being careful not to remove too much of the flesh. Slice citrus however you want; you can slice into ¼"-thick rounds or cut into 1" pieces, and they don’t even need to be an exact shape or size.

Spoon half of carrot dressing in a shallow bowl. Arrange citrus, mango, and kiwis in bowl, then spoon remaining dressing over. Top with red pepper flakes and sea salt, then drizzle with oil.

Traditional Indian Dahl

Turmeric powder

Raw Toor Dahl, or yellow split peas (Main)

Water, up to 5.

Soak the toor dahl in water for at least 30 minutes but preferably a bit longer. This step is crucial in ensuring the grains break down effectively and will make your dahl creamier. Once soaked, drain out all the water. You will note that the raw dahl has almost expanded – this is a good thing!

If you have a pressure cooker pour in the dahl with about 4 cups of water. You should have a ½ inch layer of water over your dahl. If you don't have a pressure cooker, you can make this in a saucepan but I recommend you soak your dahl overnight in that case so that it cooks faster. You may also need to keep topping up the water to ensure the dahl doesn't burn at the bottom of the pan.

In the pressure cooker, cook for about 20-30 minutes. In the saucepan, you may need 45 mins - 1 hour. What you want, is the lentil to crush easily when pinched between your fingers. The dahl will have soaked up the water.

Give it a quick blend using a hand blender or if you wish to have an arm workout with a whisk and there you have it – amazing, simple, dahl.

Most kids will like to have it just like this with a bowl of rice. If you prefer a bit more flavouring you can make a tadka. The one I've suggested above is a very simple one. You can also add curry leaves, mustard seeds and some chopped tomato to your tadka if you prefer your dahl to have more zing.

Remember, more tadka ingredients means you may need to add a bit more ghee.

For the tadka, heat up the ghee in a small saucepan until it is sizzling hot. Add in the minced garlic and stir until it is brown. Add in the cumin seeds and cook for another minute or two. Pour the sizzling hot ghee onto your dahl and mix.

Eat with a bowl of hot rice with some pickle on the side.

Perfect roast pork hock

Pork hock (Main)

Score the skin of the pork hock with a sharp knife. Rub liberal amounts of sea salt into the sliced hock and season with a bit of black pepper. Place in a roasting dish upright with a half a cup of water.

Place in the oven and cook for 20 to 30 minutes until the skin begins to bubble and crackle. Turn the heat down to about 140C, cover with foil and cook for a couple of hours.

The hock is ready when the meat pulls away from the bone with little or no resistance. If the crackling hasn't crisped up enough, blast the hock at high heat under the grill for 5-10 minutes, or until crisp, golden and puffed.

Set aside to cool slightly. Take a knife and cut/pull the crackled skin from the hocks, exposing the pork. Serve.

red grapes (halved)

plain Greek Yogurt

Wash all the fruits before slicing or chopping.

Combine the strawberries, pineapple, blackberries, grapes, kiwi and oranges in a large bowl.

Combine the dressing ingredients in a separate small bowl and whisk to combine. Pour dressing over fresh fruits and toss gently to coat.

Serve immediately, or cover and keep refrigerated until ready to serve. Best if served within 24 hours.

In a bowl, add the pineapple juice, lemon juice, sliced kiwis and apples, mulling (crushing) everything together until fruit are fully broken down. Add in the honey and salt, mixing everything together until combined.

To Make Mocktails: Add crushed ice to glass(es), Add 3-4 Tbsps of mulled kiwi and apples to bottom of glass, followed by 1/3 cup of mocktail liquid mixture until glasses are 1/2 filled. For additional garnish, sliced kiwis, sliced apples, and lim wedges, and a fresh thyme sprig. Top with ginger beer or sparkling water. Repeat for every serving. 

Sip and Enjoy!

Slow roast spiced leg of lamb with pan gravy

Garlic

tsp Ground cumin

tsp Ground coriander

Leg of lamb, boned, about 2.5kg (Main)

Chicken stock

Preheat the oven to 160C. Peel and finely chop garlic and mix in a bowl with cumin, coriander, paprika, rosemary, lemon juice and olive oil. Season with salt and ground black pepper. It should resemble a thick paste.

Massage the leg of lamb with the spice rub, spreading it over the skin and into the flesh. Leave at room temperature while the oven heats up. Place the lamb into the oven and roast for 35 minutes. Pour in 2 cups of water, baste the lamb with the liquid, and continue roasting for a further 3 hours, basting the lamb every half hour. Add more water if the juices evaporate too much.

Remove from the oven and rest the meat in a suitable place while you make the gravy. Pour off the top layer of oil from the cooking juices, then put the roasting pan over a medium heat, pour in the stock and bring to a simmer. Using a wooden spoon, scrape the caramelised meat juices into the sauce. Season with salt and pepper if required, then strain into a sauce boat.

Serve with roasted vegetables, cauliflower cheese and minted peas.

Lambs' fry with bacon

350 g Lamb's fry (Main)

Bacon,

Onion, thinly sliced (Main)

Tbsp Butter

Tbsp Flour

Worcestershire sauce

Thinly slice the liver into 3mm thick pieces. In a plastic bag, put about 2 tablespoons of flour and shake the slices in it to coat.

Heat a frying pan and fry the bacon until crisp, then remove. Add the butter and gently fry the onions until clear, then remove. Turn up the heat and cook the liver quickly for about a minute on each side - it should still be red in the middle.

Throw the bacon and onion back in the pan and sprinkle the Worcestershire sauce over it. Give it a shake to cover and heat through, then remove from the heat. Serve on toast.

You can also do this with balsamic vinegar instead of the Worcestershire sauce, and if you have any strong fruit jellies like currant or quince paste, throw a teaspoonful of this in as well.

Sobald sich der Zucker gelöst hat, Sirup vom Herd nehmen. In einem hohen Gefäß Kiwis, Minze und Sirup fein pürieren. Püree durch ein Sieb in eine Schüssel geben und abkühlen lassen.

Ein Glas am Rand so mit Erdbeerkonfitüre bestreichen, dass sie etwas hinunterläuft. Kiwipüree in das Glas geben, mit Mineralwasser auffüllen und Hexencocktail servieren.
