This sweet cornbread is one of my favorites to make during the fall. It&#039;s super moist, fluffy and pairs perfectly with a hot bowl of chili. 

Sweet Cornbread

milk

honey

eggs

all-purpose flour

yellow cornmeal

sugar

baking powder

salt

salted butter, melted and cooled slightly ((1 stick))

Preheat

Preheat the oven to 350°F. Butter a 9×9″ pan and set aside.

Pour

Pour 3/4 cup milk into a measuring cup and then whisk in&nbsp;the honey and eggs.

In a large bowl, mix together the flour, cornmeal, sugar, baking powder and salt. Add in the milk mixture and stir just until combined. Then stir in the melted butter. Be careful not to over mix.

Bake

Pour into prepared pan and bake for 30 minutes, or until a toothpick comes clean from the center. Remove from oven and allow to cool slightly before serving. Best served warm with a little butter and honey (if desired) on top.

In a medium mixing bowl, add the flour, cornmeal, sugar, salt, and baking powder. Whisk to combine well.

Pumpkin Cornbread Will Be The First Thing Devoured At Your Thanksgiving

This buttermilk cornbread is moist and sweet, thanks to buttermilk, butter, olive oil, and honey. It's decidedly not traditionally Southern, but we love it.

Buttermilk Cornbread

(3 oz) unsalted butter, somewhere between cold and room temperature

cornmeal

whole-wheat flour (or substitute all-purpose flour)

full-fat buttermilk

olive oil

Preheat your oven to 350°F (180°C) and line an 8-by-8-inch (20-by-20 cm) metal pan with parchment paper.

In a stand mixer fitted with the paddle attachment, beat the butter, sugar, and salt on medium-high speed until light and fluffy, about 2 minutes. Incorporate the eggs, 1 at a time, beating well after each addition. Be sure to scrape the sides of the bowl well.

Pause the machine and add the cornmeal, all-purpose flour, whole-wheat flour, and baking powder. With the mixer on low speed, mix until incorporated. Then pour in the milk, buttermilk, oil, and honey and mix just until combined. This should yield a very loose, runny batter. (Small lumps of butter are no problem, but avoid any lumps of flour. If you see them, mix the batter just a little longer or work them out with your fingertips or the tines of a fork.)

Pour the batter into the pan and bake for 45 to 50 minutes, or until a tester comes out clean. You&#8217;re going to want to start checking the cornbread after 30 minutes, and if the surface turns perfectly golden brown before the time is up, loosely cover the pan with aluminum foil. Let the cornbread cool ever so slightly in the pan on a wire rack prior to slicing. This buttermilk cornbread is best served the day it’s made but keeps for up to 2 days if wrapped well.

Preheat oven to 350 F. Melt 7 tablespoons of butter. Once the oven has heated up, put the remaining 1 tablespoon of unmelted butter into a skillet and place it into the oven.

Add all the dry ingredients into a large bowl and mix until combined then make a well in the center of the bowl. 

Pour all the ingredients except the melted butter and vegetable oil into the well. With a whisk, whisk until smooth and combined.

Pour the melted butter and vegetable oil into bowl. Mix well until the butter is mixed into the batter.

Carefully take the hot skillet out the oven and quickly pour the batter into the skillet. Place the skillet back into the oven. Bake for 25-30 minute or until done.

Grease and square baking dish and set aside.

Mash corn using potato masher and set aside.

Combine dry ingredients (spelt flour, cornmeal, baking powder, and sea salt) in a large mixing bowl.

In a separate, smaller mixing bowl, combine the wet ingredients (egg, honey, almond milk, coconut oil and corn).

Add wet ingredients to the dry ingredients and mix well. Try not to over-mix.

Add to the prepared pan and smooth out evenly.

Bake 16-18 minutes, or until an inserted toothpick or knife to the center of the cornbread comes out clean.

In a medium sized bowl, whisk together the melted butter, milk, and egg until well blended.

I will never make cornbread with jiffy again!! This is easy, fast to put together and delicious. As an addition I melted a pat or two of butter in a cast iron skillet and then poured in the mix.

I swapped the all purpose flour with oat flour and the bread is tasty but not hard, it crumbles :/

Any idea why did the bread come out like that and what can I try to do to fix it?

This was a waste of time, it didn't cook for that long, I had to wait about two hours! I don't recommend it!!

The cornbread was crumbly because your binding agent which is the egg didn’t mix well with the rest of the batter. I’m not sure why the recipe doesn’t specify to beat the egg first before pouring in the mix. This really helps with crumbly texture and makes the cornbread more solid. Also wait atleast 20 min after cornbread is taken out of the oven before you cut it. These two tips should do the trick

I made mini muffins with this recipe, baked 11 minutes and omg!!!! They're were amazing.

Excellent cornbread, baked in a small pyrex pan. I reduced sugar to 1/2 cup, salt to 1/2 tsp and still tasted great. I beat the egg lightly before adding, which might help with folks' "crumbly" issues.

Very good flavor to this cornbread!  I used extra virgin olive oil for my neutral oil, was almost out of butter or I'd used that instead. Other than that I pre heated my.glass baking pan with a tablespoon or so of olive oil and with about four tablespoons of cornmeal. Love the crusty bottom this adds!  Other than that I followed the recipe. Was in the crumbly side... Do you think an extra egg might remedy this?  Still much better than my normal cornbread!!

I tried this recipe . like some of the others persons. I used muffin tin to do mine. I also beat my egg . I used oat milk and ordinary sugar but reduced the amount of sugar. I also used only 3 teaspoons BP.. The muffins came out. Well let this recipe be my go for corn bread
