Served this to a group.  Everyone loved it.

This was a bad recipe. Proportions were off, especially the cornstarch and salt.

<strong>I would not make this recipe again... </strong>I agree with GreenCactus, I added about half the amount of low sodium soy sauce and added water for the other half, and the dish was quite salty. I can't even imagine how salty it would have been with all of it. Also, this dish calls for WAY too much corn starch! I followed the recipe for the marinade and the excessive amount of cornstarch just got all stuck to the bottom of the pan and burned. Because of this, the meat wouldn't brown and I ended up having to switch to a different pan for the veggies. Also, once I added the sauce and meat to the veggies, again, there was way too much cornstarch, so it was a paste. I ended up adding about a cup or so of water to make a thick sauce.

Followed recipe exactly (incl. low-sodium soy sauce). Waaaay too salty. No one could finish their dish. If we dare do this again we might try using half soy sauce and half water.

Going back to the basics and making the BEST Chow Mein recipe that will for sure be on your weekly dinner dishes. 450 g of Egg Chow Mein Noodles

½ Carrot (sliced)

¼ Cabbage (sliced)

Shiitake Mushroom (sliced)

Celery

½ Large Onion (sliced)

Stalks of Green Onion (2-inch pieces)

tbsp of Soy Sauce

2.5 tbsp of Vegetarian Oyster Sauce

tbsp of Sesame Oil

Sugar

tbsp of Black Vinegar

tsp of Black Pepper

Blanch the chow mein noodles for 30-60 seconds, rinse with cold water, drain and set aside.

Mix soy sauce, vegetarian oyster sauce, sesame oil, sugar, black vinegar, and black pepper in a bowl.

In a large pan, drizzle in a generous amount of oil, turn the heat to medium-high. Add in sliced onions and shiitake mushroom, stir-fry for 2-3 minutes.

Next, add in sliced carrots and celery, saute for 1-2 minutes, add in sliced cabbage and saute for another 2-3 minutes.

Add the noodles, drizzle on the sauce, saute on high heat for 2-3 minutes.

Finally, add in green onion, saute on high heat for 1 minute.

Cut tofu into bite-sized pieces. Soak the tofu in 1 tbsp of salt and 2 cups of water. Make sure all the tofu is soaked in the water for at least 10 minutes.

Gently pat dry the tofu, and coat the tofu in tapioca starch. Let the tofu rest in the tapioca starch for 5 minutes while you heat the oil.

In a pan, add in oil, turn the heat up to medium-high. Add tofu once the oil is hot and let it fry for 3-4 minutes until crispy and golden brown.

Remove and set aside, optional but highly recommended, turn the heat up to high, and double fry in high heat for another 1-2 minutes to make it EXTRA crispy!

Mix all the ingredients for the seasoning mix - salt, white pepper, garlic powder, Sichuan peppercorn, mushroom powder, and ground chili.

In a pan, drizzle in oil and add in minced garlic, chopped red chili, and green onion. Saute together for 2-3 minutes.

Add in crispy tofu, season with seasoning salt, and toss in high heat for 30 seconds.

Thinly slice up the beef based on the above tips and marinate the beef with 1.5 tsp of Black Pepper, 2 tbsp of Oyster Sauce, 1 tsp of Baking Soda, 2 tbsp of Oil, and 3 tbsp of Corn Starch. Let it rest for 10 minutes while you prepare the rest of the ingredients.

Blanch, the Broccoli with Hot Water, drain, and set aside.

In a pan, drizzle in oil and turn the heat up to medium-high. Once the pan is hot, add the beef and let it sit for 30 seconds before sauteing for 2-3 minutes.

Add in the broccoli, saute for 1 minute.

Finally, add the noodle, drizzle in the sauce, and saute on high heat for 2-3 minutes.

Marinate the chicken with soy sauce, dark soy sauce, oyster sauce, garlic, white pepper, five-spice powder, and honey for at least 1 hour or overnight.

Whip off any excess sauce from the chicken, especially the garlic, to prevent it from burning.

Bake the chicken at 400F for 30  minutes.

Simmer the excess sauce in a pan for 3-4 minutes or until bubbling and becoming a thick glaze.

Brush on more sauce on the chicken, top with sesame seeds, and bake for another 5 minutes.

In a bowl, whisk 5 whole eggs with 1 tsp of white pepper and season with salt.

Turn the heat up to medium-high and add in 5 tbsp of oil. Once the oil is hot, add white parts of the green onion and your eggs.

Let the egg sit for 30 seconds and then fry for 2-3 minutes, breaking the egg apart.

Add in frozen vegetables, scramble for 1-2 minutes.

Turn the heat to high, add cold-cooked rice, 1 tsp of white pepper, soy sauce, vegetarian oyster sauce, and sugar. Saute together for 2-3 minutes.

Add in green onion, sauté for another 1-2 minutes.

Mix tapioca starch, white pepper, five-spice powder, and salt.

Coat the tofu in tapioca starch mixture. Let the tofu rest in the tapioca starch for 5 minutes while you heat the oil.

In a pan, add oil, and turn the heat up to medium-high. Once the oil is hot, add tofu and let it fry for 7-8 minutes until crispy and golden brown.

Remove and set aside, optional but highly recommended, turn the heat up to high, and double fry for another 1 minute to make it EXTRA crispy!

Pack of Medium-firm Tofu

Sweet Potato Flour

tbsp of Minced Garlic

Black Vinegar

Drain the tofu and cut it into bite-sized pieces. Coat the tofu in tapioca starch and let it rest for 5 minutes.

Heat oil in a pan; once the oil is hot, add tofu and deep-fry for 6-7 minutes until crispy and golden brown.

Add minced garlic, black vinegar, vegetarian oyster sauce, chopped green onion, crushed cumin, Korean red chili flakes, sesame seeds, sugar, and chopped cilantro in a bowl.

Heat 4 tbsp of oil, and drizzle the hot oil over the bowl. Mix till everything is combined.

Drizzle the sauce all over the crispy tofu, and garnish with green onion and cilantro.

Sharing my family’s FAMOUS Traditional Taiwanese Vegetarian, Spring Rolls passed down from my great-grandmother. Whenever I host a dinner party, I always make my famous super crispy Vegetarian Spring Rolls because it is the best crowd-pleaser and super easy to make at home. You can customize your spring roll with your favorite vegetables, plus you can make them in bulk and freeze them for the perfect weeknight snack and appetizer.

½ Carrot (shredded)

½ Taiwanese Cabbage (sliced)

8-10 Shiitake Mushrooms (sliced)

Prepare the cabbage but chopping into small pieces, add in 2 tbsp of salt, massage the salt into the cabbage, and set it aside for 10 minutes. After 10 minutes, squeeze out all the excess water and set it aside.

In a pan, drizzle in oil and turn the heat to medium. Add in shredded carrots, chopped green onion, and sliced shiitake mushroom. Drizzle in soy sauce and saute for 2-3 minutes.

To prepare the vermicelli noodles, let them soak in cold water for 5 minutes. After 5 minutes, drain the water, and using a scissor cut into small bite-sized pieces.

In a large bowl, mix cabbage, saute veggies, vermicelli noodles, chopped cilantro,  3 tbsp of Vegetarian Oyster Sauce, 1.5 tbsp of Mushroom Powder, and 2 tsp of white pepper.

TIP: take a tsp of filling, microwave for 30 seconds, and taste to see if you like the seasoning before proceeding.

Mix 2 tbsp of flour and 1 tbsp of water to create a thick roux.

Take 1-2 sheets, add the filling in the middle, roll the bottom up. Fold in the two sides, tuck and roll, add in flour roux at the bottom before closing it off.

Deep fry for 4-5 minutes or until crispy and golden brown.
