Oven roasted potatoes are an easy side dish that goes with pretty much any meal!

Oven Roasted Potatoes

potatoes

olive oil

garlic powder

herbs (chopped (rosemary, parsley, thyme, basil))

paprika

to taste coarse salt and pepper

Preheat oven to 425°F.

Scrub potatoes (do not peel them). Dice into 1” cubes.

If time allows, soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a fluffier potato). Drain and dry potatoes, if required.

Toss potatoes, olive oil, herbs, and seasonings

Place on a baking sheet and bake for 30-35 minutes until browned and tender.

I've noticed that boiling the potatoes before hand, then letting them dry for a bit, before seasoning and baking makes for a more consistently and more tender potatoes. But avoid over-boiling the potatoes

I love to make my husband home cooked meals so he can have leftovers at work. Both of us loved these potatoes!! I used russet potatoes and dried herbs instead and they still turned out delicious. :) I only had to bake for 35 minutes and they were perfectly tender. Thank you for sharing! Preheat the oven to 200ºC/400ºF.

Peel the potatoes, cutting any larger ones so they’re uniformly sized.  I cut mine to be a little smaller than a ping-pong ball.

Wash the potatoes in cold water to remove any extra starch then add them to a large empty pot. Boil water enough water to cover the potatoes well (about 2 inches higher than the potatoes) pour over the potatoes, salt the water, and parboil for 5-7 minutes, then drain in a strainer and leave dry.

Once dry, gently shake the strainer to rough up.

Add the potatoes into a large bowl.  Add the oil, salt an pepper, gently stir to coat and transfer to a baking sheet in one layer, and add the fresh thyme.

Roast in the hot oven for 40 to 45 minutes, or until crispy and golden brown.

Transfer to a plate lined with paper towels to drain off any excess oil and serve.

This Dijon Roasted Potatoes recipe is the perfect potato side dish to serve alongside chicken or steak! These oven roasted potatoes are packed full of flavor!&nbsp;

Dijon Roasted Potatoes

red potatoes (, quartered)

Dijon mustard

salted butter (, melted)

extra virgin olive oil

lemon juice

lemon zest

parsley

fine sea salt

Preheat oven to 425 degrees. Cover a large rimmed baking sheet with aluminum foil.

In a large mixing bowl, whisk together Dijon mustard,melted butter, extra virgin olive oil, lemon juice, lemon zest, dried parsley, fine sea salt and black pepper.

Toss quartered red potatoes and sliced sweet onion in the mixture.

Remove potatoes and onions using a slotted spoon and tapping off excess mix. Place on the rimmed baking sheet. Bake for 15 minutes. Reserve dijon mix.

Remove, turn and rotate potatoes and onion. Drizzle with dijon mixture. Discard remaining mixture.

Continue roasting for an additional 15 minutes, or until potatoes are fork tender. Size of potatoes can vary greatly, so use your best judgement.

Finish off by placing potatoes under a high broiler to get them browned and crispy.&nbsp;

Oven Roasted Potatoes and Carrots with Herbs

½ pounds mini potatoes

carrots

thyme (1 tablespoon fresh)

rosemary (1 tablespoon fresh)

Preheat the oven to 425 degrees F. Set out a large rimmed baking sheet.

Cut the largest mini potatoes in half. Leave the smallest potatoes whole. Peel and slice the carrots into ½ inch rounds. Place both the potatoes and carrots on the baking sheet.

Drizzle the olive oil over the top. Sprinkle with thyme, rosemary, salt, pepper, and garlic powder. Toss well to coat. Then spread the vegetables out in a single layer. (You can also mix the oil and seasoning in a separate bowl and pour over the top.)

Bake for 25-30 minutes, until fork tender. Add the melted butter and fresh parsley. Toss to coat. Serve warm.

Set oven to 425 degrees F on convection.&nbsp;

Cut your potatoes in quarters or halves (depending on the size), or if using Yukon Golds cut into sixths.

Place the potatoes in a medium to large pot and cover with water, salt with a generous palm full of kosher salt. Set timer right now for 15 minutes. Place pot on stove and bring to a boil, then down to a simmer. Continue cooking at a simmer until your 15 minute timer goes off. Check at 13 minutes if you are nervous.

Drain water, then transfer potatoes to a sheet pan. Toss well with olive oil, salt, pepper, and rosemary. Place in oven and cook 15 minutes. Toss and return to oven for 15-20 more minutes, until the potatoes look crispy and browned, and creamy on the inside.&nbsp;

BBQ Bacon Potato Salad

celery

Toss the potatoes in a large bowl with the salt, pepper and olive oil then spread out onto 2 baking sheets that have been sprayed with cooking spray.

Bake for 45 minutes, tossing twice during cooking, until the potatoes are tender and lightly browned.

Remove the potatoes from the oven and let cool.

Make the dressing by adding the barbecue sauce, mayonnaise, dijon, parsley, salt and pepper to a bowl and whisking together until smooth.

Add the roasted and cooled potatoes to a large bowl along with the scallions, celery and bacon. Pour the dressing over the ingredients in the bowl and toss together until combined.

Cover with plastic wrap and place in the refrigerator for at least an hour or longer if needed.

Toss before serving and garnish with chopped parsley.

8-10 medium red potatoes

Zesty Italian Salad Dressing & Marinade Mix

Preheat the oven to 400 degrees fahrenheit.

Cube the potatoes and leave the skin on. Rinse well and then place them in a gallon Ziplock baggie.

Add the olive oil, onion powder, salt, pepper, and package of Zesty Italian Dressing Mix to the Ziplock baggie.

Shake the baggie well until ingredients are evenly coated on the potatoes.

Line a cookie sheet with aluminum foil. Pour the the potatoes onto the cookie sheet and spread evenly.

Roast for 45 minutes. About half way through the roasting process, you&#039;ll want to move them around with a spatula. 

Once done, remove from the oven and serve immediately.

Top with fresh grated Parmesan cheese and fresh chopped parsley.

Preheat oven to 425-degrees. Place an empty baking sheet into the oven to heat while preparing the potatoes. 

In a large bowl, toss the potatoes with the olive oil, salt, pepper, garlic, and fresh herbs.

Preheat

Preheat the oven to 200°C / 180°C fan / 400° F/ Gas Mark 6.Peel the potatoes and cut into 1-inch cubes.Place into a large pan with enough cold salted water to cover potatoes.

Boil

Bring to the boil on high heat. Once it has reached boiling point time for 2 minutes.

Drain

Leave to air dry or pat dry with a clean tea towel.

Stir in oil or butter until evenly coated.

Spread

Spread out evenly on a greased roasting tin, add fresh ground black pepper

Oven

Oven bake in preheated oven at 200°C / 180°C fan / 400° F/ Gas Mark 6 for 20 minutes

Chop

Finely chop garlic, shallots and rosemary leaves, mix together. (see blog post for alternative additions)

Addition
